It can be varied with bourbon, Cognac or Sherry. Currants, glaceed fruits and a variety of nuts can be  substituted. It says to use 3 greased mini-loaf foil pans 6 x 3 x 2 inches, (I used instead an 8-inch square pan and made 1 cake. Test to see if done). 1/2 cup butter1 cup granulated sugar2 eggs1/4 cup Irish whiskey1/3 cup sour cream2 teaspoons vanilla extract1 3/4 cups flour2 teaspoons baking powder1 cup dark raisins1 cup chopped walnuts Beat the butter with the sugar add eggs, whiskey, sour cream and vanilla extract until blended. Combine and add the remaining ingredients and stir until dry ingredients are moistened. Do not overmix. Divide batter between 3 greased mini-loaf foil pans (6x3x2-inches) and bake in a 325 degree F oven for 45 to 50 minutes, or until a cake tester, inserted in center, comes out clean. Allow to cool in pans for 15 minutes and then remove from pans and continue cooling on a rack. When cool, drizzle tops with Irish whiskey glaze. Yields 3 mini-loaves. Irish Whiskey Glaze1 teaspoon Irish whiskey1 tablespoon cream (or evaporated milk)1 teaspoon melted butter2/3 cup sifted confectioners' sugar (more if needed) Stir together all the ingredients until blended. Sometimes I put these cakes in different pans and usually it takes about the same time. Baking time will vary keep checking after 30 minutes with cake tester to see if the cakes are done and watch for color. Some of these cakes cook at a low temperature and take longer to bake, just keep checking. The St. Patrick's Day cake uses 3 (6 x 3 x 2-inch pans). I used one 8 x 8-inch pan and instead of 325 degrees F, I put it up to 350 degrees F and it took about 30 minutes. Make sure you don't overbake them though. With all this in mind, a recipe, calling for 2 to 2 1/2 cups of flour can be baked in the following pan sizes. 4 (6 x 3 x 2-inch)mini loaf pans12 muffins (2 1/2 x 1 1/4-inch)2 (8 x 4-inch) loaf pans1 (9 x 5-inch loaf pan1 (10-inch) springform pan1 (10-inch) tube, kugelhopf, or decorative mold2 (10-inch) deerback loaf pans1 (9 x 13-inch) baking pan2 (8 x 8-inch) baking pan2 (10-inch) layer pans1 (10-inch) fluted deep quiche pan2 (1 1/2-quart) souffl? dishes1 (8 x 12-inch fluted baking pan2 (3-cup) heart molds

Vietnamese Spring Rolls2 pounds ground pork1 tablespoon salt1 teaspoon pepper1/2 teaspoon garlic powder1/2 teaspoon onion powder2 beaten eggs1 pound carrots, shredded or chopped2 medium onions, finely chopped1 package lumpia wrappers4 cups oil for deep fryingLet the frozen  wrappers thaw at room temperature for 3 hours.Using a fork, mix well pork, salt, pepper, onion powder and garlic powder. Add eggs and mix well. Add chopped onion and carrot; mix well. Spread one wrapper on a large plate. Place a large spoonful of meat-vegetable mixture along the center of each wrapper. Make rolls 4 inches long by 1 inch diameter. Deep fry until golden brown, using medium heat so the meat is fully cooked.Makes 30 spring rolls.

Bake 10 minutes at 350 degrees F.In a large mixing bowl, beat sweet potatoes until smooth. Add cream cheese and beat until blended. Add remaining ingredients except whipped cream and beat until well mixed. Pour into cooled crust and bake at 350 degrees F for 50 minutes.Store in refrigerator but let stand at room temperature for about 30 minutes before serving.Serve with whipped cream.

Roll each Twinkie in extra flour and then roll in batter. Drop the battered Twinkie into a deep fryer for about 90 seconds, just until the cream filling is starting to melt and the outside is golden brown. Top with powdered sugar; cut in half and serve with four berry coulis.To make the coulis: Place berries in a pan on low heat and add sugar. When mixture begins to boil, place in blender and blend until it turns to liquid. Strain mixture through a sieve to remove pulp.

