Dragon's Breath WingsThese are as delicious cold as they are straight from the grill.Marinade2 tablespoons rice wine2 tablespoons soy sauce1 tablespoon ginger root, gratedSauce1 garlic clove, minced1 tablespoon ginger root, grated4 tablespoons soy sauce2 tablespoons rice  wine vinegar1 tablespoon sugar1 tablespoon sesame oil1/4 teaspoon hot chili oil2 pounds chicken wingsChopped green onionsCombine the marinade ingredients in a large plastic bag. Add the chicken wings to the bag and marinate at least one hour in refrigerator.Drain the wings. Grill until cooked, or bake on middle shelf of a 400 degrees F oven for 40 minutes.Mix the sauce ingredients together until thoroughly blended.Arrange wings on platter. Pour sauce over them to completely cover. Garnish with finely chopped green onion.

Hot 'n' Spicy Chicken Wings with Blue Cheese DipDip1/2 cup sour cream1/2 cup mayonnaise2 teaspoons white wine vinegar1 tablespoon fresh parsley chopped1 tablespoon green onions, chopped1/2 teaspoon garlic, minced1/2 teaspoon Tabasco sauce3 tablespoons blue cheese,  crumbledSalt and pepper, to tasteChicken Wings12 chicken wingsVegetable oil (for frying4 tablespoons butter or margarine, melted1 teaspoon catsup1 teaspoon Tabasco sauceCelery sticksIn a bowl, beat together all of the dip ingredients until blended. Set aside.Remove the tips from the wings and discard. Separate the first and second joints of the wings with a sharp knife. Pat the wings dry with paper towels.In a heavy saucepan, heat about 2 inches of oil to 350 degrees F on a deep frying thermometer. Fry the wings. a few at a time, for about 6 minutes, until golden brown on all sides. Drain on paper towels.In a small bowl, mix the butter, catsup and Tabasco sauce. Toss the wings in the butter mixture to coat thoroughly. Serve hot, and pass the dip and celery sticks.

Apricot-Onion Wings1 (5 pound) bag frozen chicken wings1 (10 ounce) jar apricot preserves1 (1 ounce) packet dry onion soup mix1 (16 ounce) bottle Catalina-style salad dressingPreheat oven to 400 degrees F.Cut the chicken wings into individual pieces and place on two lightly  greased cookie sheets.Spread apricot preserves over wings. Sprinkle dry onion soup mix over wings, then pour Catalina dressing all over. Bake for 1 hour.Makes 20 to 25 servings.

Hot Hot Habanero Wings 2 pounds chicken wings1 (18 ounce) bottle honey teriyaki barbecue sauce1/4 cup fresh honey2 tablespoons Liquid Smoke1 1/2 to 2-inch piece fresh ginger, grated6 cloves garlic, crushed8 habanero chile peppers, chopped*4 chile peppers, your choice,  chopped3 tablespoons fresh horseradish1 (18 count) package chicken wingsCut wings into thirds, and discard the tips. There should be about 36 pieces.In a medium saucepan combine barbecue sauce, Worcestershire sauce, honey, Liquid Smoke seasoning, ginger, garlic, habanero peppers, chile peppers and horseradish. Stir all together, and simmer over low heat for 1 hour.Put chicken wings in a large glass bowl, and cover with 3/4 of the sauce. Cover, and refrigerate for at least 6 hours.Preheat grill for low heat.Lightly oil grate. Remove chicken from marinade, and place on grill. Cook over low heat for 45 minutes to 1 hour, turning occasionally.* WARNING: Wear gloves, and do not let the oil get anywhere near your eyes.

Chicken Wings with Caramel-Black Pepper GlazeSource: Ponzu Restaurant - San Francisco, California12 chicken wings1 to 2 quarts vegetable oil for deep frying1/2 cup granulated sugar1 tablespoon water1/3 cup Asian fish sauce1 tablespoon pepperCut the chicken wings into 2  pieces, cutting at the joint. Remove the wing tips and reserve for stock, if desired.Heat the oil in a large pot to 375 degrees F.Add the chicken wings and fry for about 10 to 15 minutes, until golden brown and crispy. Remove the wings to paper towels to drain.Combine the sugar and water in a small saucepan; place over medium-high heat until the sugar turns a light caramel color, about 7 minutes.Remove from heat and add the fish sauce. The sauce will boil vigorously. Return to medium heat and cook until slightly thickened, about 30 seconds to 1 minute. Stir in the pepper.Toss the chicken wings with the sauce and serve.Serves 3.

Bandito Chicken WingsSource: Taste of Home - Nov/Dec 199712 whole chicken wings1/2 teaspoon salt1/8 teaspoon pepper1/2 cup butter, divided2 tablespoons cooking oil1/2 cup taco sauce1/4 cup barbecue sauce1/4 cup French salad dressing1 teaspoon Worcestershire sauce1/8  teaspoon hot pepper sauceCut chicken wings into three sections; discard wing tips. Sprinkle with salt and pepper. In a skillet over medium heat combine 2 tablespoons butter and oil. Fry chicken until brown. Place in a greased 13 x 9-inch baking pan.In a saucepan, combine taco sauce, barbecue sauce and French dressing. Worcestershire sauce, hot pepper sauce and remaining butter; cook and stir over medium heat until butter is melted and sauce is blended. Pour 1/2 cup over the chicken wings. Bake uncovered at 300 degrees F for 15 to 20 minutes or until chicken juices run clear.Serve with remaining sauce.
