2 cups hulled raw peanuts (or almonds, pecans, etc.) 3 teas. Worchestershire sauce 1−2 Tbls. liquid smoke 2 Tbls. butter 2 teas. distilled white vinegar 2 teas. hot pepper sauce 3/4 teas. salt 1/8 teas. cayenne pepper|Line jelly roll pan with foil. Toss nuts  with liquid smoke and let
marinate for at least 30 minutes, stirring occasionally.
Postion rack in center of oven and preheat to 325F. Melt butter
in heavy large skillet over med−low heat. Cool slightly. Stir in
vinegar, hot sauce, salt, and cayenne. Return skillet to heat.
Scrape in nuts and marinade. Stir to coat nuts, about 30 seconds.
Return nut mixture to jelly roll pan. Bake until deep golden brown,
stirring at times, about 20 min. Transfer pan to rack to cool.
Nuts will crisp as they cool. Store in an air tight container.

Dead Heat Kentucky BurgooSource: The Kentucky Derby Museum Cookbook1 fat hen (4 pounds) 1 to 2 pounds stew meat (beef, veal and/or lamb) 3 to 4 pints water 1 1/2 teaspoons coarsely ground pepper 1/2 teaspoon cayenne pepper2 small cans tomato puree 12 potatoes 2 large  onions, chopped 1 large head cabbage, finely chopped 6 to 8 medium tomatoes, peeled, chopped OR 3 (1 pound) cans tomatoes 6 to 8 ears of corn, cut off the cob OR 3 (1 pound) cans cut corn1 pound fresh carrots, sliced 1 to 2 tablespoons salt 1 teaspoon pepper 1/2 to 1 cup Worcestershire sauce 2 cups fresh sliced okra (optional)2 cups fresh cut butterbeans (optional)2 green peppers, finely chopped (optional)Cook chicken and other meat in water with coarsely ground pepper and cayenne pepper until chicken will leave the bones and the meat is very tender (about 40 minutes). Remove bones, shred meat and return to the liquid. Add tomato puree, potatoes, onions, cabbage, tomatoes, carrots and corn. Season with salt, pepper and Worcestershire sauce.Cook slowly for 2 to 3 hours, until consistency of a thick stew, stirring from the bottom to keep from scorching. Add water, if necessary, to keep from sticking. If you like additional vegetables, add 2 cups fresh cut butterbeans, 2 cups fresh sliced okra and/or 2 green peppers, finely chopped.Serves 10.

Moses (Numbers 32:23) The incident took place back in 1887 in a small neighborhood grocery store when a middle-aged gentleman, Emanuel Nenger, gave the assistant a $20 note to pay for the turnip greens he was purchasing. When  the assistant placed the note in the cash drawer she noticed that some of the ink from the $20 came off on her hands which were wet from wrapping the turnip greens.

As I faced my Maker at the last Judgement, I knelt before the Lord along with the other souls. Before each of us laid our lives, like the squares of a quilt, in many piles. An Angel sat before each of us sewing our quilt squares together into a tapestry that is our life.  But, as my Angel took each piece of cloth off the pile, I noticed how ragged and empty each of my squares was. They were filled with giant holes. Each square was labeled with a part of my life that had been difficult, the challenges and temptations I was faced with in everyday life. I saw hardships that I had endured, which were the largest holes of all. 

I glanced around me. Nobody else had such squares. Other than a tiny hole here and there, the other tapestries were filled with rich color and the bright hues of worldly fortune. I gazed upon my own life and was disheartened. My Angel was sewing the ragged pieces of cloth together, threadbare and empty, like binding air. Finally the time came when each life was to be displayed, held up to the light, the scrutiny of truth. The others rose, each in turn, holding up their tapestries. So filled their lives had been. 

My Angel looked upon me, and nodded for me to rise. My gaze dropped to the ground in shame. I hadn't had all the earthly fortunes. I had love in my life, and laughter. But there had also been trials of illness and death, and false accusations that took from me my world as I knew it. I had to start over many times. I often struggled with the temptation to quit, only to somehow muster the strength to pick up and begin again. I had spent many nights on my knees in prayer, asking for help and guidance in my life. I had often been held up to ridicule, which I endured painfully; each time offering it up to the Father in hopes that I would not melt within my skin beneath the judgmental gaze of those who unfairly judged me. And now, I had to face the truth. My life was what it was, and I had to accept it for what it had been. 

I rose and slowly lifted the combined squares of my life to the light. An awe-filled gasp filled the air. I gazed around at the others who stared at me with eyes wide. Then, I looked upon the tapestry before me. Light flooded the many holes, creating an image. The face of Christ. Then our Lord stood before me, with warmth and love in His eyes. He said,

There was once a bridge which spanned a large river. During the day the bridge sat with its length running up and down the river paralleled with the banks, allowing ships to pass thru freely. But at certain times each day, a train would come and the bridge would be turned  sideways across the river, allowing a train to cross it.  
                                 
A switchman sat in a small shack on one side of the river where he operated the controls to turn the bridge and lock it into place when a train crossed.   
   
One evening as the switchman was waiting for the light of the day to come, he looked off into the distance thru the dim twilight and caught sight of the trainlights. He stepped to the controls and waited until the train was within a prescribed distance within the bridge. He turned the bridge into position, but, to his horror, found the locking control did not work. If the bridge was not secure in position, it would wobble back and forth at the ends when the train came on to it, causing the train to jump the track and go crashing into the river. This would be a passenger train with many people aboard.   

He left the bridge turned across the river, and hurried across bridge to the other side of the river where there was a lever switch that could hold to operate the lock manually. He would have to hold the switch back firmly as the train crossed.  
                                 
He could hear the rumble of the train now. He took hold of the lever and kept applying the pressure to keep mechanism locked. Many lives depended on this man's strength.   

