Mader's Hungarian GoulashSource: Mader's Restaurant - Milwaukee, Wisconsin2 pounds onions, sliced1/2 cup oil or 5 ounces lard1 1/2 teaspoons paprika1 (2 pound) beef chuck, cut in 2-inch cubes1 pint beef stock1 1/2 teaspoons tomato paste1 teaspoon salt1 teaspoon vinegarRind  of half a lemon, finely chopped1 clove garlic, finely chopped1 teaspoon caraway seedWater to thin goulashIn large, heavy pot, fry onions in hot oil until golden brown, about 10 to 15 minutes. Add paprika and stir well. Add meat, cover and let meat brown lightly, stirring frequently. Add stock, tomato paste, salt and vinegar.With mortar and pestle, or flat part of heavy knife, mash lemon rind with garlic and caraway seeds. Add to meat mixture.Cover saucepan and simmer very gently about 30 minutes or until meat is tender. Add additional water in small quantities if needed. Serve with boiled potatoes, noodles or dumplings and a fresh, crisp roll.Makes 4 to 5 servings.

It was known as "Barbecued Shrimp."5 pounds large shrimp (7 pounds with head on)1 pound butter1/2 cup freshly-ground black pepperRinse and  drain shrimp and place them, unpeeled, in a single layer in a large shallow baking pan. Cut each stick of butter in two to make eight pieces and place on top of the shrimp. Grind peppercorns in a spice grinder or blender to make 1/2 cup and sprinkle the pepper evenly over the shrimp. Bake at 350 degrees F for 45 minutes, turning the shrimp at least twice to absorb the pepper-butter on all sides.Serve directly from the pan with a loaf of sliced French bread so that guests can peel the shrimp as they go and sop up the sauce with hunks of bread. Provide a platter of hot washcloths, also.Serves 4 to 8.

Rao's Marinara SaucePosted by LladyRusty at recipegoldmine.com - May 1, 2001Source: Rao's Restaurant, New York, NY - Good Morning America2 (28 ounce) cans imported Italian plum tomatoes with basil (preferably those labeled San Marzano )1/4 cup fine-quality olive oil2  ounces fatback or salt pork, optional3 tablespoons minced onion2 garlic cloves, peeled and mincedSalt and pepper (to taste)6 leaves fresh basil, torn, optionalPinch dried oreganoRemove tomatoes from the can, reserving the juice in which they are packed. Using your hands, crush the tomatoes, gently remove and discard the hard core from the stem end, and remove and discard any skin and tough membrane. Set aside.Put oil in a large, nonreactive saucepan over medium-low heat. If using fatback, cut it into small pieces and add to the pan. Saut? for about 5 minutes or until all fat has been rendered. Remove and discard fatback.Then add onion. Saut? for 3 minutes or until translucent and just beginning to brown. Stir in garlic and saut? for 30 seconds or until just softened. Stir in tomatoes, reserved juice, and salt. Raise heat, and bring to a boil. Immediately reduce heat to a very low simmer and cook for about 1 hour or until flavors have combined and sauce is slightly thickened. Adjust seasonings and stir in cilantro. Serve immediately.