Place in deep baking dish, cover, and refrigerate overnight.Preheat oven to 375 degrees F. Pour vinegar over the ribs and bake 1 1/2 hours. Rotate ribs 2 or 3 times during cooking.Remove ribs from baking dish and place in a single layer on baking sheets. Bake at 350 degrees F for 1 hour.Cut slabs between bones into individual ribs and place in a baking dish. Spoon sauce over them to coat lightly. Cover pan with aluminum foil and bake until heated through - about 20 minutes. Serve with original sauce on the side.Yield: 8 servings

Dredge fish through breading. Put fish in pan and brown on both sides. Do not burn fish, if too thick. Turn oven to 350 degrees F and finish cooking in oven. Fish is done if a wooden pick goes through it easily.For Sauce: Heat pan to high heat. Add blacking mix. Don't burn it! Add room temperature butter. To keep from burning, shake pan or remove from heat. Add mushrooms and brown. The mushrooms will soak up all of the butter, so shake pan. Once mushrooms are brown, add wine to deglaze. Once wine separates, squeeze lemon and add cream. Reduce cream until thick.Add shrimp, parsley, and scallions. When shrimp is pink and cooked, add garlic and butter. Take off stove, mix, and pour over fish. Enjoy!

Add oil. Saut? garlic until light brown. Add shrimp and saut?. Add fennel confit, oven dried tomatoes and crab stock. Reduce Liquid to 1 ounce.Add heavy cream and reduce by half. Add Asiago and spinach. Stir and remove from heat. Salt and pepper to taste.Heat cooked pasta sheets in simmering water; remove. Plate in large rimmed soup bowl. Lay 1st pasta sheet offset in bowl, add 1/4 of product. Fold sheet onto itself, add 1/4 product. Lay 2nd sheet on 1st, offset and add 1/4 product. Fold sheet onto itself and add last 1/4 product.

She came through with an answer for E.B. of  Baton Rouge, who requested a recipe for the ultra-light cheesecake that was sold at the now-defunct Solari's. This version was developed many years ago and printed in this column by Myriam Guidroz, who cut down Chef Warren LeRuth's industrial-sized recipe."When I was a little girl, my Aunt Elena worked for Solari's," A.T. writes, "That's how I became familiar with the name." She also enclosed the second cheesecake recipe, promising "It is delicious!"Makes 16 servings3 tablespoons soft butter, divided 1 package (about 12) very dry ladyfinger cookies 1 pound ricotta cheese 1/2 cup milk 2 eggs 2 tablespoons cornstarch 2 teaspoons vanilla extract (or a few drops of lemon extract) Pinch salt Pinch cream of tartar 3 egg whites, at room temperature 3/4 to 1 cup granulated sugar (depending on how sweet    your sweet tooth is)Generously grease a 9-inch springform pan, using one tablespoon of the butter. Preheat oven to 350 degrees F.Crumble the cookies into rather small pieces with your fingers. Use half to line the bottom of the springform; reserve the rest.Place ricotta, milk, whole eggs, cornstarch, vanilla or lemon extract and the rest of the butter into the container of a food processor. Process until well-mixed and smooth. (If you don't have a food processor, mix the cornstarch into a smooth paste with a little of the cold milk before adding it to the rest of the above ingredients; then beat until smooth.)Add a pinch of salt and cream of tartar to the egg whites; then beat at high speed until soft peaks form. Add sugar, about two tablespoons at a time, until all is incorporated. Continue beating until you cannot taste or feel a single grain of sugar.Mix together gently but thoroughly the ricotta and egg white mixtures and pour into the prepared springform pan. Sprinkle the top of the cheesecake with the rest of the cookie crumbs. Place the pan into a larger baking dish containing about one inch of water. Bake for approximately 45 minutes, or until cake is set. (If the cookie crumbs brown too quickly, cover loosely with a piece of foil.)Cool cake in pan until lukewarm before turning out onto a serving dish. Chill thoroughly. Garnish the top with fruit, if desired.

Johnny Cash's "Old Iron Pot" Family Style Chili5 pounds sirloin steak3 packages McCormick, Lawry's, Schilling or any good chili seasoning mixMexene chili powderSpice Island's chili con carne seasoningCumin2 tablespoons granulated sugarThymeSage leavesChopped  raw onionsChopped chile peppers3 or 4 cans red kidney beans3 or 4 cans whole tomatoes1 can tomato pasteGarlic and onion powderSalt to tasteChop steak and cook until medium with a little shortening. Add packages of seasoning mix and cook 5 minutes. Add beans, tomatoes, spices, onions, sugar and chili powder or a cup con carne mix. Taste. If too hot for children or ladies, add 1 or 2 cans of tomatoes. Add tomato paste. If it gets too thick, add water. Simmer over low heat for 20 minutes.Serve with soda crackers or oyster crackers.Yields 36 servings.
