Grandma Vinny's SaucePosted by liz at recipegoldmine.comThis is from my Italian grandmother, Vincenza. Of course, she never wrote anything down so my sister and I used to follow her around the kitchen when we were young. Now I know some of you are thinking, "what! no  garlic???" Vinny was from Naples but she rarely used garlic and when she did she used it sparingly (she'd put it on a wooden pick and fish it out later) but obviously you can use as much garlic as you want.Olive oil2 stalks celery, diced1 medium onion, diced1 (28 ounce) can tomatoes, peeled and chopped-with juice4 (15 ounce) cans tomato saucePinch of sugar2 or 3 leaves fresh basil OR 1 1/2 teaspoon dried basilSalt and pepper to taste1 cup red wine (optional)3 or 4 links Italian sausage, sweet or hot8 ounces canned mushrooms - or use fresh, washed and slicedMeat Mixture1 1/2 pounds lean ground beef2 eggs1/2 cup ParmesanDash Worcestershire sauce2 slices firm bread, soaked in water, squeezed out and crumbledSalt, pepper and onion powder to tasteCover the bottom of a large pot with olive oil and turn heat to medium. When the oil is hot, saut? the celery for about 5 minutes then add the onion and saut? both until the onion is limp. Add the tomatoes, raise the heat to high and bring to a boil. Lower the heat, add a pinch of sugar (takes the acid out of the tomatoes) and the tomato sauce. Season with the basil, salt and pepper. Add the wine, if using and continue to cook over low heat.Meanwhile, prepare the meat mixture by combining all ingredients in a large bowl until well mixed. At this point you can either shape the meat into meatballs and broil them until most of the fat is eliminated and add them to the sauce or saut? the mixture in a separate pan, drain off the fat and add the meat loose to the sauce. Saut? the sausages and drain off the fat. You may add them whole or sliced as I do or remove them from the casingsentirely. Add the mushrooms, juice and all if you're using canned. Cook over low heat for an hour and a half to two hours (you can cook it all day if you're so inclined), stirring occasionally.Serve over your favorite pasta.Serves 6 but is easily doubled or tripled.

Bran Pie Crust Shells1/3 cup bran2 cups sifted all-purpose flour1/2 teaspoon salt2/3 cup shortening6 tablespoons cold waterCrush bran into fine crumbs; mix with flour and salt. Cut in 1/3 cup of the shortening to the consistency of cornmeal. Cut in remaining shortening to  the consistency of peas. Sprinkle cold water over top of mixture, a little at a time, mixing with a fork until dough is just moist enough to hold together. Turn onto a sheet of wax paper and shape the dough into a ball. Roll out to fit two 8-inch or 9-inch pie plates.

Spry Water Whip Pie CrustMakes two 9-inch pies or one 2-crust pie.3/4 cup plus 2 tablespoons Spry (vegetable shortening) 1/4 cup boiling water 1 tablespoon milk 2 1/4 cups sifted all-purpose flour 1 teaspoon saltPut Spry into medium mixing bowl. Add boiling water and milk  and break up Spry with fork. Tilt bowl and whip with fork or mixer until smooth and thick like whipped cream and holds soft peaks when fork is lifted.Sift flour and salt together into Spry mixture. Stir quickly with round-the-bowl strokes, until dough clings together and cleans the bowl.Pick up and work into a smooth dough; shape into 2 flat rounds. Roll in between wax paper or on floured pastry cloth or board.

Stir in raspberries. Bring to a boil over medium heat. Boil and stir for 2 minutes. Remove from heat; cool for 15 minutes.Spread raspberry mixture into crust; refrigerate.In a mixing bowl, beat ream cheese, sugar and vanilla extract until fluffy. Fold in Cool Whip. Carefully spread over raspberry layer. Refrigerate at least 1 hour.Melt chocolate; add corn syrup, butter, half-and-half, vanilla extract and sugar. Cool for 1 to 2 minutes. Pour over filling. Chill at least 2 hours.Yields 6-8 servings.

Blend well. Spread batter in deep pie pan.Mix pumpkin, sugar, salt, cinnamon, milk and egg. Beat until well blended. Carefully spoon filling into center of batter. Do not stir! Bake at 425 degrees F for 40 to 45 minutes.

Cover edges with foil during last 5 to 10 minutes of baking if necessary to prevent overbrowning of crust.

Raspberry-Saltine PieServes 8.4 egg whites 1/4 teaspoon cream of tartar 2 teaspoons vanilla extract, divided 1 1/3 cups granulated sugar, divided 16 saltine crackers, crushed 1/2 cup pecans, chopped 1 (8 ounce) carton whipping cream 3 cups fresh raspberriesPreheat oven to  325 degrees F. Lightly coat a 9-inch pie tin with cooking spray and a light dusting of flour.In a large mixing bowl, beat the egg whites and cream of tartar together until foamy. Beat in 1 teaspoon of vanilla extract and gradually add 1 cup of sugar until stiff peaks form.Gently fold the crushed saltines and chopped pecans into the egg whites. Transfer the egg mixture to the prepared pie tin and spread the mixture evenly over the bottom and sides. Bake for 35 to 40 minutes, until golden. Let cool and reserve.Meanwhile, beat together the whipping cream and 1/3 cup of sugar with 1 teaspoon of vanilla in a separate mixing bowl. Continue to blend at a high-speed setting, until soft peaks begin to form.Gently fold the raspberries into the cream and spoon the mixture into the cooled saltine pie crust. Refrigerate to store. Slice to serve.

Chill for 2 to 3 hours.In small mixing bowl, whip cream until soft peaks form. Sprinkle pudding mix over cream and whip until stiff.To serve, slice pie and place on dessert plate. Dollop with whipped cream and top with a strawberry with a stem.
