These one-dish sensations  are easy on the cook and offer dinner guests a nutritious repast.This week, we're in the kitchen at Amelia's to watch the chef do his turn on this Italian classic.White kidney beans are also called cannellini beans. They are available both in dry and canned forms.Cannellini beans were originally cultivated in Argentina but became an Italian stalwart, widely used in their cuisine around the world. The beans are particularly popular in salads and soups. The bean has smooth texture and nutty flavor and is an excellent source of iron, magnesium and folate.Yield: 12 servings1 pound bacon, cut into small pieces 1/2 pound diced carrots 1/4 teaspoon fresh garlic 1 pound diced onion 1 rib celery, diced 1 sprig fresh basil, chopped 1/4 pound Romano cheese 3 (10 ounce) cans white kidney beans 1 (12 ounce can diced tomatoes Water or chicken base Additional basil and cheese for garnishIn a large pot, brown bacon until just crisp. Add onions, carrots and basil. Simmer until carrots are soft.Add garlic and celery and let simmer for about 3 minutes. Add beans, tomatoes, 3 (10-ounce) cans water or chicken base. Bring mixture to a boil. Add cheese. Let soup cook for 10 minutes. Season to taste. Aunt Chilada's Yucatan-Style Pork TamalesSource: Chef Jessie Gonzales, Aunt Chilada's - Phoenix, Arizona1 pound lean pork 2 cloves garlic 1/2 onion, cut in half 1 teaspoon salt 6 ancho chiles, seeds and membranes removed 8 guajillos chiles, seeds and membranes removed 2  tomatoes 1 teaspoon dried marjoram 4 black peppercorns 2 whole cloves 1 pound masa 5 tablespoons lard 1 large banana leafIn a large saucepan, cover the pork with water and add 1 garlic clove, 1 onion quarter and 1/2 teaspoon salt. Bring to a boil, cover and simmer until pork is tender, 45 to 60 minutes. Shred meat, reserving the stock.Toast the chiles and place in a bowl, cover with warm water and soak for 20 minutes. Meanwhile, roast the tomatoes, peel and puree in a blender. Roast the other onion quarter, 2 cloves garlic, marjoram, peppercorns and cloves.Drain the chiles and transfer to a blender. Add the roasted onion, garlic, marjoram, peppercorns, cloves and 1 cup of the reserved stock, then puree until smooth.Melt 1 tablespoon lard in a skillet and saut? the chile puree for 5 minutes. Add the pureed tomatoes and saut? for another 5 minutes; add the pork, stir and cover. Lower the heat and cook for 10 minutes.Hold banana leaf directly over the heat for 5 seconds. Cut into 5-inch squares.Knead masa with 2 tablespoons lard for 5 minutes.Grease one side of the banana leaf. Place a 3-inch square of masa on the lard and top with 1 1/2 tablespoons of pork mixture. Fold opposite edges of leaf towards the center and do the same with other edges to form a closed rectangle. Use strips of leaf to tie and secure. To cook, steam for about 20 minutes.

Dredge wet catfish in mixture, coating well and shaking off excess. Deep fry catfish for 6 to 8 minutes, or until brown and crispy. Serve with coleslaw, French fries and hush puppies.

Bennigan's Shrimp and PastaPosted by LladyRusty at recipegoldmine.com - May 4, 2001Source: Women's Day magazine12 ounces penne pasta1 tablespoon stick butter1 (12 ounce) package mushrooms, thickly sliced1 medium red onion, chopped2 tablespoons minced garlic1/2 cup Irish  brown ale1 package white sauce mix, whisked with 1 1/2 cups milk1 cherry tomato, halved1 1/2 pounds raw medium shrimp, peeled and deveinedGarnishChopped scallionsFreshly grated Parmesan cheeseCook pasta as directed on package.Melt butter in a large skillet over medium heat. Add mushrooms and onions. Cook, stirring occasionally, for 8 minutes or until lightly browned and soft. Add garlic. Cook, stirring, for 1 minute until fragrant. Add ale, white sauce mixture and tomatoes.Bring to a boil and stir constantly until sauce thickens. Add shrimp. Reduce heat to medium low and simmer 2 to 3 minutes until cooked through.Drain pasta and place in a large serving bowl. Add shrimp and sauce. Toss to mix and coat. When serving, sprinkle with the scallions and cheese.Servings: 4

Ben & Jerry's Giant Chocolate Chip Cookies1/2 cup butter, at room temperature1/4 cup granulated sugar1/3 cup brown sugar1 large egg1/2 teaspoon vanilla extract1 cup plus 2 teaspoons all-purpose flour1/2 teaspoon salt1/2 teaspoon baking soda1 cup semisweet chocolate  chips1/2 cup coarsely chopped walnutsPreheat oven to 350 degrees F.Beat the butter and both sugars in a large mixing bowl until light and fluffy. Add the egg and vanilla extract and mix well.Mix the flour, salt, and baking soda in another bowl. Add the dry ingredients to the batter and mix until well blended. Stir in the chocolate chips and walnuts.Drop the dough by small scoops 2 to 3 inches apart on an ungreased cookie sheet. Flatten each scoop with the back of a spoon to about 3 inches in diameter.Bake until the centers are still slightly soft to the touch, 11 to 14minutes.Let cool on the cookie sheet for 5 minutes, then transfer to racks to cool completely.Makes 12 to 15 cookies.

