President Reagan's Favorite Homemade ChiliSource: As prepared by White House Executive Chef Henry Haller1/2 cup bacon drippings2 cups chopped onions4 chopped garlic cloves2 pounds coarsely ground beef2 tablespoons chili powder2 cups red wine (optional)1 tablespoon salt1  tablespoon beef base4 cups canned whole tomatoes, chopped1 bay leaf1 tablespoon granulated sugar4 to 6 cups cooked pinto beansUsing a 1 1/2-gallon heavy pot, melt bacon drippings. When hot, saut? onions and garlic cloves. Add ground beef and chili powder. Stir until meat is well browned. Add red wine (optional). Add salt, beef base, tomatoes, bay leaf and sugar. Simmer chili meat, covered, for 20 minutes, stirring often.Add pinto beans to the meat. Simmer chili con carne for 1 hour, covered over low heat, stirring gently from time to time. Test for flavor.Yields 16 servings.

The cake has no nuts (although you can add them), which is excellent for people who are allergic. It can be eaten almost right away.  Self-rising flour is available at bulk-food stores and some supermarkets (substitute 3 cups all-purpose flour, 1 tablespoon baking powder, and 1 teaspoon salt).2 cups chopped dried apricots 2 cups dried cranberries or cherries 2 cups chopped dried pineapple 2 cups chopped pitted prunes 2 cups yellow raisins 2 cups Thompson raisins 1 cup candied orange peel 1 cup chopped dried figs 1 cup rum 1 cup brandy 1 cup port 1 cup Cointreau 1 cup water 2 teaspoons bitters 1 (3-inch) cinnamon stick 1 teaspoon ground cinnamon 1 teaspoon fresh ground nutmeg 1/2 teaspoon ground cloves 1/2 teaspoon ground allspice 1/2 teaspoon salt 2 cups unsalted butter, softened 3 cups Demerara sugar 8 large eggs, beaten 3 cups self-rising flour 2 teaspoons vanilla extractCombine fruit in a large pot. Stir in rum, brandy, port, Cointreau, water and bitters. Add cinnamon stick, cinnamon, nutmeg, cloves, allspice and salt. Bring mixture to a boil, reduce heat and simmer gently for 10 minutes. Remove fruit mixture to large bowl, cover with plastic wrap and let sit for five days, tossing it once a day.Prepare cake pans. This is a large amount of cake and will fill eight gift- sized loaf pans, four 8-inch square pans or any combination of other sizes. Butter pans and line with parchment paper.Preheat oven to 275 degrees F.Beat together butter and sugar until well mixed. Gradually beat in eggs a little at a time, adding some of the flour if the mixture starts to curdle.Stir in remaining flour. Add fruit mixture with liquid to flour and egg mixture. I find it easiest to use your hands to do this. Spoon into prepared pans and smooth the surface. Loosely cover top with a double layer of parchment paper. Bake for about 2 hours for small pans and up to 3 hours for large ones. Test with a wooden pick. It should come out clean although the cake will be quite moist in centre.Cool pans on rack. Unmold and wrap with foil. Leave for a few days before cutting.

Most markets carry (or can order) prepared demi-glace, which you should use for this recipe.In a hot pan, saut? the sliced chicken breast in a small spoon of butter or olive oil. When the chicken is cooked, add the chopped shallots, garlic and sliced mushrooms. Stir in about 1/2 cup Marsala wine and 1/2 cup demi-glace. Let the sauce reduce until it?s nice and creamy by stirring the mixture. Taste it, add salt or pepper, and serve.Yield: Serves 1

Toss lettuce, Parmesan cheese, balsamic vinaigrette and Glazed Pecans.Strain strawberries from glaze and place on top of salad. Top with cracked pepper.Yield: 2 salads

Makes a great burrito filling, too!1 green pepper, chopped 1 onion, chopped 1-2  jalapenos, minced 1-2 cloves of garlic, minced 3 cans black beans (leave starch in one can)3 tomatoes or 2 cans tomatoes, chopped 1 can corn (without sugar), drained Mild chili powder Salt Basmati riceSaute the green pepper, onion, and jalapeno in a big pot over medium heat until the onion is soft, but not browned (no oil). Add the garlic and saute for about a minute or less. Add the black beans, corn and tomatoes. I've never measured how much chili powder or salt I use, just use a lot and to your taste. Bring to a boil and reduce heat to low.At this time, start to boil the water for the rice (Basmati is the best for this dish). It takes 35 minutes for the rice to simmer. When the rice is done, the chili is done (about 45-50 minutes for the chili). You can cook the chili longer if you prefer.

Cookie Monster's Sugar CookiesPosted by GourmetGal at recipegoldmine.comI got this one from a nursery school teacher friend many years ago. It was what she made for her "kids" for rewards! Rightly so! I had posted it at old TSR for someone looking for a soft sugar  cookie that they could ship. This is what I posted.These can be soft OR crisp. The key is to take them out AS SOON AS they start to puff up. For me it is about 8 minutes. You should do one cookie sheet first to test your oven for time. I have been making these for about 20 years and always mailed them to my kids in college cut out in appropriate shapes and decorated for major holidays - Valentine's Day as well as Easter, Halloween and Christmas. I wrapped two cookies at a time in Saran Wrap - backs touching each other so you don't mess up the icing. I packed them in the box with PLASTIC BAGS (from the grocery store!) on the bottom, between layers and tucked in all the corners. Most of the time they would make it without too many broken ones. In my sons' cases, they really didn't care if they were broken or not (Cookie Monster always said "Me LOVES Cookies!" and broke them on the way to his mouth anyway!)3/4 cup butter1 cup granulated sugar2 eggs1 teaspoon vanilla extract2 1/2 cups all-purpose flour1 teaspoon baking powder1 teaspoon saltCream butter and sugar together. Add eggs and vanilla extract and blend. Add remaining ingredients and blend. Chill at least one hour.Roll dough onto flour surfaced and cut out into shapes. Bake on ungreased cookie sheet for 8 - 10 minutes at 350 degrees F.

