Squid SaladPosted by JBic01 at recipegoldmine.com 8/15/02 6:27:32 pmSource: Squid, the Versatile Shellfish2 pounds whole squid 2 cups boiling water 2 teaspoons salt 1/2 cup olive oil1/4 cup lemon juice1/2 cup sliced red onion 1 clove garlic, crushed 1 tablespoon chopped  parsley 1 teaspoon salt1/4 teaspoon pepperClean squid. Cut mantle and tentacles into 1 inch pieces.Place squid in boiling salted water. Cover and simmer for 5-10 minutes until tender. Drain and rinse in cold water. Drain.Combine oil, lemon juice, onion, garlic, parsley, salt and squid. Cover and let stand for several hours in the refrigerator.Makes approximately 2 cups salad. Serve as appetizer.

Fried Chicken Salad with Dilled Ranch DressingPosted by bettyboop50 at recipegoldmine.com April 29, 20011/3 cup pecan pieces1/4 cup buttermilk2 tablespoons mayonnaise1 tablespoon lemon juice1/2 teaspoon dried dill1/2 teaspoon dried tarragon1/4 tablespoon coarse grind  pepper1/8 teaspoon garlic powder2 teaspoons oil1 (9 ounce) package fully cooked breaded    chicken breast tenderloins2/3 cup frozen corn kernels6 cups green leaf lettuce, torn into pieces,1/3 cup red onion, thinly slicedPreheat oven to 350 degrees F.Spread pecans on baking sheet; bake until golden and fragrant, 4-5 minutes.Combine buttermilk, mayonnaise, lemon juice, dill, tarragon, pepper and garlic powder; set aside.In nonstick skillet heat oil over medium-high heat. Add chicken; cook, turning once, until golden-brown and heated through, 4-5 minutes. Remove chicken.Add corn to same skillet, cook, stirring, until heated through and just starting to brown, 2 minutes.In bowl combine lettuce and onion with reserved pecans and corn; arrange on serving plate. Top with chicken: drizzle with dressing.Serves 4.

Hot Beef and Watercress Salad1/2 pound lean boneless beef steak (such as top round, flank or sirloin), cut about 1 inch thick4 cloves garlic, minced or pressed2 tablespoons soy sauce1 teaspoon granulated sugar1 tablespoon vegetable oil2 tablespoons white wine vinegar1/4  teaspoon pepper1 small white onion, thinly sliced and separated into ringsAbout 1/2 pound watercressCut beef with the grain into 3-inch wide strips; then cut each strip across the grain into 1/8-inch thick slanting slices. In a bowl, stir together garlic, soy sauce, 1/2 teaspoon of the sugar and 1 teaspoon of the oil. Add beef; stir to coat. Cover and refrigerate for at least 30 minutes or until next day.In another bowl, stir together the remaining 1/2 teaspoon sugar, remaining 2 teaspoons oil, vinegar and pepper. Add onion and mix lightly. Cover and refrigerate for at least 30 minutes or until next day.Remove and discard tough watercress stems; rinse sprigs thoroughly and pat dry. Then measure 3 cups sprigs, lightly packed. Shortly before serving, add watercress to onion mixture, mixing lightly to coat. Arrange on 2 dinner plates.Place a cast iron skillet over high heat. When skillet is hot, add beef mixture and saut?, stirring constantly, until meat is browned (1 1/2 to 2 minutes). Arrange meat evenly atop watercress salads.Makes 2 servings.

Goes well with any menu.2 1/2 pounds white salad potatoes1/3 cup red onion1/3 cup celery, chopped1/3 cup green bell peppers2 tablespoons fresh parsley, chopped1  tablespoon fresh chopped basil (optional)Lawry's Seasoned Salt to tastePepper to taste1 pound shrimp, boiled, peeled, drained, split, and cut in half2 cups mayonnaiseMix all ingredients together in a large bowl.Garnish with cucumber and cantaloupe. Enjoy!

