However, use granulated sugar if you prefer.Filling1 pint whipping or heavy cream1 (4 ounce) box chocolate mousse mixDark Chocolate Glaze1/2 cup heavy or whipping cream1 cup (about 6 ounces) chopped bittersweet chocolateCake: In a large mixing bowl, beat together the sugar, butter, salt and flavorings until fluffy. Beat in the oil, then the eggs, one at a time, beating till the mixture is very fluffy.In a separate bowl, whisk together the flour, Instant ClearJel? and baking powder. Add the dry ingredients to the butter and egg mixture alternately with the milk, beating until well combined, about 2 minutes.Lightly grease and flour both halves of the filled cake set, and divide the batter between them. (You may also prepare this cake in two regular 9 x 2-inch round cake pans.) Bake the cake in a preheated 350 degree F oven for 40 to 45 minutes, until the edges have started to pull away from the sides of the pan. Cool the cake for 15 minutes before removing it from the pans.Filling: Follow the directions on the package to prepare the mousse. Divide the mousse between the two halves of the cake, then invert the top half over the bottom half (you're forming a tunnel for the filling here).Glaze: In a small bowl in the microwave, or a small saucepan set over low heat, prepare the glaze by melting together the cream and chocolate. Drizzle it over the cake.

Turtle Brownie Ice Cream CakeShared with Recipe Goldmine by Darrel ChildressI love to cook and developed this recipe for my wife for her birthday because she loves chocolate so much. This recipe has all of her favorite ingredients (chocolate, nuts, hot fudge, ice cream and  caramel).1 box turtle brownie mix 1/2 gallon ice cream of choice (I prefer Kroger brand "Death by Chocolate") 1 jar hot fudge topping, dividedNut toppingSpray a 10-inch springform pan with cooking spray.Mix turtle brownie mix according to directions on box. Pour into prepared pan and bake at recommended temperature on box. Remove from oven 5 to 10 minutes before the recommended time on the box so that the brownie is still gooey. Let cool completely.Remove ice cream from freezer and let it soften about 5 minutes. While it is softening, spread 1/2 of the hot fudge topping on top of the brownie and sprinkle with some of the nut topping. Scoop all of the ice cream on top of the brownie, spreading evenly with a knife or spatula. Freeze in freezer until ready to eat. The remaining hot fudge can then be heated in the microwave and dribbled on top of the cake before serving.

Banana Pudding Bundt CakeCake1 (18.25 ounce) box yellow cake mix1 (3 ounce) box instant banana pudding mix 4 eggs 1 cup water 1/4 cup vegetable oil 3/4 cup mashed bananaGlaze2 cups confectioners' sugar 2 tablespoons milk 1 teaspoon vanilla extract 1/2 cup walnuts, finely  choppedPreheat oven to 350 degrees F. Grease and flour a Bundt pan and set aside.In large bowl combine cake mix, pudding mix, eggs, water, vegetable oil and banana. Beat with electric mixer for 2 minutes. Pour into prepared Bundt pan. Bake for 50 to 55 minutes or until cake tests done. Cool cake on a wire rack for 15 minutes. Remove cake and continue to cool on rack.To make glaze: Beat together confectioners' sugar, milk and vanilla extract in a bowl until smooth and of a drizzling consistency. When cake is cooled, drizzle icing over cake. Sprinkle chopped nuts over icing, if desired.

Apple Spice Cake Trifle1 (18.25 ounce) box spice cake mix1 1/4 cups cinnamon applesauce3 eggs1/3 cup vegetable oil1 (21 ounce) can apple pie filling1 tablespoon butter7 teaspoons ground cinnamon, divided3 cups cold milk1 large box instant vanilla pudding mix1 envelope  whipped topping mix1 (12 ounce) carton frozen whipped topping, thawed1/2 cup chopped walnuts1/4 cup English toffee bits or almond brickle chipsIn a mixing bowl, combine dry cake mix, applesauce, eggs and oil; beat on medium speed of electric mixer for 2 minutes. Pour into a greased 13 x 9-inch baking pan. Bake at 350 degrees F for 35 to 40 minutes or until a wooden pick inserted near the center comes out clean. Cool on a wire rack.In a saucepan, cook pie filling, butter and 1 teaspoon cinnamon until butter is melted; stir until well blended. Cool.In a mixing bowl, combine milk, pudding mix, topping mix and remaining cinnamon. Beat on high until thickened, about 5 minutes. Let stand 5 minutes.Spread a third of the topping in a 6-quart clear glass bowl.Cut cake into cubes; place half over topping. Top with half of the fruit mixture, walnuts and pudding mixture. Repeat layers, ending with remaining topping mixture. Sprinkle with toffee bits. Cover and chill for at least 2 hours.Yields 20 to 24 servings.

