Rocky Road Pie1 (18.25 ounce) box Betty Crocker SuperMoist chocolate fudge cake mix 2/3 cup water 3 tablespoons vegetable oil 2 eggs 1 3/4 cups chilled whipping cream 2/3 cup miniature marshmallows 2/3 cup coarsely chopped walnuts 1/2 cup semisweet chocolate  chipsChocolate Glaze1 tablespoon whipping cream 1 teaspoon butter or margarine1 ounce coarsely chopped semisweet chocolatePreheat oven to 350 degrees F. Grease and dust a 9-inch pie plate with sugar.Reserve 1 2/3 cups lightly packed dry cake mix. Beat remaining cake mix, the water, oil and eggs in medium bowl on low speed, scraping bowl constantly, for 30 seconds. Beat on medium speed, scraping bowl frequently, for 2 minutes. Spread in pie plate. Bake until cake springs back when touched lightly in center, 30 to 35 minutes; cool completely.Beat whipping cream and reserved dry cake mix until stiff. Fold in marshmallows, walnuts and chocolate chips. Spread over cooled cake.Prepare Chocolate Glaze. Heat whipping cream, butter or margarine and chocolate over medium heat, stirring frequently, until chocolate is melted and smooth. Immediately drizzle over top. Refrigerate at least 2 hours before serving.Refrigerate any remaining dessert.High Altitude Directions (3500 to 6500 feet): Preheat oven to 375 degrees F. Use 10-inch pie plate. Stir 3 tablespoons Gold Medal all-purpose flour into cake mix (dry). Increase water to 3/4 cup plus 3 tablespoons; decrease oil to 2 tablespoons. Bake 25 to 30 minutes. The spinach flavor is very mild and the color is a healthy green. A good pizza for a Christmas party could  be made from this green crust with a bright red tomato filling. 1 cup fresh spinach, leaves lightly steamed1 cup ricotta cheese1 egg4 1/2 cups all-purpose flour1 teaspoon salt1/4 cup (4 tablespoons) olive oil2 packages dry yeast2 teaspoons light brown sugar3/4 cup warm water Dissolve the yeast in the warm water and stir in the light brown sugar. Set the yeast mixture aside for at least 5 minutes.Meanwhile, put the ricotta cheese and the spinach leaves in a blender and blend at high speed until you have a smooth, bright green mixture. Sift the flour into a bowl with the salt. Make a depression in the center of the flour and add 3 tablespoons of the oil, the egg, the spinach mixture and the yeast mixture. Put flour on the kneading board and place the dough mixture on the flour. Knead the mixture for 8 to 10 minutes until the dough is uniformly mixed and elastic. Add flour as you knead if necessary to keep the dough from becoming too sticky.When the dough is ready, place it in a clean bowl that has been brushed with oil. Brush the top of the dough with oil and place a clean cloth over the bowl. Put the bowl in a warm, draft-free place for 11/2 hours.This recipe will make:2 thin crust pizzas, 12-inches each2 stuffed pizza pockets1 thick crust pizza, 14-inch6 - 6-inch pizzas

Cool completely.Mix cream cheese,  brown sugar and peanut butter until smooth and spread over cooled brownies.Sprinkle chopped peanuts and peanut butter cups on top of the cheese mixture. Before serving, drizzle top of dessert with chocolate syrup. Keep refrigerated. Makes at least 24 bars, but could be cut smaller.

