Duck with Orange Sauce (Catneon a L'Orange)1 (5- to 6-pound) duckSalt1 tablespoon butter1 tablespoon flour1 cup white stock1/2 cup dry white wineTruss the duck and season it with salt. Place it on its side in a roasting pan and sear it in a hot oven, 475 degrees F, for 20  to 30 minutes, or until it is golden brown. Turn several times.Remove the duck and discard all but 1 tablespoon of fat from the pan. Melt the butter in the roasting pan, and stir in the flour. Cook over direct heat until the roux is brown, stirring constantly. Gradually add the white stock and white wine and cook the sauce, stirring constantly, until it is slightly thickened. Return the duck to the pan and continue baking it at 375 degrees F for 1 1/2 hours.Orange Sauce2 oranges2 tablespoons granulated sugar2 tablespoons waterJuice of 2 orangesJuice of 1/2 lemon2 tablespoons brandyOrange slicesParsley sprigsCut the zest from 2 oranges and cut it in very fine strips. Cover the strips with water, boil them for 3 minutes and drain. Pare away and discard all the pith remaining on the oranges and slice them. Transfer the duck to a warm platter and cook the sauce in the roasting pan until it is reduced to about 1 cup. In a small saucepan, cook together the sugar and water until the syrup is a light caramel color and add to the reduced sauce. Cook all together, add the orange strips, the juice of 2 oranges and the lemon juice and brandy. Correct the seasoning with salt. Carve the duck and arrange the pieces on the platter. Surround the duck with the orange slices and alternate sprigs of parsley. Pour the sauce over all.

Place 15 graham squares on bottom of pan, overlapping slightly.Microwave chocolate chunks and 2 tablespoons butter in microwavable bowl on HIGH for 2 minutes; stir until melted. Spread 1/2 the melted chocolate over graham squares.Microwave remaining 4 tablespoons butter in 4-quart microwavable bowl on HIGH for 45 seconds or until melted. Add marsh mallows; mix to coat. Microwave 1 1/2 minutes or until melted, stirring after 45 seconds. Add cereal; mix to coat.Press cereal mixture firmly over graham squares in pan. Drizzle with remaining melted chocolate. Immediately top with remaining 15 graham squares. Cool; cut into squares.Makes 15.How to press cereal mixture in an even layer: Grease bottom of flat glass or metal measuring cup. Cut chicken into serving-size pieces. Wash and pat dry with paper toweling.Fill a bag with 1 cup of the coating mix. Their kitchen produces 800,000 pounds of Frango Mints every year. This  cheesecake is served in their famous Walnut Room.Chocolate Cookie CrustSeparate 30 Oreo cookies and scrape off all the filling. You will have 60 halves. Pulverize these, along with 4 tablespoons of butter, in a blender. Pack firmly into a 10-inch springform pan.FillingMelt 1 cup chopped Frango Mints (original flavor) in a double boiler. With an electric mixer on medium speed, beat in 24 ounces of softened cream cheese and 1 cup sugar. Add 2 eggs at low speed, then beat in the melted Frango Mints. Add 1/3 cup whipping cream and 1 teaspoon vanilla extract. Blend well. Spread evenly over the crust. Bake at 350 degrees F for 35 minutes. The center will be slightly shaky when you remove it from the oven. Place it on a wire rack, and the center will firm as it cools. At this point you may either freeze it or wait until it cools completely, then glaze it.GlazeMix 1/4 teaspoon plain gelatin with 1 tablespoon ice cold water. Melt 4 chopped Frango Mints and let them cool slightly. Stir into the gelatin mixture. Add 1/2 cup sour cream and a speck of salt. Spread over the cold Frango Mint Cheesecake.

Lightly grease cookie sheets; set aside.In medium bowl, with hands mash almond paste and sugar together until completely mixed. Stir in coconut and chocolate chips until well mixed; set aside.In clean, ungreased medium bowl, whip egg whites on high speed till fluffy. Add cream of tartar and beat until stiff. Mix half of stiff egg whites into coconut mixture until lightened. Gently fold in remaining egg whites.Drop rounded teaspoonsful onto prepared cookie sheets. Bake at 325 degrees F until peaks are lightly browned, about 20 minutes. Let set on cookie sheets for 1 minute, then remove to cool on rack.