They really liked it, so I thought I would post the recipe. This recipe  was easy to make and basically used what I had leftover in my refrigerator and pantry. Hope you enjoy this as much as we did.3 cups all-purpose flour1 teaspoon baking powder3 cups granulated sugar1/2 teaspoon salt1 1/2 cups margarine (3 sticks), softened1/2 cup Crisco shortening5 eggs (room temperature)1 cup whipping cream1 tablespoon vanilla extract2 tablespoons brandy1/4 cup freshly squeezed lemon juice4 teaspoons lemon zestPreheat oven to 325 degrees F.Sift flour, baking powder and salt together. Lightly mix with spoon or spatula and set aside.Next, cream sugar, margarine and shortening until fluffy. Add eggs one at a time, beating well after each addition. After eggs have been added, take the dry mixture and add about 1/4 of it to the cake batter. Beat well. After this, add about 1/3 cup whipping cream. Continue to alternate with whipping cream and flour mixture until batter is well mixed.Please note that, like the orange walnut pound cake recipe I posted earlier this month, after the second or third addition of flour the cake batter will become viscous and a little difficult to work with. By the last addition you will probably have to mix by hand unless you have a heavy-duty mixer. Rest assured that this is perfectly normal and that everything will turn out just fine. Now, you can add the vanilla and brandy, lemon zest and lemon juice. Stir all of these by hand. Pour batter into greased and floured standard Bundt pan and bake for about 1 hour and 15 minutes. Do not overbake. I watched my cake like a hawk starting at 1:10 minutes into the baking cycle because I HATE dry over-baked cakes. Incidentally, my cake was very creamy with a couple of small penny to quarter-size spots in cake that would make people think cake was underdone if the whole inside of cake was like that. For those of you who often make pound cakes, you'll know exactly what I'm talking about. I love that kind of texture in a pound cake - mmm, mmm, mmm!!Lastly, if you want a glaze for the cake, mix 1/2 cup lemon juice and two cups powdered sugar together. Pour glaze over cake after it has cooled for 15 minutes or so and been turned onto cooling rack or cake plate. For your information, my wife didn't think the cake needed a glaze. One of my American student guests, who is from the South and does not like bland food, also thought it was fine without the glaze. I was going to glaze half the cake, but was overruled (lol)! Bye for now.

Marzipan Cake with Raspberry Sauce1 (12 ounce) package frozen raspberries 3/4 cup granulated sugar 1/2 cup unsalted butter 8 ounces almond paste 3 eggs 1 tablespoon Kirsch (cherry liqueur)1/4 cup all-purpose flour 1/3 teaspoon baking powder 1/4 teaspoon almond  extractPreheat oven to 350 degrees F. Grease one 8-inch round pan with butter and sprinkle with flour.Combine sugar, butter and almond paste in a medium bowl; blend well. Add eggs, liqueur, flavoring. Add flour and baking powder, and blend just to thoroughly mix ingredients.Bake 40 to 50 minutes until a wooden pick comes out clean. Cool, then turn out onto a plate. Sift confectioners' sugar over the top.Raspberry SauceRub raspberries through a sieve until all juice is extracted. Put 2 or more teaspoons of juice on a dessert plate; serve cake on top of juice.

Reserve 1 cup for top. Melt butter and mix with rest of cookies. Press into 9 x 13-inch pan. Put in freezer for 5 minutes. Blend 1/2 of the whipped topping, all of the cream cheese and confectioners' sugar. Spread over crust and place cake back in freezer.Prepare instant pudding with the milk according to package directions then spread over top of cake. Spread the remaining whipped topping on top of the pudding then sprinkle with the remaining cookies. Keep cake refrigerated.

Sweet Potato Layer CakeThis is a Southern classic.1 1/2 cups vegetable oil2 cups granulated sugar4 eggs, separated1 1/2 cups finely shredded uncooked sweet potato (about 1 medium)1/4 cup hot water1 teaspoon vanilla extract2 1/2 cups cake flour3 teaspoons baking powder1  teaspoon ground cinnamon1 teaspoon ground nutmeg1/4 teaspoon salt1 cup chopped pecansIn a mixing bowl, beat oil and sugar. Add egg yolks, one at a time, beating well after each addition. Add sweet potato, water and vanilla extract; mix well.In a small mixing bowl, beat egg whites until stiff; fold into the sweet potato mixture.Combine flour, baking powder, cinnamon, nutmeg and salt; add to potato mixture. Stir in pecans. Pour into three greased 9-inch round cake pans. Bake at 350 degrees F for 22 to 27 minutes or until a wooden pick inserted near the center comes out clean. Cool for 10 minutes before removing to wire racks.Frosting1/2 cup butter1 1/3 cups granulated sugar2 (5 ounce) cans evaporated milk4 egg yolks, beaten2 2/3 cups flaked coconut1 cup chopped pecans2 teaspoons vanilla extractMelt the butter in a saucepan; whisk in sugar, milk and egg yolks until smooth. Cook and stir over medium heat for 10 to 12 minutes or until thickened and bubbly. Remove from the heat; stir in the coconut, pecans and vanilla extract. Cool slightly. Place one cake layer on a serving plate; spread with a third of the frosting. Repeat layers.

