Cut in butter or margarine with fork or pastry cutter. Stir in cold water with fork. Form into ball. On lightly floured surface, roll out into a 13 x 9-inch rectangle.

Ruthee's Irish Lace Cookies1/2 cup unsalted butter, plus extra 4 tablespoons flour, plus extra 1 cup firmly packed brown sugar 1 tablespoon vanilla extract 2 tablespoons milk 1 cup old-fashioned rolled oatsPreheat oven to 350 degrees F. Grease and flour 2 baking  sheets.Cream butter and sugar. Add vanilla extract. Stir in flour, milk, and rolled oats. Drop batter by tablespoon onto prepared baking sheets, allowing room for cookies to spread to about 3 inches in diameter. Each baking sheet will hold about 6 cookies.Bake until cookies flatten and look dry (10 minutes). Let cookies cool for 4 to 5 minutes on baking sheets. Lift from baking sheet with a metal spatula and cool completely.Makes 2 dozen cookies.Per serving: 89 Calories; 4g Fat (43% calories from fat); 1g Protein; 12g Carbohydrate; 11mg Cholesterol; 5mg SodiumNOTES : Inexpensive rolled oats take the place of chopped pecans in this crisp, elegant cookie. Ploughman's Soup (England)3 tablespoons butter2 medium onions, peeled and chopped1/4 cup whole wheat flour2 cups chicken stock1 cup light ale (do not substitute beer)Dash or two of Worcestershire sauce1 1/2 cups crumbled Cheshire cheeseSalt and pepper, to tasteVidalia onion  rings or slices of scallion (for garnish)Melt the butter in a large, heavy pan. Gently saut? the onion until golden. Stir in the flour and cook for 1 minute. Remove from the heat, then gradually whisk in the stock and ale. Return to the heat and bring to a boil. Simmer 5 minutes or until thickened. Stir in the Worcestershire sauce.Reserve 1/4 cup of the cheese. Stir in the remaining cheese, a bit at a time (keeping the heat low), until the cheese is all melted. Season with salt and pepper. Garnish each bowl with the reserved cheese and the onions.

Fedup2here's GumboPosted by CookinMom at recipegoldmine.com 7/1/01 10:06:46 pmSource: Submitted by Princess FedUp2Here - ya-ya.com(feeds 4 Cajuns or 6 Yankees)1/2 cup flour1/2 cup vegetable/saffola oil (that's the roux)1/2 chopped onion1/2 chopped green bell pepperAs much  garlic as you can standWorcestershire sauceSaltPepperGreen onion tops (4 or 5, chopped)Smoked sausage, sliced into circlesVarious chicken parts - about 5 or 6 thighs is goodIn a small saucepan warm the oil on medium heat, pour in the flour and stir, stir, stir till it's dark brown (like mahogany) That's the roux.While that's goin', in a large pan brown the sausage until it's good and juicy in there - let the sausage stick a little - it'll add more flavor.Next, add your chicken parts - and a little salt/pepper to taste - brown that too. When the roux is the right color, add the onion, bell pepper and garlic - saut? till wilted.Add the whole mess to the pot of browned meat, add enough water to cover all the meat - and the Worcestershire - 1 tablespoon or 3 good shakes! Stir it up until everything is mixed well - no lumps from the roux - it should be really soupy/watery. If its not dark enough, add a little kitchen bouquet to darken it. Bring it to a boil. lower to simmer, cover and cook for about 40 minutes. Add green onion tops, cover and cook about 10 minutes.Serve over rice in a bowl, like soup - not like gravy!!! My mama used to make potato salad with it - but that's a lot of starch for one meal, so you could just make a green salad - this is a heavy meal, so you don't need a lotta sides....Bon Appetite!!!

Set aside. In another mixing bowl combine the peaches and apricot preserves. Spread a thick layer of the cream cheese mixture on one half of the tortilla. Top with peaches. Fold over tortilla. Repeat process with remaining ingredients.Place quesadilla on a heated and lightly buttered flat grill or saut? pan. Cook until golden, approximately 2 minutes per side. Serve.

