Butterscotch Meringue PiePosted by kdipaolo at recipegoldmine.com 6/5/01 11:30:38 am1 (9-inch) pie shell, baked1 cup packed light brown sugar1/4 cup cornstarch1/2 teaspoon salt1 cup water1 2/3 cups milk1/3 cup butter3 egg yolks (reserve whites)1 1/2 teaspoons vanilla  extract3 egg whites1/4 teaspoon cream of tartar6 tablespoons granulated sugarMix brown sugar, cornstarch and salt in a saucepan. Gradually stir water and milk into ingredients in saucepan. Add butter (NOT margarine) to ingredients in saucepan. Cook the mixture over medium heat (stove burner set to medium), stirring constantly, until it thickens and boils. After it reaches the boiling point, boil it for one minute. Remove the saucepan from the burner.Slightly beat egg yolks. Gradually stir at least half of the hot mixture into the beaten egg yolks. Blend this mixture into the remaining mixture in the saucepan. Boil the mixture for one minute, stirring constantly. Remove the saucepan from the burner. Blend vanilla extract into the mixture in the saucepan. Pour the mixture into the baked pie crust.Make a meringue with the leftover egg whites. Add cream of tartar to the egg whites. Beat the egg whites and the cream of tartar until they are frothy. Gradually beat in the sugar, a little at a time. Beat the mixture until it is stiff and glossy.Spread the meringue over the hot pie filling. To prevent weeping or shrinking, tightly seal the meringue to the edge of the crust. Bake the pie in a 400 degree F oven for 8 to 10 minutes to brown the meringue.

Combine morsels, sugar, flour and cinnamon in small bowl; sprinkle over apples. Bake for 20 minutes; remove from oven.Topping: Combine flour and sugar in medium bowl. Cut in butter with pastry blender or two knives until crumbly. Stir in nuts and oats; sprinkle over apple layer. From "Feeding the Flock" by Holy Family Parish of Davenport, Iowa1 cup all-purpose flour1/2 cup firmly  packed brown sugar1/4 teaspoon salt1/2 cup butter or margarine4 (14 1/2 ounce) cans tart red cherries in water    (save 1 cup of the juice) or use 4 cups fresh pitted    sour cherries and 1 cup juice1 cup granulated sugar1/4 cup cornstarchRed liquid food coloring (optional)1 1/2 cups quick-cooking oats, uncooked1/2 cup firmly packed brown sugar1/4 cup all-purpose flour1/4 cup plus 1 tablespoon butter or margarineCombine first 3 ingredients; cut in 1/2 cup butter with pastry blender until mixture is crumbly. Press in bottom of a greased 11 x 7 x 1 1/2-inch baking dish. Bake at 350 degrees F for 15 minutes. Let cool.Drain cherries, reserving 4 cups cherries and 1 cup juice. Reserve remaining cherries and juice for another use.Combine 1 cup sugar, cornstarch, and reserved 1 cup juice in a medium saucepan; stir well. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Remove from heat; add reserved 4 cups cherries and food coloring, if desired, stirring gently. Pour over crust.Combine oats, 1/2 cup brown sugar, and 1/4 cup flour in a small bowl, cut in 1/4 cup plus 1 tablespoon butter with pastry blender until mixture is crumbly. Sprinkle oat mixture evenly over cherry mixture. Bake at 350 degrees F for 20 to 25 minutes or until bubbly.Serve warm.Yield: 6 servings.

Slice bananas lengthwise and place cut side up in four buttered baking dishes. Combine flour, oatmeal, brown sugar, nutmeg and salt. Add butter. Using a pastry blender or two knives, blend until mixture resembles small peas. Drizzle bananas with orange juice. Spoon crumble mixture over fruit. Bake at 375 degrees F for 15-20 minutes.Serve warm with vanilla ice cream.

Easiest PiecrustThe two secrets to light, flaky pastry dough are to use cold ingredients and to process it as little as possible. In a food processor, with your pulse button, it takes no time at all. Makes two piecrusts.5 cups all-purpose flour1/4 teaspoon salt3/4 pound  very cold unsalted butter,    cut into very small pieces3 egg yolks4 tablespoons ice waterPut the flour and salt in the bowl of the food processor fitted with a metal blade. Pulse a few times to combine. Begin to add the butter, and pulse until the mixture starts to look like coarse meal (10 to 15 pulses). Add the egg yolks, then slowly pour in the ice water while processing (no more than 20 seconds). Pulse until dough just comes together - do not let it form a ball. If it holds together when you pinch it, it's ready. Place the dough in a plastic bag, form it into a flat round (like a round loaf of bread), and chill it for at least one hour before rolling it out.

