Chocolate Candy Bar MeringuesSource: The American Dietetic Association/National Center for Nutrition and DieteticsThese cookies will satisfy any sweet tooth or chocolate craving. They are filled with chocolate candy bar flavor and very little fat, so choose any favorites to  use in this recipe.3 1/2 tablespoons unsweetened cocoa powder2/3 cup confectioners' sugar1/2 tablespoon cornstarch1/2 cup egg whites (about 3 to 4)1/3 cup granulated sugar1 teaspoon vanilla extract4 ounces chocolate-covered candy bars, cut    into small pieces (about 3/4 to 1 cup)Preheat oven to 275 degrees F. Line two baking sheets with aluminum foil.In small bowl, sift together cocoa powder, confectioners sugar, and cornstarch. Set aside.In large bowl, beat egg whites at medium speed until soft peaks are formed. Gradually add sugar and continue beating until whites are stiff and glossy and sugar is dissolved, about 2 to 3 minutes. Add vanilla extract and mix well. Gently fold in cocoa mixture and candy pieces. Drop batter by heaping teaspoons onto prepared baking sheets, and bake in oven about 1 hour or until almost firm to touch.Reverse position of pans after 30 minutes to ensure even baking. (For chewier insides, cook 10 to 15 minutes less.) Cool cookies completely before removing from baking sheet, and store in airtight container.Makes 24 cookies.Nutrition information per cookie (using chocolate-covered candy bars with nougat and caramel center): 49 calories, 0 milligrams cholesterol, 1 gram total fat, 1 gram saturated fat

Candied ApplesKids love these apples with a soft, chewy caramel coating.6 medium-size apples1 cup granulated sugar1/2 cup white corn syrup1 (15 ounce) can sweetened condensed milk1/8 teaspoon salt1 teaspoon vanilla extractInsert wooden skewer in stem end of washed and  thoroughly dried apples. Combine sugar, corn syrup, milk and salt in a heavy, medium-size saucepan. Stir well until sugar is completely blended. Cook slowly, stirring constantly to soft-ball stage (230 degrees F).Remove from heat; stir in vanilla extract; cool slightly.Working quickly, dip apples in caramel, twirling until well coated. The dipping is easier if mixture is kept out of drafts, so that the caramel will not harden before you have finished. Place apples, stem side up, on buttered plate to harden.

Church members drank it from mugs on unusually icy mornings.3 cups stewed tomatoes1 onion, chopped1 large stalk celery with leaves, chopped2 cups beef bouillon2 teaspoons  red wine or balsamic vinegar2 teaspoons granulated sugar1/2 teaspoon black pepper1/2 teaspoon cinnamon1/4 teaspoon allspice1/8 teaspoon maceSalt and cayenne pepper, to tasteCook all ingredients together, covered, in a saucepan until the vegetables are soft, about 20 minutes.Pur?e in a food processor or blender. Reduce to thicken or add bouillon to thin.Serves 4 to 6.

Meanwhile, heat the stock, Ro-Tel, celery and potatoes to a simmer.When sausage is cooked, drain and add to stock along with corn and spices. Simmer until potatoes are done - about 20 minutes.Remove from heat. Stir in cilantro, and let stand about 15 minutes.

Set in a warm placeJust before baking hotcakes, remove 1 cup batter to replenish Starter in crock. To the remaining batter in the bowl, add baking soda, eggs, shortening and sugar. Mix well. Bake cakes the size of silver dollars on a lightly greased, hot griddle. For thinner hotcakes, add more milk.Makes about 30 hotcakes.

My family has mixed tastes when it comes to  biscuits. Both my daughter and I love them no matter what kind of recipe is used. My wife and son, on the other hand, could take them or leave them. However, this morning, EVERYONE gobbled my biscuits right up! Your recipe was DELICIOUS even though I used regular Log Cabin syrup (pure maple syrup is sooo expensive here!). The only change I made in this recipe is I substituted cheap syrup for the good stuff (lol).4 tablespoons unsalted, softened butter1 tablespoon fresh lemon juice3 tablespoons maple syrup (use good quality)1 tablespoon grated lemon zest1 tablespoon confectioners' sugarProcess in a blender or food processor all of the ingredients until smooth. Transfer to a dish and chill. This will store airtight for up to 3 days in the fridge or frozen for 3 months.

Gold-Painted Chocolate Truffles4 1/2 ounces semisweet chocolate, chopped 2 1/2 ounces unsalted butter, softened 1 egg yolk 4 ounces sifted confectioners' sugar 3 ounces heavy cream 1 tablespoon coffee-flavored liqueur 4 ounces semisweet chocolate, choppedPowdered gold  leafMelt 4 1/2 ounces of the semisweet chocolate in a double boiler until just fluid. Using a whisk, incorporate softened butter, then egg yolk, sifted confectioners' sugar and cream into the melted chocolate. Whisk until smooth.Pour chocolate mixture in heart molds or any other molds (an egg poacher works well as a mold), and refrigerate until set, about 3 hours.Melt remaining 4 ounces of chocolate in a double boiler until just fluid.Unmold chocolate truffles and dip them in the melted chocolate, shake off excess chocolate and set on parchment paper. Trim excess chocolate.In a small bowl, combine liqueur and gold dust to achieve a paint-like consistency. Using brushes, decorate hearts with gold "paint" - perhaps a fleur de lis or two, an "I love you," etc. Be creative!