Pot Roast Po' BoysSource: Frank Davis, New Orleans Channel1/4 cup vegetable oil or margarine 1 (4- to 5-pound) boneless chuck roast3 teaspoons salt and black pepper mixture 2 teaspoons Frank Davis Beef Seasoning 1 can Campbell's Cream of Mushroom Soup 1 can Swanson's Low  Sodium Chicken Broth 1 teaspoon Kitchen Bouquet 2 tablespoons Italian flat leaf parsley, minced 2 loaves New Orleans French bread 2 cups shredded lettuce 3 tomatoes, thinly sliced1/2 cup Hellmann's or Blue Plate Mayonnaise1/4 cup dill pickle slices1/2 cup shredded Cheddar cheeseThis is quite possibly the ultimate in recipe simplicity. Basically you heat the Dutch oven, you season and brown the meat, you pour the soup mixture over the top, and you slow roast the roast in the oven until it's ready to fall apart. Sounds easy, huh. Here's how it's done step by step:1. Take a 5-quart heavy Dutch oven, place it on the stove over medium-high heat, and drop into it about a quarter-cup of either vegetable oil or real margarine. (You want to avoid using the vegetable spreads-they contain a lot of water and air. Make sure the label says "margarine.")2. While the oil is coming up to heat, sprinkle the beef thoroughly with both the salt and black pepper mixture (2:1 ratio, salt to pepper) and the beef seasoning. When the meat is completely coated, rub the seasonings in well with your hands. Then, using a couple of meat forks, ease the roast down into the Dutch oven and brown it uniformly on all sides until it turns nice and toasty. Take your time and do is right-it's what seals the pores of the meat and keeps the juices locked inside.3. When the roast is seared all over, remove it from the Dutch oven temporarily and set it on a platter. Then in a large bowl, whisk together until fully blended the mushroom soup and the chicken broth. When completely combined, pour it into the Dutch oven (now set to medium heat), take a wooden spoon, and deglaze the pot (being sure to scrape up all the bit of browned beef that may have stuck to the bottom).4. At this point, bring to gravy mixture to a gentle bubble. Then ease the chuck roast back into the pot, baste it thoroughly with the gravy, put the lid on, slide the pot into a preheated 350 degree F oven, and bake the meat for about 2 1/2 to 3 hours until ultra-tender. The remainder of this recipe develops in the oven-do not open the oven, do not lift the lid, do not peek in the pot, do not stir?just leave it alone!5. Finally, when you're ready to eat, warm the po' boy bread, slice it lengthwise, slather it down with mayonnaise, layer the shredded lettuce, tomato slices, and pickle chips on one half of the bread, then pile on the thinly sliced roast chuck on the other half! It should be sliced against the grain for best texture.6. All that's left now is to ladle on a generous serving of pot gravy over the beef, bring both halves of the French bread together, and cut them into sandwich-size portions. Serve alongside a frosty root beer and a stack of crunchy potato chips.Chef's Notes: To make your po' boy the epitome of New Orleans dining, you might also want to splatter on a light sprinkling of shredded cheddar cheese between the two French bread halves.

King David's Chocolate-Covered Coconut Macaroons3 1/2 cups unsweetened shredded coconut 1/4 cup matzo cake meal 1 1/4 cups granulated sugar, divided2 large eggs, plus 1 egg white 1/2 cup (4 ounces) imported bittersweet chocolate 1/4 cup waterCover 2 baking sheets with  parchment paper.In bowl, mix together coconut, matzo cake meal and 1 cup of the sugar. Add eggs and extra egg white and mix with fingers until well blended. Gently shape about 2 tablespoons dough into a pyramid and set on prepared baking sheet. Repeat with remaining dough, leaving about 2 inches in between cookies. Bake at 325 degrees F for about 25 minutes or until golden on top. Cool completely.In saucepan, melt chocolate with the water and remaining 1/4 cup sugar. Bring to boil, then simmer slowly for a few minutes until mixture starts to thicken. Cool slightly. Holding each macaroon with 2 fingers, dip half the cookie into the chocolate so that it is half black and half white. Allow to dry few seconds tilted over a dish, then place on wax paper. Repeat with remaining cookies. Cool completely.Makes 16 macaroons.Per serving: 186 calories; 8 g fat (4.9 g saturated fat; 39 percent calories from fat); 29 g carbohydrates; 27 mg cholesterol; 15 mg sodium; 2.1 g protein; 1 g fiber

Add onions and pork and saut? until onions are soft. Add ham, garlic, thyme and parsley and saut? 5 minutes. Add sausage and cook until browned. Stir in stock and bring to boil. Add rice, bay leaf and cayenne. Return to boil and cover. Simmer over very low heat 30 to 45 minutes, checking after 30 minutes to see if all liquid has been absorbed and rice is tender. If necessary, add 1/4 to 1/2 cup more water if liquid boils away before rice is cooked.Serves 8.

Leprechaun Cookies 'n' Mint Cake1 (7 ounce) Hershey's Cookies 'n' Mint Chocolate bar, broken into piecesFew drops green food color (optional) 1 (18.25 ounce) box yellow cake mix (with pudding in the mix)Cookies 'n' Mint Glaze (recipe follows - optional)Heat oven to 350  degrees F. Grease and flour 12-cup fluted tube pan.Using food processor, chop candy bar pieces very finely; set aside in small bowl.Prepare cake mix batter as directed on package, using water, vegetable oil and whole eggs. In small bowl, reserve 1 1/2 cups batter; stir into reserved chopped candy bar.Into remaining vanilla batter, stir in food color, if desired. Pour into prepared pan. Drop chocolate batter by spoonfuls into center of batter, about 1-inch in from each side of tube.Bake 35 to 40 minutes or until wooden pick inserted comes out clean. Cool 10 minutes; remove from pan, inverting onto wire rack. Cool completely. Top with Cookies 'n' Mint Glaze, if desired.Cookies 'n' Mint Glazen small microwave-safe bowl, unwrap and break 1 (7 ounce) Hershey's Cookies 'n' Mint Chocolate Bar into pieces; add 1 teaspoon shortening (not butter, margarine or oil). Place in oven and bake at 350 degrees F for 30 to 35 minutes or until wooden pick inserted into the center comes out clean.Cut into squares and serve while still warm!
