Brandy Rum Balls2 (7 1/2 ounce) package vanilla wafers, crushed into fine crumbs1/2 cup honey1/2 cup light or dark rum1/3 cup brandy1 pound walnut pieces, finely groundVegetable oilGranulated sugar for rollingIn a large mixing bowl, combine wafer crumbs, honey, rum,  brandy and walnuts and mix until well blended. Rub a little vegetable oil on your hands and roll small pieces of the mixture between your palms to form balls about the size of large marbles. Roll each ball in granulated sugar and store in an airtight container up to 2 weeks.Yields about 55 balls.

Quaker Puffed Rice Balls1/2 cup corn syrup1/2 cup molasses1 cup granulated sugar2 tablespoons vinegar2 tablespoons butterAbout 6 cups puffed rice cerealBoil syrup, molasses, sugar and vinegar until it snaps when tested in cold water (see note). Remove from heat, add butter,  allow bubbling to die down, then pour over puffed rice. Mix well with a spoon and, when slightly cool, form into balls.NOTE: This recipe refers to the "hard crack" stage in candy making. Cook the syrup to 300-310 degrees F (using a candy-making thermometer). To test, drop a small amount of syrup into very cold water. If the syrup separates into hard, brittle threads, it's ready to be removed from the heat.Makes about 10 baseball-size balls.

Bittersweet Black Bean and Corn Relish1 (16 ounce) bag black turtle beans 4 cups frozen kernel corn 1 medium red bell pepper 2 medium green bell peppers 2 large, fresh pineapples 1 cup honey mustard dressing, any brand 2 teaspoons coconut extract 1/2 cup pina colada mix 1  teaspoon Caribbean blend jerk seasoning1 cup extra virgin olive oilClean and cook beans as directed adding salt and pepper to taste. When tender, rinse under cold water, being careful not to break the beans apart. Refrigerate.Thaw corn and mix with black beans. Drain.Remove seeds from peppers and dice into small pieces. Skin the pineapples; core and dice into small pieces. Mix peppers and pineapple with remaining ingredients separate from bean mixture.Fold together with the bean and corn mixture; refrigerate until ready to serve.Great served as a dip with banana chips, stuffed in a pita pocket for a vegetarian sandwich, or as a salad topper for tossed greens.Yield: 1/2 gallon

Smoked Ribs with Honey-Mustard SauceHickory chips5 pounds pork spareribs1/2 cup honey1/4 cup firmly packed brown sugar1/4 cup prepared mustard1/2 teaspoon maple flavoringSoak hickory chips in water at least 15 minutes. Prepare charcoal fire in smoker; let burn 15 to 20  minutes or until coals are white. Place hickory chips on coals. Place water in pan in smoker; fill with water. Place ribs on food rack. Cover with smoker lid; cook ribs 3 hours.Combine honey and remaining ingredients in a saucepan; cook over medium heat, stirring constantly, until sugar dissolves. Baste ribs with sauce; cover and cook 30 minutes.Turn ribs over, and baste again with sauce. Cover and cook an additional 30 minutes.Yields 5 to 6 servings.

Squash Blossom Soup60 squash blossoms, washed1 tablespoon unsalted butter1/2 cup chopped wild onions or yellow onions2 garlic cloves, finely chopped1 teaspoon salt1/2 teaspoon white pepper6 cups chicken stock18 sprigs fresh chervil (for garnish)If using male squash  blossoms, remove the stamens. Set aside.Melt the butter in a saucepan over medium heat. Add the onions and garlic and saut? until the onions are translucent. Reduce the heat to low, add the salt, pepper and squash blossoms and saut? for 3 minutes, stirring occasionally to prevent burning. Add the stock, bring to a boil over high heat, reduce the heat to low, and simmer for 10 minutes. Remove from the heat and serve hot, garnished with sprigs of chervil.

Herman Good Samaritan CoffeecakePosted by FootsieBear at recipegoldmine.comSource: Recipe by Gloria Pitzer1 cup starter1 1/2 teaspoons baking powder3 large eggs1 teaspoon vanilla extract1/2 cup buttermilk1/4 pound margarine, melted1/4 teaspoon salt1 teaspoon orange  extract1/2 teaspoon baking soda1 cup granulated sugar2 cups flour1/4 teaspoon nutmeg1 cup chopped walnuts or 1 cup flour-dusted raisinsBeat all ingredients together as listed above, beating 6 minutes with addition of last ingredient. Divide batter between two 9-inch greased foil cake pans placed on a cookie sheet on center rack of oven. Bake at 350 degrees F for 30-35 minutes or till browned.Pierce each cake 25 to 30 times with a toothpick and drizzle with thinned vanilla icing while hot from the oven. Then spread each cake with 2 tablespoons orange marmalade or pineapple preserves. Sprinkle top with shredded coconut and place a thin slice of orange in the center for garnish. Wrap in foil and take to a friend along with a cup of Herman and the directions for adding to the starter. Keep one cake for yourself. They freeze for months.

