TGI Friday's Pot StickersPosted by CookinMom at recipegoldmine.com - May 2, 2001Source: VJJE Recipe WeeklyDough2 1/2 cups flour1/2 teaspoon salt1 cup hot water1 tablespoon shortening or oilFilling1 pound ground pork2 tablespoons soy sauce1 tablespoon sesame oil1 teaspoon  grated gingerPinch of sugarSalt and pepper to taste3 green onions, chopped1 egg1 tablespoon cornstarch1 can water chestnuts, finely chopped1 clove garlic, mincedDipping Sauce1/2 cup soy sauce1/4 cup white vinegar1 teaspoon chili oil1 green onion, choppedCombine the flour, salt, hot water and shortening in a bowl and incorporate into a smooth dough. Allow the dough to rest for 20 minutes, covered.Combine the filling ingredients. Combine the dipping sauce ingredients. Roll the dough out about 1/8 thick. Use a biscuit cutter or a glass to cut out 3 inch circles. Brush a little water over the circles and place about 2 teaspoons of filling in center. Fold the circles in half and press to seal, making sure to squeeze out any air. Stand the dumplings up on the folded side and press slightly so that they stand up nicely.To cook, bring a pot of salted water to boil, and boil the dumplings until cooked through, about 5 minutes. Drain well. The dumplings may be frozen at this point for future use; this recipe makes about 8 dozen. Heat a skillet with about 2 tablespoons oil and fry the dumplings on one side only, until nicely browned. Drain on paper towels.Serve with the dipping sauce.

Betty Ford's Chinese Pepper Steak2 pounds flank steak2 tablespoons shortening3 green bell peppers, cut into 1 1/2-inch pieces1 package onion soup mix2 tablespoons soy sauce1/2 cup sherry2 tablespoons cornstarch1/2 teaspoon salt1/8 teaspoon pepperCut steak lengthwise into  1/2-inch strips and then into 1-inch pieces.Melt shortening in skillet and fry steak just long enough for it to change color. Remove meat and saut? the green pepper. Bring 2 cups of water to a boil in a large pot. Add onion soup mix and continue to boil for 10 minutes.Stir in the meat and green pepper and simmer for 30 minutes.Add the soy sauce, sherry, cornstarch (diluted in a little water), salt and pepper. Cook until slightly thickened. Serve over steamed rice.Serves 4.

Amy Grant's Mud PuddlesA family tradition from singer Amy Grant.1/4 cup sweet butter 1 (11.5 ounce) package (2 cups) milk chocolate chips* 1 (14 ounce) can sweetened condensed milk 2 cups all-purpose flourGlaze1 cup powdered sugar 1/2 teaspoon vanilla extract 2 to 4  teaspoons milk or waterHeat oven to 350 degrees F.Melt butter and chocolate chips in 2-quart saucepan over low heat, stirring constantly, until smooth (5 to 10 minutes).Remove from heat. Add condensed milk; stir until smooth. Add flour; mix well. Shape rounded teaspoonsful of dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Bake for 6 to 8 minutes or just until set. (DO NOT OVER BAKE.) Cookies may appear slightly under-baked. Cool completely.Meanwhile, combine powdered sugar and vanilla extract in small bowl.Gradually stir in enough milk for desired glazing consistency. Bring to a boil. Add tomatoes to boiling water. Remove after about 10 seconds.Mix the tomatoes, basil, garlic and cheese with the olive oil. Let stand in a covered bowl for at least 3 hours (or overnight) refrigerated).Cook fusilli. Drain. Add sauce to hot pasta. Mix well, and serve warm.

Lawrence Welk's Chicken 'n' Dumplings2 (4 pound) fryers2 stalks celery, diced1/2 cup butter1 ounce sherry wineAccent? flavoring, to tasteSalt, to taste1 carrot, diced1 medium onion, chopped1 cup flour1/2 lemon, juicedYellow food coloringChicken bouillon cubes  (optional)Split fryers all the way up to the backbone. Remove backbone from chickens. Cut through the center of breasts, leaving two full halves per chicken. Place the chicken in a large pot, cover with water and bring to a boil. Simmer gently until chicken is tender. Remove from pot and set aside. Add chicken backbones to broth. Add vegetables and simmer about 30 minutes. (For extra flavoring, add chicken bouillon cubes, if desired.)When done, remove from heat and strain. Save strained stock.In a small saucepan, melt butter, then beat in flour. Add to strained stock. Cook stock gently for five minutes, then add sherry, juice from lemon, pinch of Accent, touch of yellow food coloring, and salt to taste. While stock is cooking, remove skin from cooked chicken and de-bone, if desired.Dumplings1 1/2 cups all-purpose flour1/4 teaspoon salt3/4 cup milk2 teaspoons baking powder3 tablespoons shortening2 tablespoons fresh green peasPut the flour, baking powder and salt in a mixing bowl. Cut in the shortening and mix until mixture looks like cornmeal. Stir in milk. Put about 1/2 inch of water in pan with a wire rack that stands two or three inches above the water line. Cover rack with lightly oiled wax paper, oiled side up. When water is boiling, gently drop dumpling mixture from a tablespoon, leaving room between dumplings for expansion. Steam 8 minutes uncovered, then cover and steam about 7 more minutes. Place chicken in casserole dish and lay dumplings on top. Cover with stock. Sprinkle a few fresh-cooked green peas on top for color.Serves 4.