This recipe, created by executive chef Carl Walker, was published Nov. 3, 1999.1 1/2 cups Brennan's Creole Caesar Dressing2 ounces  pepper vodka (recipe developed with Absolut)2 heads chilled romaine lettuce, torn into small pieces6 tablespoons freshly grated Parmesan cheese6 prepared garlic cheese straws6 to 12 Fried Crabmeat OlivesAdd vodka to Dressing; shake to combine. Toss Dressing with lettuce. Arrange in large martini glasses. Sprinkle with Parmesan. Add a cheese straw to each glass as a stirrer. Garnish each glass with a Fried Crabmeat Olive skewered on a toothpick. Use 1 or 2 olives per salad. Makes 6 servings.Creole Caesar Dressing1 tablespoon minced garlic1 ounce grated Parmesan cheese2 ounces anchoviesJuice of 1 lemon1 egg1 tablespoon Creole mustard1 tablespoon Worcestershire sauce1/4 cup red wine vinegar1 3/4 cups cottonseed or other vegetable oil1 tablespoon hot red pepper sauceSalt and ground black pepper to tasteCombine garlic, Parmesan, anchovies, lemon juice, egg and mustard in a food processor or blender; mix well. Add Worcestershire and vinegar. Slowly add oil through processor cap until dressing thickens to desired consistency. Season with pepper sauce, salt and pepper. Makes 2 cups.Fried Crabmeat Olives1 1/2 teaspoons oil1/3 cup diced onion2 tablespoons diced green bell pepper1/4 cup diced celery1/3 tablespoon minced garlic1 pound jumbo lump crab meat2 tablespoons seafood seasoning1 1/2 teaspoons hot red pepper sauce1 1/2 teaspoons Worcestershire sauce1 tablespoon freshly grated Parmesan cheese1 egg, slightly beaten2 tablespoons bread crumbs1 tablespoon thinly sliced green onion6 pitted black olives12 capersAll-purpose flourHeat oil in medium skillet almost to the smoking point. Add onion; saut? a minute, then add bell pepper, celery and garlic. Saut? until soft. Add crab to vegetables. Then add seafood seasoning, pepper sauce, Worcestershire and Parmesan. Heat through. Mix in egg as you take pan off heat, then return to heat for a few seconds while stirring. Stir in bread crumbs and green onion; refrigerate, covered.Stuff olives with capers, 2 capers per olive. Roll olives in crab-cake stuffing mixture to form 1 1/2-inch balls. Bread crab cakes by dusting them with flour. Dip in egg and roll in bread crumbs. Deep-fry until golden brown and hot in the center.To serve, arrange cheese straws and fried olives in martini glass.Makes 6 servings.

Add onions and saut? along with bell pepper, jalape?o and garlic. Cook until vegetables are tender.In another container, combine water, chicken base, lime juice, sugar, cornstarch and seasonings. I finally made it earlier this week and decided it was good enough to keep. It is from  the Commanders Palace Restaurant.....the famous training grounds of many great chefs.He is a neighbor of the Brennan's and every now and again they share some of their recipes with him. This is a variation of a Caesar Salad. It looks awful, but please try it as the garlic and anchovies are blended in just the right proportions to "balance" each other..........2 ounces anchovy fillet12 cloves garlic, mashed1 egg1/4 medium onion, chopped1/2 cup Parmesan, fresh, grated1 1/2 teaspoons black pepper, coarsely ground2 tablespoons red wine vinegar1/2 cup plus 2 tablespoons olive oilSalt and pepper to tasteThe anchovy are packaged in small tins. Two ounces is about 12 fillets or 2 tablespoons.Place all except oil in food processor.Process and add oil slowly while processor is running.Adjust salt and pepper if needed.

Disney's 50's Prime Time Cafe Chicken Pot PiePosted by CookinMom at recipegoldmine.com - May 21, 2001Source: Mickey's Gourmet Cookbook2 cups chicken tenderloins, uncooked1 cup broccoli, tops only1/2 cup carrots, cubed1/2 cup celery, cubed1/4 cup leeks, diced3 tablespoons  butter3 tablespoons flour3 cups milk or half-and-half1 cup Parmesan cheese, grated2 chicken bouillon cubesPastry dough for a single pie (double crust)1 egg, beatenPreheat oven to 400 degrees F.In boiling salted water, simmer chicken tenderloins, broccoli, carrots, celery, and leeks until chicken is fully cooked and vegetables are tender, but still firm (about 15 minutes). Drain well and set aside.In a medium sized skillet, melt butter and add flour. Cook for 5 minutes and add milk or half-and-half. Bring to a boil and simmer until thickened (about 10 minutes).Dissolve chicken bouillon cubes in 1/4 cup warm water and add to sauce. Blend in grated Parmesan cheese and remove from heat. Add cooked chicken and vegetables and mix well.Pour mixture into a deep-dish pie plate and cover with pie dough. Seal edges well and brush top with beaten egg. Bake until crust is golden brown and the filling is hot (about 45 to 50 minutes). Brushing a little milk on the top of the pie dough before baking will give the crust a delightful color.