Marinated Shrimp In Avocado Halves12 oz Shrimp, shelled (fresh or frozen)2 tablespoons vinegar1 1/2 teaspoons lemon juice1/4 teaspoon salt1/8 teaspoon dry mustardDash of pepper1/4 cup onion, thinly sliced, divided1 clove garlic, halved3 tablespoons vegetable oil1 pickled  jalapeno pepper, rinsed, seeded     and cut into strips2 Haas avocados, halved and seeded1/2 cup chopped tomatoThaw shrimp if frozen.In a bowl combine vinegar, lemon juice, salt, mustard and pepper and set aside.In a medium skillet, cook the shrimp, half of the onion slices and the garlic in hot oil over medium-high heat for 4 to 5 minutes, or just until shrimp are done, stirring occasionally. Remove onion and garlic with a slotted spoon and discard.Add shrimp and the remaining oil to the vinegar mixture in the bowl, along with remaining onion slices and the jalapeno pepper. Cover and chill for several hours or overnight, stirring occasionally.To serve, lift the shrimp, onion slices and jalapeno pepper from the marinade and spoon into the avocado halves. Sprinkle with the chopped tomato and drizzle some of the remaining marinade over all.4 servings

Hot Fiddlehead SaladFiddleheads or fiddlenecks refer to young fern fronds, still curled in the fetal position, cut from any number of edible ferns, such as the ostrich, hay-scented, cinnamon or evergreen.4 cups fiddlehead ferns, rinsed4 thick strips bacon2 tablespoons olive  oil2 tablespoons lemon juiceSalt, to tastePepper, to tasteBlanch ferns in boiling salted water to cover for about 4 minutes. Drain them well. Fry bacon strips in a wok or large skillet. Remove them when crisp and drain on paper towels. Pour off all but 1 tablespoon of the bacon fat and add olive oil. Add ferns and stir over high heat until they are coated with oil. Pour into a serving dish, sprinkle with lemon juice and seasonings, and crumble bacon over the top.Serves 4 to 6.

Then add vinegar, water and sugar and bring to a simmer. Add onions, and continue to simmer. Add potatoes to the sauce to coat evenly.Cook over low heat for 40 - 50 minutes. Add salt and pepper to taste. Serve warm.

Set aside.Cook and drain manicotti shells as directed on package. Rinse with cold water; drain.Chop tofu into small, 1-inch chunks. Finely chop 1 cup of the coleslaw mix. Mix finely chopped coleslaw, tofu, bean sprouts, peanuts and water chestnuts. Fill each cooked shell with tofu mixture.Divide remaining coleslaw mix among four dinner plates. Pizza Pasta SaladPosted by kdipaolo at recipegoldmine.com 6/7/01 8:51:11 pm1 pound Rotini, Twists or Spirals, uncooked3 ounces sliced pepperoni (about 3/4 cup)4 ounces sliced Provolone cheese (about 1 cup)12 cherry tomatoes (about 1 1/2 cups), halved1/2 cup grated Parmesan  cheese1/2 cup non-fat Italian salad dressing1 teaspoon Italian seasoning1/2 teaspoon minced garlic1 green bell pepper, ribs and seeds removed,    sliced into rings2 1/2 rounds (7-inch) pita breadPrepare pasta according to package directions.While pasta is cooking, cut pepperoni slices into fourths and slice the Provolone cheese into matchstick-size pieces. Place in a large bowl. Add cherry tomatoes, Parmesan cheese, Italian dressing, Italian seasoning and garlic.When pasta is done, drain and rinse with cold water. Drain again. Add pasta to cheese mixture and mix well. Quarter the pita bread rounds and place around a large platter. Top with pasta salad and garnish with green pepper rings.

Mix well. Pour over salad ingredients. Toss to coat well. Chill several hours.Top with croutons just before serving.Makes 16 servings.
