Bennigan's Onion SoupPosted by LladyRusty at recipegoldmine.com - May 4, 2001Source: Kitchen Link Copycat Recipes1/2 pound firm white onions, sliced1/4 cup butter2 tablespoons corn oil3 tablespoons flour1 quart chicken broth1 quart beef broth8 slices French breadSwiss  cheese, shreddedParmesan, gratedSaut? onions in butter and oil until onions are transparent, but not well browned. When tender, turn heat to lowest point and sprinkle with flour, stirring vigorously. Pour into Dutch oven and stir in broths. Heat thoroughly and divide among 8 oven-proof bowls. Float a slice of bread atop each serving.Mix equal parts of cheese to smooth paste and spread over bread. Place all bowls on oven rack 4 inches from broiler heat and broil until cheese melts. Serve at once. Leftover soup freezes well up to 6 months.

Lay fish fillets on ground nuts, season and sprinkle with flour. Get the butter slightly browned, then add fish, nut side down. Saut? till browned on medium high heat. Flip over carefully, add lemon, wine and cream. Reduce quickly and garnish with parsley.

Fold empty chicken breast half flap over the dressed chicken breast half; dust with kosher salt and black and white pepper. Grill to desired temperature.In 2 tablespoons butter, saut? mushrooms and onions until softened. Add Marsala wine and chicken broth; simmer approximately 10 minutes on medium-low heat to reduce.A little at a time, add remaining 2 tablespoon butter until butter melts and mixture emulsifies. Carrabba's Italian Grill Sogno di Cioccolata (Chocolate Dream)Posted by Chef Chad in Houston TX at recipegoldmine.com2 (1 pound 5.2-ounce) boxes Duncan Hines Fudge Brownie Mix (each using 2 eggs and milk instead of water)1/2 cup Kahl?a (coffee-flavored liqueur)4 cups  chocolate mousse (use your own recipe, or mix up    two (4.2-ounce package Chocolate Mousse Mix)4 cups whipped cream (from 1 1/2 cups heavy cream, whipped)2 ounces semisweet chocolate shavingsMix brownies according to instructions on box, using the two-egg recipe and substituting milk for the water. Line two 13 x 9 x 2 1/2-inch glass or metal pans with either parchment paper or wax paper (the paper lining makes it much easier to remove the brownies from the pan.) Grease bottoms with oil or spray with Pam. Pour batter into pans, and bake - either in a convection oven at 325 degrees F for 20 minutes, or in a standard oven for about 24-26 minutes. (The convection oven is preferred - it makes a chewier brownie). Bake until a wooden pick inserted in the middle of the brownie comes out clean.IMPORTANT - DO NOT OVERCOOK. Remove from oven and allow to cool completely.Loosen the sides with a knife, then remove the brownies in one piece from one of the pans. Turn the brownies upside down and return to the pan. Peel off paper, then brush the brownie with half of the Kahl?a, starting from the outer edges and working toward the center. Spread 2 cups of the chocolate mousse evenly over the brownie, then spread 2 cups whipped cream over the mousse.Use a vegetable peeler to shave chocolate, then sprinkle top evenly with chocolate shavings. Remove second brownie from the other pan, brush with remaining Kahl?a, and place on top. Repeat layers, first spreading the remaining chocolate mousse, then the remaining whipped cream. (There are no chocolate shavings on top). Refrigerate to store.

Add garlic and saut? for thirty seconds. Then put pesto, tomatoes, olives, artichoke hearts, mushrooms, and sun-dried tomatoes into the pan. Cook on high heat for three to four minutes. When vegetables are cooked and tender, add spinach, basil and garlic butter. Add seasoning and toss with the vegetables. Cook pasta for seven to ten minutes or until soft. Add pasta to the pan and toss all of the ingredients together. Put into bowl or on a plate and serve.

Slice each chicken breast into 6 pieces.Preheat 4-6 cups of vegetable oil in a deep fryer to 375 degrees F.One or two at a time, dip each piece of chicken into the egg mixture, then into the breading blend; then repeat the process so that each piece of chicken is double-coated. When all chicken pieces have been breaded, arrange them on a plate and chill for 15 minutes.When the chicken is done resting, drop each piece into the hot oil and fry for 5-6 minutes or until each piece is browned.As chicken fries, combine the hot sauce and butter in a small bowl. Microwave sauce for 20-30 seconds or just until the butter is melted, then stir to combine. You can also use a small saucepan for this step. Just combine the hot sauce and butter in the saucepan over low heat and stir until butter is melted and ingredients are blended.When chicken pieces are done frying, remove them to a plate lined with a couple paper towels. Place the chicken pieces into a covered container such as a large jar with a lid. Pour the sauce over the chicken in the container, cover, and then shake gently until each piece of chicken is coated with sauce. Add eggs one at a time to the mixture. Beat well. Add vanilla extract.Combine flour, baking powder and salt in separate bowl and add to the chocolate mixture. Stir in nuts. Chill.Scoop dough out with ice cream scoop and roll in confectioners' sugar to coat. Bake at 300 degrees F for 15 to 17 minutes. Dough may be refrigerated in Tupperware until ready to use.

Place in deep freezer for 3 to 4 hours.Roasted Coconut and AlmondsPlace coconut on a metal sheet pan and put in oven at 350 degrees F for approximately 3 1/2 minutes, stirring every 30 seconds. He told me that for their breadsticks, they mix a product called Whirl with garlic and salt. Then, they spread it on pre-packaged breadsticks and bake. That's all I know. Hope it helps.Teresa1 Directions:Start with plain bread sticks, place them in a pan. In a bowl mix together margarine and kosher salt...one cup margarine to 3 tablespoons of Kosher salt. Stir and brush on bread sticks. Bake at 400 degrees F. Serve hot.