Here's My Heart Fudge1 2/3 cups (10 ounce package) white chips, divided 1 teaspoon almond extract 1/2 cup cocoa or Dutch process cocoa 1/4 cup (1/2 stick) butter or margarine, melted 1 teaspoon vanilla extract 4 1/2 cups granulated sugar 1 (7 ounce) jar Marshmallow Cr?me1  1/2 cups (12 ounce can) evaporated milkFew drops red food color (optional)1 cup candied red cherries, quarteredLine a 13 x 9 x 2-inch pan with foil.Place 1 cup white chips and almond extract in medium bowl.In second medium bowl, stir together cocoa, melted butter and vanilla extract until mixture is smooth; add remaining 2/3 cup white chips (chips do not need to melt).Combine sugar, Marshmallow Cr?me, evaporated milk and 1/4 cup butter in heavy 4-quart saucepan. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil (bubbles can't be stirred down); continue boiling and stirring 5 minutes. Remove from heat. Immediately add half of hot mixture to bowl with white chips only. Pour remainder into cocoa mixture; stir to blend. Beat white chip mixture until chips are completely melted; stir in red food color, if desired, and cherries. Spread evenly in prepared pan.Beat cocoa mixture until chips are melted and mixture thickens slightly. Spread evenly over top of white layer. Cover; refrigerate until firm.Remove from pan; peel off foil. Cut with heart-shaped cookie cutters or cut into squares. Cover; store in refrigerator.Makes about 8 dozen squares.NOTE: For best results, do not double this recipe.

Cherry-Chocolate HeartSource: Cherry Marketing Institute8 to 10 servings1 (15 ounce) package refrigerated pie crusts (two 9-inch crusts) 8 ounces cream cheese, softened 1 cup confectioners' sugar 1 teaspoon almond extract 1/2 cup heavy cream 2/3 cup hot fudge topping 1 (21  ounce) can cherry pie fillingAllow both crust pouches to stand at room temperature 15 to 20 minutes. Remove one crust from pouch; unfold. Press out fold lines.Sprinkle 1 teaspoon flour over crust. Turn crust, floured side down, on ungreased cookie sheet. Using a paper pattern as a guide, cut crust into a heart shape. Generously prick heart crust with fork. Bake in a preheated 450 degree F oven for 9 to 11 minutes, or until light brown. Let cool. Repeat with the remaining crust.Combine cream cheese, confectioners' sugar and almond extract in a small bowl; beat with an electric mixer on medium speed 3 to 4 minutes, or until smooth. Add heavy cream; beat until thick.To assemble, place one heart-shaped pie crust on a serving plate; spread with 1/3 cup hot fudge. Carefully spread half of the cream cheese mixture over hot fudge. Spoon 2/3 of the cherry pie filling over cream cheese. Spread second crust with remaining hot fudge and place over filling. Carefully spread with remaining cream cheese mixture. Spoon remaining cherry pie filling about 1 inch from edge. Refrigerate until serving time.Store any leftovers in refrigerator.

It was easy and very flavorful! You can't taste the sweet potato, but it gives the  sauce a smooth rich texture and attractive golden color (not to mention the added beta-carotene)!1 large sweet potato, unpeeled, pierced 2 or 3 times 1 cup water 3 (15 ounce) cans black-eyed peas, divided 1 tablespoon fresh lemon juice 2 teaspoons butter or vegetable oil 1 medium onion, chopped (1 cup) 2 cloves garlic, minced 2  to 3 teaspoons curry powder (to taste) 1 teaspoon ground cumin 1 teaspoon chili powder 1 cup diced tomatoes (fresh or canned) 4 tablespoons snipped fresh cilantro, dividedCooked riceMicrowave the sweet potato until tender, about 7 or 8 minutes. (You can start Step 2 while the potato cooks). Peel the baked sweet potato, cut in large chunks and place in a blender or food processor with 1 can of the black eyed peas, and the lemon juice; blend or process until very smooth. Set aside.In a large skillet, heat the oil. Saut? the onion in the oil until tender. Stir in the garlic, curry powder, cumin, and chili powder; cook and stir for another minute or two. Stir in the potato mixture, the remaining 2 cans of peas, the tomato, and 2 tablespoons of the cilantro. Cook until the tomato is done, stirring occasionally to prevent sticking.Just before serving, stir in the remaining 2 tablespoons of cilantro. Serve hot over cooked rice.

Festive Black-Eyed PeasThis is delicious served over rice with garlic bread.1 pound dried black-eyed peas, soaked overnight3 cups water or enough to cover peas1 pound link sausage or your favorite sausage1 small onion, chopped3 tablespoons brown sugar1 tablespoon prepared  mustard1 teaspoon salt8 ounces prepared barbecue sauceCook peas in water until just tender. Drain and retain 1/2 the liquid. Brown sausage and onions together. Drain. Place peas in a 3-quart casserole. Add sausage and onions. Stir in liquid, brown sugar, mustard, salt and barbecue sauce. Bake for 1 1/2 hours in 200 degree F oven.

Crush 2 cups corn flakes, add 2 tablespoons melted butter, and  sprinkle over the top. Bake in a 9 x 13-inch pan at 350 degrees F for 30 minutes.