Daniel's Pizza Pasta Cafe White Chocolate Raspberry CheesecakeSource: Daniel's Pizza Pasta Cafe, Apex, North CarolinaCrustButter or nonstick cooking spray for greasing pan1/2 cup slivered almonds1 cup graham cracker crumbs1/4 cup granulated sugar4 tablespoons melted butter1  teaspoon almond extractFilling32 ounces Philadelphia brand cream cheese, room temperature2 cups granulated sugar6 eggs2 teaspoons vanilla extract2 cups high-quality sour cream1/2 cup chopped white chocolate1/2 cup quality raspberry jam, thinned with 3 tablespoon waterTopping3/4 cup sour cream3 tablespoons granulated sugar1/2 teaspoon vanilla extract1/4 cup raspberry jam1 tablespoon waterBlock of white chocolate, at room temperature (optional)Preheat oven to 350 degrees F. Butter the inside of a (10-inch) springform pan, or spray with nonstick cooking spray. Wrap the outside bottom and sides of the pan in two layers of aluminum foil. Set aside. Also have ready a baking dish large enough to hold the springform pan in a bain marie, or water bath.Crust: Spread slivered almonds in a single layer on a cookie sheet. Bake 5 to 10 minutes, shaking the pan gently every 2 to 3 minutes, until fragrant and lightly browned.In the bottom of the springform pan, combine almonds, graham cracker crumbs and sugar. Add melted butter and almond extract, and mix until well-combined. Lightly pat crumb mixture onto bottom only of pan, spreading evenly across the surface.Filling: With a mixer, beat cream cheese and sugar until smooth and fluffy. Mix in eggs one at a time; do not over-mix. Add vanilla and sour cream, and mix just until well-blended. Fold in white chocolate. Pour mixture into prepared springform pan.Pour jam on top in a spiral pattern, then gently stir in jam, leaving swirls visible.Place springform pan in baking pan, and fill baking pan with water to a depth of 1 inch. Bake about 1 hour and 15 minutes until set and lightly browned. Turn off oven and leave cheesecake in oven for 1 hour.Remove from oven and let cool, overnight if possible. Run knife along sides, and loosen sides of springform pan.Topping: In a bowl, combine sour cream, sugar, vanilla extract, raspberry jam and water until smooth. Spread on top of cheesecake. If garnishing with white chocolate, carefully shave off curls with a cheese plane or vegetable peeler, and scatter curls over top of cheesecake.Makes 12 servings.Per serving: fats, 49 grams (58% of calories); calories, 752; cholesterol, 221 milligrams; carbohydrate, 68 grams; fiber, 1 gram; protein, 13 grams; sodium, 373 milligrams

Put the slices of butter on top of the pie  filling, placing them as evenly as possible.Carefully remove the pie crust from the pan it is in, and place it carefully on top of the pie filling and butter. You will need to cut off the edges that hang over and make them fit on the square pan. Sprinkle liberally with cinnamon and sugar. Bake for about 20 to 25 minutes, until pie crust is lightly browned.Serve with a scoop of vanilla ice cream.

Houston's Tortilla Soup1 (2 1/2 to 3 pound) chicken, cut-up and skin removed2 ribs celery, cut into chunks1 medium onion, quartered1 large carrot, quartered2 sprigs parsley2 tablespoons chicken soup base1 teaspoon lemon-pepper seasoning1 large clove garlic or granulated  garlic, to taste1 1/2 pounds potatoes, peeledCombine the first seven ingredients in a large stockpot and cover with water by about 2 inches. Bring to a rapid boil; lower heat to a simmer and cook for about 1 hour until chicken is tender and falling off the bone.Strain and reserve the broth. Tear pieces of chicken into small pieces. Set aside.In 4 cups of the reserved chicken broth, boil the potatoes until tender. Remove from heat. Do not remove the broth. Mash the potatoes and add the following:1 large can creamed corn1 (10 ounce) can Ro-Tel tomatoes, crushed1 1/2 cups half and half2 to 4 tablespoons minced cilantroAdd enough of the reserved chicken broth to thin out the soup to the desired thickness. Simmer on low for about 15 to 20 minutes. Taste and correct seasoning. Be careful of adding too much salt.Moments before serving, stir in:1 cup shredded Cheddar cheese1 cup shredded Monterey jack cheeseReserved cut-up chicken4 to 6 corn tortillas, cut into    1/4-inch julienne stripsContinue to simmer until cheese is melted and chicken is heated through.To serve, ladle soup into deep bowls. Garnish with a dollop of sour cream, chunks of avocado dipped in lemon juice, slices of black olives and a small handful of thin corn tortilla strips that have been deep fried.