Philadelphia Pepper Pot1/2 pound honeycomb tripe6 cups chicken stock*4 slices bacon, cut into small pieces1/2 cup onion, chopped1/2 cup celery, chopped1 green bell pepper, chopped1 small bay leaf1 teaspoon peppercorns, finely ground2 tablespoons parsley, minced2 teaspoons  salt1 cup diced raw potato2 tablespoons melted butter or margarine2 tablespoons all-purpose flour1/2 cup heavy creamCook tripe, rinse and cut into 1/4-inch cubes. Place in large kettle and add chicken stock. Fry bacon until crisp and saut? the onion, celery and green pepper in the bacon drippings. Add to tripe and chicken stock. To this mixture add the bay leaf, peppercorns, parsley and salt. Cover, and when mixture comes to the boiling point, add diced raw potato. Cover and simmer gently for about 1 hour. Blend melted butter or margarine with flour and stir into hot soup mixture. Season with additional salt if necessary. Just before serving, stir in the heavy cream. Serve piping hot.Serves 6 as a main dish.* Or use 12 chicken bouillon cubes and 6 cups water, or 6 teaspoons chicken concentrate with 6 cups water.

World's Best Macaroni and Cheese12 ounces elbow macaroni 2 tablespoons butter 2 cloves garlic, chopped fine 2 tablespoons all-purpose flour 3/4 tablespoon dry mustard 1 bay leaf 1 sprig fresh thyme 1/2 cup milk 2 cups half-and-half3/4 tablespoon Worcestershire sauce 1/4  teaspoon hot pepper sauce 2 cups grated French Gruyere cheese 1 cup grated Swiss Fontina cheese 1/2 cup grated Parmigiana-Reggiano cheeseKosher salt and freshly ground black pepper to tasteCrispy Topping (recipe follows) 2 tablespoon butters, room temperature, for greasing dishCook macaroni according to package directions, drain and let cool.To make sauce: Melt butter in a saucepan over medium heat. Add garlic and saut? 20 seconds. Add flour and cook, stirring with a wooden spoon, 1 to 2 minutes; do not brown. Add mustard, bay leaf and thyme and whisk in milk and half-and-half. Bring up to a boil while whisking, add Worcestershire and hot pepper sauce and simmer slowly about 20 minutes. Strain through a medium strainer, add the cheeses and mix until smooth. Season to taste with salt and pepper.Prepare crispy topping.Preheat oven to 375 degrees F.Butter a 13 x 9-inch baking dish. Mix macaroni with sauce. Place in baking dish and top with crispy topping. Bake in preheated oven 20 to 30 minutes until golden and bubbly. Banana Custard CobblersCustard1 cup granulated sugar 1/2 cup cornstarch 8 large egg yolks 3 cups whole milk 1 vanilla bean, split lengthwise 6 tablespoons (34 stick) unsalted butter, room temperature 1/4 cup dark rumTopping3/4 cup all-purpose flour 1/2 cup almonds 6  tablespoons (packed) golden brown sugar 5 tablespoons chilled unsalted butter, cut into pieces 3 bananas, thinly slicedCustard: Whisk sugar, cornstarch and egg yolks in large bowl to blend.Bring milk and vanilla bean to boil in heavy large saucepan. Gradually whisk hot milk into egg yolk mixture; return mixture to saucepan. Whisk over medium-low heat until custard boils and thickens, about 3 minutes. Remove from heat. Whisk in butter and rum. Cool slightly. Discard vanilla bean. Cover with plastic and refrigerate until cold. (Can be prepared 1 day ahead. Keep refrigerated.)Topping: Blend flour, almonds and brown sugar in processor to mix. Add butter and process, using on/off turns, until coarse crumbs form. (Can be made 1 day ahead. Transfer to bowl; cover and chill.)Position rack in center of oven and preheat to 400 degrees F.Place eight 1-cup ramekins or custard cups on baking sheet. Divide custard equally among ramekins, using about ? cup for each. Top each dessert with about 8 banana slices. Spoon topping over banana slices, dividing equally.
