Pina Colada Popcorn8 cups popped popcorn2 tablespoons butter or margarine1/3 cup light corn syrup1/4 cup instant coconut cream pudding mix3/4 teaspoon rum extract1/2 cup diced dried or candied pineapple1/2 cup coconut, toasted **To toast coconut, spread coconut in a thin  layer on a shallow baking pan. Bake at 250 degrees for 6 to 7 minutes or till light brown, stirring often.Remove all unpopped kernels from popcorn. Place popped popcorn in a buttered 17 x 12 x 2-inch baking pan. Keep the popcorn warm in a 300 degree F oven while making the coating.In a small saucepan melt the butter or margarine. Remove saucepan from heat. Stir in the corn syrup, pudding mix and rum extract. Remove popcorn from oven. Pour the syrup mixture over the popcorn. With a large spoon, gently toss the popcorn with the syrup to coat. Bake popcorn, uncovered, in a 300 degree F oven for 15 minutes.Remove popcorn from oven and stir in the dried pineapple and the coconut. Bake the popcorn mixture, uncovered, 5 minutes more. Turn the mixture onto a large piece of foil. Cool the mixture completely. Serve popcorn immediately or store, tightly covered, in a cool, dry place.Makes about 16 (1/2 cup) servings.

Macadamia Nut Candied Corn24 cups air popped popcorn (about 1 cup unpopped)2 cups macadamia nuts3/4 cups granulated sugar1 cup butter or margarine1/2 cup light corn syrup1/2 teaspoon salt3 cups miniature marshmallows1/4 teaspoon butter flavoringPreheat oven to 250 degrees  F. Place popcorn and macadamia nuts in a large greased roasting pan.In a large heavy saucepan, combine sugar, butter, corn syrup and salt over medium heat. Stirring constantly, bring to a boil.Boil 2 minutes without stirring. Remove from heat.Add marshmallows, stir until melted. Stir in butter flavoring. Pour marshmallow mixture over popcorn mixture; stir until well coated. Bake 1 hour, stirring every 15 minutes. Spread on lightly greased aluminum foil to cool. Stir  in sugar, syrup, and salt. Bring to boil, stirring. Boil 5 minutes without stirring.Add vanilla extract and baking soda (will foam up.) Vanilla Popcorn1/4 cup corn oil 1 split vanilla bean 3/4 cup popping corn 1 tablespoon superfine sugarSalt 2 tablespoons melted butterIn a large heavy pot, heat corn oil over high heat until the oil smokes. Add 1 kernel popping corn and heat until kernel pops. Add vanilla  bean and remaining popping corn; cover pot, and shake gently until corn starts to pop. Shake vigorously until popping subsides. Remove from heat. Remove vanilla bean and toss popcorn with sugar, salt and melted butter. Scrape seeds from vanilla bean and add to popcorn.

Boil 3 minutes. Remove from heat. Stir in peanut butter chips and peanut butter until smooth. Pour mixture over popcorn. Toss gently to coat all pieces. Press into buttered 9-inch square baking pan. Sprinkle marshmallows and peanuts over top. Press lightly into popcorn mixture. Melt chocolate pieces and shortening over very low heat. Drizzle over top. Place popcorn and nuts in a large ovenproof bowl and place in oven. Pour sugar into a small, heavy saucepan and place over medium-low heat. Stir occasionally. When sugar is melted and a light caramel color, add honey and stir until smooth and liquid. Remove from heat. Take popcorn from oven, sprinkle it with salt and then pour sugar syrup over it. Using a potholder to steady bowl with one hand, stir quickly, using a large fork, to fluff and coat popcorn. Spread on baking sheet and let cool. Break into large pieces; store in an airtight tin.Servings: 6

Red or Green Kettle Korn1/3 cup unpopped popcorn 4 tablespoons granulated sugar4 tablespoons vegetable oil1/2 teaspoon, or to taste, coconut, rum, vanilla or other extracts)Preheat electric stove (just above medium setting). For gas stoves set low, never higher; preheating  is unnecessary. Pour all ingredients into popper. Stir constantly until popcorn has finished popping. Quickly empty pan onto cookie sheet. While the corn cools, take popper immediately to sink, run hot water into it with liquid detergent. Close lid on suds and let it soak for easy clean-up. When glazed popcorn is cool, break into pieces. Pick out any unpopped kernels.Makes approximately 4 quarts glazed popcorn.To add color: Add a few drops of food coloring on the unmelted sugar when ingredients are put in popper. Don't put in one spot as it will lump. Dot small amounts around in 6 or 8 places.Store finished glazed corn in an airtight canister or jar.

Cover, then bring to 15 pounds pressure and cook 5 minutes; reduce pressure again.Remove meat, and slice thinly on the diagonal.Serve with green beans and potatoes drenched with cooking liquid. Do not thicken the natural gravy.

Chicken with Dumplings1 fryer chicken2-3 cups water2 carrots, diced2 ribs celery, diced1 tablespoon chicken bouillonSalt and pepper, to taste1 1/2 to 2 cups BisquickParsley flakesCut up a fryer and brown it in a frying pan. Put the chicken in the pressure cooker with water,  carrots and celery. Deglaze the frying pan with some of the water and put that liquid into the pressure cooker. Add about a tablespoon of chicken bouillon, cover and cook it for 20 minutes at 15 psi. After cooling and removing the lid, the chicken is now falling off the bones. Remove chicken, and season the liquid with salt and pepper.Make the dumplings. Mix Bisquick and enough water to make a sticky dough. Form into 2-inch balls. Put some parsley flakes on the outside of each dumpling and place 8 dumplings into the pressure cooker with the chicken and liquid. Put on the lid and cook for another 10-15 minutes.

Add oil and brown meat. Add onion, garlic, celery and green pepper. Saut? lightly. Add tomatoes and liquid drained from beans and mushrooms,Combine salt, pepper, chili powder and wine. Mix well. Close securely. When it comes to pressure, reduce heat to medium and cook for 8 minutes. Cool cooker at once.Add beans and mushrooms and reheat to boiling. Keep at low simmer for flavor development for a few minutes, if time permits.Serve with warm garlic or corn bread.

Refrigerate, turning two or three times, for 1 to 2 days.Place 1 cup water and cooking rack in a 4- or 6-quart Presto pressure cooker. Remove brisket from sauce and put on rack. Discard sauce. Close pressure cooker cover securely. Place pressure regulator on vent pipe. Cook for 40 minutes, at 15 pounds pressure, with regulator rocking slowly. Let pressure drop of its own accord. Remove meat and keep warm.Add reserved 1 cup water to pressure cooker. Put vegetables on rack. Close pressure cooker cover securely. Place pressure regulator on vent pipe. Cook for 3 minutes, at 15 pounds pressure, with regulator rocking slowly. Cool cooker at once.Serve brisket thinly sliced, surrounded by vegetables.
