Un-fried ChickenCooking spray6 skinless chicken drumsticks6 skinless, boneless chicken breast halves3 1/2 cups ice water1 cup plain nonfat yogurt1 cup Italian-style breadcrumbs1 cup all-purpose flour1 tablespoon Old Bay seasoning1/2 teaspoon Creole seasoning1/8 teaspoon  ground black pepperDash of cayenne pepper1/2 teaspoon dried thyme1/2 teaspoon dried basil1/2 teaspoon dried oreganoPreheat the oven to 400 degrees F.Coat a baking sheet with nonstick spray. Put the chicken into a large bowl with the ice water. Put the yogurt into a medium bowl. Set both bowls aside.Toss all the breading ingredients in a large zip-type bag. Seal and shake well to mix. Remove 2 pieces of chicken from the ice water and blot dry. Roll each piece in the yogurt, then toss them in the bag of crumbs to coat.Transfer the chicken to the baking sheet. Repeat until all chicken is coated. Spray the chicken lightly with cooking spray.Place the sheet on the bottom rack of the oven and bake for 1 hour, turning the pieces every 20 minutes to allow even browning. Spoonful* 1/8 teaspoon salt 6 tablespoons cold stick butter or margarine, cut into pieces 1 teaspoon grated lemon peel 1 teaspoon vanilla extractFilling2 eggs 3/4 cup Equal Spoonful** 1/2 cup lemon  juice 4 tablespoons stick butter or margarine, melted 1 tablespoon grated lemon peel*May substitute 8 packets Equal sweetener ** May substitute 18 packets Equal sweetenerFor Crust, combine flour, 1/3 cup Equal? and salt in medium bowl. Cut in 6 tablespoons butter with pastry blender until mixture resembles coarse crumbs. Sprinkle with 1 teaspoon lemon peel and vanilla. Mix with hands to form dough. Press dough evenly on bottom and 1/4-inch up sides of 8-inch square baking pan. Bake in preheated 350 degree F oven 8 to 10 minutes or until set. Cool on wire rack.For Filling, beat eggs and 3/4 cup Equal?. Mix in lemon juice, 4 tablespoons melted butter and 1 tablespoon lemon peel. Pour mixture into baked pastry. Bake about 15 minutes or until filling is set. Cool completely on wire rack. Crockpot Rice Pudding with Fruit (WW)Servings: 12 - estimated POINTS per serving: 24 cups skim milk 1/2 cup rice 1/4 cup granulated sugar 1 tablespoon diet margarine 1/8 teaspoon salt, optional 1/2 teaspoon vanilla extract 1/4 cup minced dried apricots or peaches 1/8  teaspoon cinnamon 2-3 packages Splenda or Equal to taste at end of cooking timePut all ingredients except Splenda or Equal into crockpot. Stir to blend well. Cover and cook on HIGH for 1 1/2 hours, stirring once after about 1 hour. Or, cook on HIGH for the first 30 minutes, turn to LOW and cook as long as you desire. Check after the first 2 hours of low cooking and stir. If rice is not absorbing the milk quickly enough, turn the crockpot up to HIGH again. Keep cover on at all times. Before serving, add Splenda or Equal to taste. Add a dollop of fat-free Cool Whip to each serving, if desired.Makes about 6 cups. 1/2 cup serving is about 2 points.

Flaky Apple Turnovers (WW)1.5 WW points per serving2 1/4 cups peeled, chopped cooking apples (about 3/4 pound) 1 1/2 teaspoons lemon juice 1/4 cup granulated sugar 1 tablespoon all-purpose flour 1/2 teaspoon ground cinnamon 1/8 teaspoon salt 1/8 teaspoon ground nutmeg 10  sheets frozen phyllo pastry, thawed Vegetable cooking sprayCombine apple and lemon juice in a small bowl; toss gently. Add sugar, flour and next 3 ingredients; toss well and set aside.Spray 1 phyllo sheet at a time with cooking spray, and cut each sheet lengthwise into 4 (3 1/4-inch wide) strips. Stack 2 strips, 1 on top of the other. Spoon 1 heaping tablespoon apple mixture onto 1 end of each strip, and spread to within 1 inch of end; fold the left bottom corner over mixture, forming a triangle. Keep folding back and forth into a triangle to end of strip. Repeat procedure with remaining ingredients. Place the triangles, seam-side down, on a baking sheet. Spray a 9-inch (23 cm) round cake pan with nonstick cooking spray.In a large bowl, combine the baking mix, 3 tablespoons of the sugar and the orange zest.Add the milk and stir with a fork until a soft dough forms. Transfer to the pan and press flat with floured fingers. Sprinkle with 1 tablespoon of the sugar. Bake until a wooden pick inserted in the center comes out clean, about 15 minutes.Cool in the pan on a rack for 5 minutes. Remove from the pan and cool completely, top-side up.In a large bowl, combine the peaches, raspberries, orange juice, preserves and the remaining 1/4 cup of the sugar. Reduce heat; add peaches, and simmer 7 minutes or until tender. Remove peaches with a slotted spoon; place in a shallow dish. Bring cooking liquid to a boil, and cook until reduced to 1/2 cup (about 7 minutes). Discard vanilla bean; pour syrup over peaches. Cool to room temperature.Combine preserves and 4 teaspoons peach syrup; stir with a whisk. Crunchy Oven Fried Fish1 pound cod fillets 1/4 cup all-purpose flour 1/4 teaspoon salt 1/4 teaspoon lemon pepper 1 egg white 1/4 cup dry bread crumbs 1/4 cup cornmeal 1 1/2 teaspoons lemon peel, grated1/2 teaspoon basilCut fish into serving-size pieces.In a shallow dish,  combine flour, salt and lemon pepper and set aside.Beat egg white until frothy and set aside.Combine bread crumbs, cornmeal, lemon peel and basil. Dip one side only of fish fillets into flour mixture, shaking off excess. Dip into egg white, then coat with bread crumbs.Spray a shallow baking pan with nonstick cooking spray. Place fillets in baking pan coating side up, tucking under any thin edges.Bake at 450 degrees F for 6 to 12 minutes or until fish flakes easily with a fork.Serves 4.3 WW points