This type of vinegar is aged in wooden barrels for at least 10 years, making it  more expensive than other vinegars.2 medium ripe fresh tomatoes or 4 Roma tomatoes1 medium green pepper1 small zucchini or yellow summer squash, thinly    sliced (1 1/4 cups)1/4 cup thinly sliced red onion2 tablespoons snipped fresh parsley2 tablespoons olive oil2 tablespoons balsamic vinegar or wine vinegar2 tablespoons water1 tablespoon snipped fresh thyme or basil, or    1 teaspoon dried thyme or basil, crushed1 clove garlic, minced1 tablespoon pine nuts, toasted (optional)Cut tomatoes into wedges. Cut green pepper into small squares. In a large bowl combine tomatoes, green pepper, zucchini or summer squash, onion, and parsley.For dressing, in a screw-top jar combine oil, vinegar, water, thyme or basil, and garlic. Cover and shake well. Pour dressing over vegetable mixture. Toss lightly to coat.Let mixture stand at room temperature for 30 to 60 minutes, stirring occasionally. If desired, stir in the pine nuts. Serve with slotted spoon. Makes 6 to 8 side-dish servings.* I add other vegetables to this like broccoli, carrots, radishes, cooked beets, cauliflower, etc. You can also add cooked pasta like bow-ties, small shells, etc.Make-Ahead Tip: Prepare salad. Drain and set aside.Melt butter in a large skillet over medium/high heat. Add garlic and saut? for 1 minute. Stir in artichoke hearts, mushrooms peas and half-and-half. Stir to blend all ingredients and bring to a boil.Add parmesan cheese and mix well. Stir in tortellini until well blended with sauce and heated through.Sprinkle individual portions with parsley.

Stir in cooked and drained tortellini. Reduce heat and add sweet peppers. Simmer for 5 minutes, stirring often.Before serving, stir in half of the basil. Bring to boiling; add fresh or frozen (undrained) rhubarb. Reduce heat; cover and simmer for 5 minutes or until tender.Combine remaining 1/2 cup sugar and the 2 tablespoons flour. Add to rhubarb mixture. Cook and stir until thickened and bubbly. Stir in the 2 tablespoons butter and almonds. Keep hot. Meanwhile, thoroughly stir together the 1 cup flour, 2 tablespoons sugar, baking powder and salt. Cut in the 1/4 cup butter until mixture resembles coarse crumbs.Combine egg and milk; add all at once to dry ingredients, stirring just to moisten. Turn hot rhubarb into a 1 1/2-quart casserole. Quickly spoon biscuit topper in 6 mounds atop rhubarb. Bake at 400 degrees F about 20 minutes or until biscuit mounds are golden.Serve warm with cream or ice cream.Makes 6 servings.

Linda's EnchiladasSource: Linda Kilbride, Maricopa, ArizonaYields: a lot!3 pounds ground beef or 3 pounds cooked chicken or turkey, diced1 large white onion, chopped1 clove garlic 2 teaspoons basil 1 teaspoon comino (cumin)1 teaspoon cilantro 1 package taco seasoning  mix3 (10 ounce) cans Ro-Tel tomatoes3 (15 ounce) cans chili without beans2 pounds shredded Cheddar cheese 36 corn tortillas 4 (10 3/4 ounce) cans cream of mushroom    or cream of chicken soup 1/2 teaspoon black pepper 1/4 teaspoon coriander 1/2 cup olive oilBrown ground beef or chicken in olive oil. Drain off fat. Empty meat into large mixing bowl. Add onions, garlic, basil, cumin, black pepper, coriander, cilantro, taco seasoning mix, tomatoes, chili and soup. Stir all the ingredients together.Put two cups of the meat mixture into a large baking pan and spread it out. Add the corn tortillas (a few at a time). Add more meat mixture and sprinkle with shredded Cheddar cheese; repeat the steps using corn tortillas, meat mixture and cheese. Bake, uncovered, for about 20 to 30 minutes at 400 degrees F. Let cool for 10 to 15 minutes before serving.

This recipe is inspired by his respect for spices and spiciness.2 finger-length pieces Jamaican cinnamon bark10 pimento (allspice) berries10 whole black peppercorns1*4 nutmeg, with mace4 cinnamon leaves4 pimento (allspice) leaves6 red Scotch Bonnet peppers, finely diced3 medium onions, finely diced2 medium carrots, finely diced4 garlic cloves, minced1 teaspoon ketchup1 teaspoon Pickapeppa Sauce2 tablespoons dark rum2 cups can or cider vinegarGrind all the dry ingredients in a mortar or a spice or coffee grinder.Put the red Scotch Bonnets, onions, carrots, and garlic into a small, non-reactive saucepan. Add the ketchup, Pickapeppa, dark rum, vinegar, and spices and bring the mixture to a boil, stirring occasionally.Allow the sauce to cool, then put it into a bottle. It will keep for several months in the refrigerator. Use the sauce sparingly to accompany stews, grilled meats, or whatever you feel could use a bit of Spirit.Yield: 2 cups