Then, coming across the bridge from the direction of his control room, he heard a sound that made his blood run cold.

1 teas. Salt 1 1/2 cup Warm water divided (110F) 3 1/2 cups Unbleached white flour 1/4 cup Corn meal 1/4 cup Whole wheat flour 4 tbls. Olive oil divided 2 teas. Light brown sugar 2 pks. dry yeast Sauce, Cheese, and Toppings of your choice (keep in mind the cooking  time of these will be shorter than in an oven.
Use toppings that take little time at all (if any) to actually cook and do not
overload. Try using a soft or crumbled cheese and a cooked, warm sauce.)|DOUGH: Measure 1/2 c warm water in a bowl. Add sugar and yeast and
stir to dissolve. Let stand at least 5 minutes to proof (froth forms on top).
Meanwhile, sift together into a large bowl the white flour, wheat flour,
corn meal and salt. Make a depression in the middle and add 3 Ts of the
olive oil and 1 c warm water. Add yeast mixture. Mix all ingredients with
your hands and gather together and place on floured board. Knead about
10 minutes, adding more flour if dough is sticky, to form a smooth, elastic
mass. Grease a large bowl with olive oil. Add dough, turning it to coat top.
Cover and let rise in warm place, draft−free location until doubled in size −
about 45 minutes.
While dough is rising prepare desired sauces and toppings. Divide dough
into 6 equal pieces and, on floured surface, roll out to desired shape about
1/2 inch thick. Coat both sides of shaped crust with olive oil, then place on grill
directly over fire until upper surface begins to bubble (about 2 minutes). Fire
must be very hot and grill must be clean (coals should be red with a small flame,
like a steak fire; this is important). Watch crust closely and rotate with spatula
if necessary. Remove crust and turn cooked side up (it should be golden brown).
Brush with olive oil, sauce, cheese and desired toppings. Sprinkle some olive
oil over each pizza. Return for final cooking (2−4 minutes).

Heath Bar Cake2 cups packed brown sugar2 cups all-purpose flour1/2 cup butter or margarine1 teaspoon baking soda1/2 teaspoon salt1 egg1 cup milk1 teaspoon vanilla extract1/2 cup chopped nuts6 Heath? Bars, broken in small piecesBlend brown sugar, flour and butter. Set aside  1 cup of mixture to be mixed later with nuts and Heath? Bars. Add baking soda, salt, egg, milk and vanilla extract and beat. Pour into a greased 13 x 9-inch cake pan.Combine 1 cup mixture that was set aside, nuts and Heath Bars. Sprinkle over cake. Bake at 350 degrees F for 35 minutes.

One of the most powerful tools available to small businesses is direct mail. By this I don't mean electronic, Internet-based mail, but the old-fashioned kind that requires a stamp and a trip to the post office.Why is direct mail such a powerful tool?It's a way for small  businesses, especially retailers, to separate themselves from the big box stores such as Best Buy and Wal-mart, and to compete successfully with the Amazon.coms and Ovestock.coms of this world.The power of direct mail, if done right, is that it's like getting a letter from your sister, mother or aunt. The postman brings it to your home. It's addressed to you personally. And when was the last time you received a letter from Best Buy, Wal-mart, Amazon.com or any Internet retailer? If so, it was undoubtedly via email and designed to be read by hundreds of thousands of customers ? not much personalization there.The first thing you need to do to start an effective direct mail campaign is capture the names and addresses of your customers. This is easy for service organizations like carpet cleaners, auto repair firms, instant printers, and the like. They already have their customers' names and addresses. All they have to do is put them together as a mailing list. Retailers such as jewelry stores, antique dealers, liquor stores, restaurants, etc. have a tougher time because they don't have an easy way to capture their customer's names and addresses.There are a couple of answers to this. One is the old fishbowl gimmick, where you ask customers to deposit their business cards in a fishbowl with a prize to be given away in a drawing at some later date. I personally think this has been overdone. Plus, I have heard stories of unscrupulous sales people cleaning out the fishbowls themselves and using the business cards as sales leads.A second alternative is to post a "guestbook" somewhere near your cash register with a sign offering a free newsletter to all those who register. To make this work, you and your employees have to be kind of aggressive in urging all your customers to sign up, and you can expect that many will not. However, persistence is a virtue and if you keep this up long enough, you will capture enough names and addresses to make the effort worthwhile.I also like the idea of offering customers some small reward for providing their names and addresses. One version of this that seems to work well is a "frequent diner," "frequent buyer," or "frequent customer" card. Give your customers small, inexpensive cards that you can punch whenever they buy from you (or just visit your store) with the promise of a free something after 10 or 12 punches. Naturally, they have to register for the card and viola! You have their names and addresses.Last, and most expensive, you can buy a direct mail list targeted toward your best prospects. Chances are, there is at least one company in your area selling lists of prospects by criteria such as recent home buyers, camera buyers, child care customers, etc.Once you have captured enough names and addresses (maybe 100 or more) to begin a direct mail campaign, you have a couple of alternatives. One, you can input the information yourself. Or, two, if you're strapped for time, you should be able to find a local high school or college student to input the information for you. He or she can use either a word processing program or a database program to build the list. It's just simple data entry and you might offer $0.5 or $0.10 for each name/address input. I like to use a word processing program because once the list has been built; it's fairly easy to create personalized letters, etc. using the program's mail merge features.What do you then mail customers? I like newsletters a lot. They can be as simple as a single page printed on both sides or as complex as four to eight pages. Another good alternative is personalized letters. Just make sure that whatever you choose to send your customers is important and meaningful and always include an offer designed to bring them into your store or to call you for more information or to make an appointment.It takes time, money and dedication to develop and implement a direct mail campaign.