Spoon mixture into 10 (2-inch) paper baking cups; sprinkle tops with additional 2 tablespoons chopped nuts, dividing peanuts evenly among cups. If you like you can halve the white chips and add the difference with butterscotch chips.1 bag milk or semisweet chocolate  chips1 bag white chocolate chips1/3 cup peanut butter, smooth or chunky, your choice1 1/2 to 2 cups Rice Krispies?Place chips and peanut butter in a large bowl and microwave for 1 minute, stirring until mixture is melted and smooth approximately 1 minute.Stir Rice Krispies into bowl and stir well. Spread mixture onto a cookie sheet lined with wax or parchment paper. Let cool and cut into squares.

Cranberry Rum SauceYield: 6 cups1 1/2 cups granulated sugar1 1/2 cups water1 (8-inch) cinnamon stick, broken6 whole cloves1/8 teaspoon mace8 cups cranberries4 medium apples, peeled, cored and diced1/2 cup golden rumIn a non-reactive Dutch oven, combine sugar and water. Tie  cinnamon pieces and cloves in a cheesecloth bag; add to pot along with mace. Bring to a boil, reduce heat and simmer until sugar dissolves. Add cranberries and apples. Simmer gently 5 minutes, stirring frequently, until cranberry skins start to break.Add rum and simmer 10 minutes. The mixture should be thick but cranberries should retain some of their shape. Remove spice bag. Ladle sauce into hot sterilized jars. Wipe jar rims thoroughly. Seal. Process for 10 minutes in a boiling water bath.Sauce may also be frozen for up to 1 month without processing.

Boil for 1 minute. Add remaining juice and pectin and return to a boil. Boil for 1 minute. Add sugar and bring to a full rolling boil. Boil for 1 1/2 minutes. Pour up in jars, seal, and process for 10 minutes in a boiling water bath.Yield: 5 cupsIf you like maraschino cherries, you'll love this super easy recipe. Am going to plant cherry trees so I'll have my own juice, but until then . . . . . . .

Kumquat Chutney Make up a batch of this spicy condiment and keep it on hand to liven up your table. It goes well with chicken, pork, lamb, and curry.6 navel oranges12 fresh kumquats or 1 (10 ounce) jar preserved kumquats1 red bell pepper, seeded and chopped1 green bell  pepper, seeded and chopped1 onion, chopped1 cup raisins2 cups cider vinegar2 cups packed brown sugar2 cinnamon sticks6 whole cloves2 tablespoons finely chopped fresh ginger1/2 teaspoon cayenne pepper, or to tasteSalt and freshly-ground pepper, to tasteCut the unpeeled oranges into 1/4-inch slices, and cut the slices into 6 or 8 pieces. Cut the kumquats into 1/4-inch slices. Combine all the ingredients in a large saucepan and bring to a boil over moderate heat, stirring frequently. Reduce the heat and simmer uncovered for 1 hour, stirring occasionally.Ladle into clean jars and seal. Will keep refrigerated for up to 4 weeks. Makes about 5 cups.

(I think it was form Good Housekeeping, but that was  before I joined this great site, and forgot to copy the source.) You can probably also try BLT's with Shellbob's recipe.1 (8 ounce) package sliced bacon1 large egg white1/4 teaspoon salt1/2 cup cornmeal1/2 teaspoon coarsely ground black pepper1 pound green tomatoes (3 medium), cut in 1/2-inch slices1/4 cup low-fat mayonnaise dressing1/4 cup low-fat plain yogurt2 tablespoons chopped fresh chives4 green-leaf lettuce leaves8 slices firm whole-grain or white bread, toastedCook bacon. Drain on paper towels.Meanwhile, in pie pan, beat egg white and salt. In another pie pan, combine cornmeal and 1/4 teaspoon pepper. Dip tomato slices in egg-whites to coat both sides, then dip in cornmeal to coat both sides well. Place on waxed paper.In bacon drippings in skillet, cook tomato, a few at a time, over medium-high heat until golden brown and heated through, about 3 minutes. Drain.In small bowl, combine mayonnaise, yogurt, chives, and 1/4 teaspoon pepper. Spread on toast. Arrange lettuce, tomatoes, and bacon between toast slices.