Cut in cold butter until dough has the consistency of coarse sand (or use food processor). Add milk and gently knead just until a ball is formed. Refrigerate.Preheat oven to 400 degrees F.Combine sugar, flour and salt for filling. Slowly whisk in water and lemon juice. Stir into strawberries.Place fruit in 13 x 9-inch glass baking dish. Bake for 15 minutes or until fruit is bubbling. Stir.Tear off 1/4 inch thick, half dollar size pieces of dough; place on top of berries, covering the entire surface. Dot with 2 tablespoons butter; sprinkle with brown sugar.Return to oven, and bake another 30 minutes or until golden brown.

Pickled Pigs' Feet (Souse)4 pigs' feet1 cup chopped pickles2 cups vinegar2 cups stock2 tablespoons salt1 tablespoon whole cloves1/2 teaspoon black pepper1 tablespoon broken cinnamon stickScrape and clean feet well and put on to boil in enough salt water to cover. Simmer for  approximately 4 hours or until meat separates from bones.Mix stock in which meat was cooked with vinegar, salt, pepper and spices. Bring to the boiling point, and hold for 30 minutes.Strain liquid to remove spices.Place pieces of meat and chopped pickle in a flat dish or stone jar and pour the sour liquid over it. Chill in refrigerator until perfectly cold. Slice and serve.

Enjoy!!This is actually a topping that is great on scallops, but I did try it on some Po' Boys and it was outstanding!!Hot Mayonnaise1 large egg1 teaspoon Dijon mustard1 tablespoon hot sauce2 tablespoons lemon juice1 teaspoon Worcestershire sauce1/2 teaspoon salt1/8 teaspoon black pepper, coarsely ground1/4 teaspoon red pepper flakes1 cup olive oilIn food processor, add everything except oil. Process until smooth...about 30 seconds.With motor running, slowly add oil. Mixture will thicken. Refrigerate until ready.This is a more traditional topping found in Cajun country...Couzan Billy's R?moulade Sauce1/4 cup Creole mustard2 tablespoons paprika1 teaspoon cayenne pepper1 tablespoon salt1/2 cup tarragon vinegar1 1/2 cups scallions, minced1/2 cup celery, minced1/2 cup parsley, fresh, chopped1 1/3 cups olive oilCombine all ingredients except oil in food processor. Process for 30 seconds.With motor still running, slowly add oil. Cover bowl and let stand for 4 hours at ROOM TEMP.

Set aside. In another mixing bowl combine the peaches and apricot preserves. Spread a thick layer of the cream cheese mixture on one half of the tortilla. Top with peaches. Fold over tortilla. Repeat process with remaining ingredients.Place quesadilla on a heated and lightly buttered flat grill or saut? pan. Cook until golden, approximately 2 minutes per side. Serve.

Bit o' Irish Casserole1 (8 ounce) package medium size noodles 1 (12 ounce) can corned beef, cubed 1/2 pound Cheddar cheese, cubed 1/2 cup milk 1 can cream of chicken soup 1 (10 ounce) package frozen peas, rinsed with hot water and drained 1 (3 1/2 ounce) can French-fried  onionsCook noodles in boiling, salted water until tender, drain. Mix noodles lightly with remaining ingredients except French-fried onions. Put into buttered 2-quart casserole. Bake uncovered at 425 degrees F for 15 to 20 minutes. During last 2 minutes of baking, sprinkle onions over top.

We all were served this with the vanilla ice cream that night as dinner. It was delicious! (I have copied the recipe as it was printed and given to us.)THE MOST IMPORTANT PART OF THIS IS THE PASTRY:9 ounces flour 1 egg 1 pinch salt 4 ounces water 1 teaspoon oil Work all ingredients into a pastry together, until it is not sticky any more. Let the pastry reat for 1 hour. In-between you have enough time to prepare the filling.6 1/2 pounds sliced applesWhite breadcrumbs, roasted in butterCrunched nutsSugar to tasteCinnamonLemon juiceRaisinsRum to tasteNow you mix all the ingredients together. So, the pastry had enough reat now and we can start. Roll the pastry very thin (you must be able to read the recipe underneath), top it with the filling and cover it.Heat the oven to 380 to 400 degrees F and put the strudel in for approximately 45 minutes. Put powdered sugar on it and serve it warm on vanilla sauce (or with vanilla ice cream or with whipped cream). Enjoy it!