Spoon sauce over meat with rice.

At same time in another pan, slowly fry onions in butter until golden.Combine onions and beef in a 4-quart casserole. Add flour to pork fat remaining in pan and mix into smooth paste. Pour in beer and beef stock and bring slowly to a boil. When sauce is thick and smooth, stir in garlic, vinegar, sugar, thyme and bay leaf. Pour mixture over onions and beef in casserole; gently mix together. Taste sauce to boil, then transfer to casserole. Cover tightly; bake in preheated 350 degree F oven for 2 hours, or until meat is tender.Strain sauce (Belgians don't) and sprinkle stew with parsley. Serve with plain boiled potatoes.

The back-fin is good for both.Combine all ingredients except the crackers. Add crackers crumbs in as close to saut?ing as possible so that they crab cakes don't get too moist from the other ingredients. Form into patties the size of hamburger patties or hors d'ouvre-size, depending on how they will be served.Saut? in frying pan over medium-to-high heat in butter, 10 minutes per side. Make sure that it's crispy outside but moist and juicy inside.The recipe makes enough for about six hamburger-size cakes or 15 to 18 hors d'ouvres.A simple tartar sauce to accompany the crab cakes can be made by mixing mayonnaise, grated onion and lemon juice.

Cut ham or pork into 1/2 inch cubes and add to shortening, stir for 1 minute and add green pepper ; cook for 5 minutes, stirring often.Stir in flour until smooth and cook 1 to 2 minutes.Add shrimp, onion, tomatoes, garlic and parsley. Cook until it starts to boil, stir in rice and 4 cups water, salt, thyme, Worcestershire sauce, red pepper; cover tightly and cook for 30 minutes or until rice is tender and all liquid is absorbed.Sprinkle with chopped parsley.

Esquire Fortnightly's Eastern Establishment ChiliYield: 10 servings2 cups dry kidney beans 1/3 cup olive oil or 1/3 cup lard 1 (5 pound) beef brisket, cut into 1/2-inch cubes 2 large onions, coarsely chopped 6 large garlic cloves, finely chopped2 green bell peppers 2  tablespoons dried basil1 bay leaf2 tablespoons ground mild red chile1 tablespoon cayenne pepper 1 tablespoon Chile Caribe 2 tablespoons ground cumin2 tablespoons Masa Harina6 cups canned tomatoes, chopped 1/2 cup freshly brewed coffeeSaltBlack pepper, freshly groundPlace the beans in a bowl, cover with water and soak overnight.Pour the beans and the water in which they were soaked into a heavy saucepan. Bring to a boil over high heat, then lower the heat and simmer, covered, for about 1 hour or until tender. Stir occasionally.Heat the oil or melt the lard in a large heavy casserole over medium heat. Pat the brisket dry and add it to the casserole. Stir the beef until it is quite brown on all sides. Remove it from the casserole and set aside.Add more oil or lard to the casserole if needed, then add the onions and garlic and cook until the onions are translucent. Stir in the green peppers, basil, bay leaf, ground chile, cayenne pepper, Caribe and cumin. Cook for about 1 minute, then add the Masa Harina and cook 1 or 2 minutes longer.Return the brisket to the casserole and add the tomatoes and their liquid. Bring to a boil, then lower the heat and simmer, uncovered, for 2 hours. Stir occasionally.Stir in the salt and black pepper. Taste and adjust seasonings. Add the coffee and simmer, uncovered, for 1 hour longer.Add the kidney beans to the chili. Simmer, uncovered, for another 1/2 hour.

S'More Brownies1 cup semisweet chocolate chips 1/4 cup butter 2 1/2 cups graham cracker crumbs 2 cups miniature marshmallows 1 can sweetened condensed milk 1 teaspoon vanilla extract1 cup milk chocolate chipsLightly butter a 9 x 13-inch pan.In small saucepan, over very low  heat, melt together butter and chocolate chips, stirring often.In large bowl, combine graham cracker crumbs with marshmallows; stir in sweetened condensed milk and vanilla extract until crumbs are all moistened. Stir in melted chocolate until well combined. Fold in milk chocolate chips. Pat all into pan. Let stand at room temperature about 2 hours before cutting. Chill if a firmer brownie is desired.

Harvey's WallbangersMakes about 2 dozen.Cookies1 (18.25 ounce) box orange flavored cake mix (or substitute yellow cake and add another teaspoon of grated fresh orange zest) 2 eggs, beaten 1/4 cup vegetable oil 1/8 cup orange juice (preferably with extra pulp) 1/8 cup  Galliano liqueur or brandy 1 tablespoon grated fresh orange zest 2 or 3 teaspoons all-purpose flourGlaze1 cup confectioners' sugar, sifted 1 tablespoon grated orange zest 2 tablespoons Galliano liqueur or brandyPreheat oven to 350 degrees F.Mix cookie ingredients well and drop by the teaspoonsful onto ungreased cookie sheet. Bake for 8 to 10 minutes. Cool on rack.Mix Glaze ingredients and adjust liquid and sugar for desired thickness for either glazing or icing. Spread on top of cooled cookies.