The leftovers make delicious sandwiches!2 tablespoons butter or margarine3 pounds rump roast, trimmed2 stalks celery, chopped1  large onion, chopped3 cloves garlic, minced1/2 teaspoon dried parsley1/2 tablespoon dried thyme2 cups beef broth20 whole peppercorns1 whole bay leaf1/2 tablespoon salt2 carrots, sliced2 potatoes, peeled and cubed1/2 teaspoon salt1/3 cup flourBrown roast in butter in Dutch oven, then remove meat from Dutch oven.Saut? celery, onion, garlic, parsley and thyme in Dutch oven for 5 minutes, then return meat to Dutch oven.Add the beef broth, peppercorns, bay leaf, and salt to Dutch oven, then bake in 325 degree F oven, covered, for 4 hours, basting every 1/2 hour.Remove roast from Dutch oven.Strain stock into bowl. Discard vegetables.Using 2 forks, shred roast into bite-size pieces.Pour reserved stock over beef in Dutch oven.Add carrots, potatoes, and salt to Dutch oven and bake in 325 degrees F oven for 45 minutes.Drain stock from Dutch oven and add enough beef broth to stock to make 3 cups.Whisk stock and flour together in saucepan and simmer until thick.Pour gravy over meat and vegetables.Serving size: 8

Combine chili powder, cumin and flour in cup. Add with garlic to beef; stir to coat meat. Add oregano.Combine broth and water in bowl. Add 1 1/2 cups broth mixture and pepper to meat. Simmer, partially covered, 1 1/2 hours, stirring. Add remaining broth mixture to meat; simmer, partially covered, 30 minutes or until meat is very tender.Add beans; heat through. Garnish with sour cream and lime.

Dead Man's ChiliYield: 6 to 8 servings.1/4 cup chopped green and/or red bell pepper 1 pound lean beef, coarsely chopped3 cups stewed chopped tomatoes 1 1/2 cups tomato paste 4 tablespoons chili powder 6 whole jalapeno peppers 1 1/2 teaspoons cayenne flakes 1 1/2 teaspoons  salt 4 tablespoon freshly ground cumin, divided1 tablespoon blackstrap molasses 3 medium onions, coarsely chopped 12 ounces beer (not lite) 1 teaspoon Angostura Bitters 4 ounces sour mash whiskey 3 bay leaves 1/4 cup yellow Masa Harina2 ounces tequila 2 1/2 pounds coarsely ground beef chuck 6 cloves garlic, mincedCook meat, 1 clove of garlic and 1 onion together. Mix all other ingredients except 1 tablespoon of cumin together and pour over meat in a large pot. Bring slowly to a boil and stir continuously until boiling. Cook at a boil for 10 minutes and then lower heat to medium-low for 15 minutes, stirring several times.Lower heat again to simmer and cook for 1 1/2 to 2 hours, stirring frequently. Add remaining cumin after cooking for 1 hour. You may make this hotter by slashing the sides of the jalapeno peppers and by adding more of them.Serve over rice with hot cornbread. Great when served over scrambled eggs as well.

She copied it down as it was written.3 pounds coarse ground beef Handful beef suet 4 quarts water 4 teaspoons salt 1 teaspoon paprika 1 teaspoon Accent 6 teaspoons chili powder 3 dashes Tabasco 1/2 bottle catsup 1 soup bowl cooked spaghetti 1 #10 can red beansBrown the beef and suet together in a heavy Dutch oven. Add the water and spices including the Tabasco. Cook for 1 hour.Add the catsup the spaghetti, and the beans and cook 1/2 hour more.

Bake in 2 or 3 (8 x 8 x 2-inch) layers in preheated 350 degree F oven for 35 to 40 minutes.Kentucky Cream Cake Frosting8 ounces cream cheese4 tablespoons margarine1 (1 pound) box powdered sugar1 teaspoon vanilla extractChopped nuts (pecans)Cream the cream cheese, margarine, sugar and vanilla extract. Frost cake with this and sprinkle with chopped nuts.

Deep-Fried Cheesecake1 prepared cheesecake (homemade or bought)30 Oriental spring roll wrappersEgg wash (whisk 1 egg with 1 cup of milk)Vegetable oil (as needed)Cinnamon Sugar (as needed)Cut already-baked cheesecake into uniform pieces approximately 3 x 1-inches in size.  One large cheesecake will produce about 30 slices for deep frying.Lightly moisten each spring roll wrapper with the egg wash. Blot off excess egg wash with paper towel.Place each piece of cheesecake in the middle of a wrapper. Fold top of wrapper down over the cheesecake, and both sides toward the middle. Roll each piece of cheesecake toward you until it is completely rolled up. Give this "egg roll" a gentle squeeze to make sure the dough is sealed completely.Using a deep frying pan, heat at least 3 inches of oil to 365 degrees F. Dip the corner of one "egg roll" in the heated oil. If the oil sizzles, it is ready. If not, heat the oil a little longer. When the oil is ready, gently release "egg rolls" into the oil and allow to brown lightly, approximately 10 seconds.Using tongs, remove the golden-brown "egg rolls" from the oil. Place each "egg roll" in a bowl of cinnamon sugar and coat well. Place deep-fried slices of cheesecake on paper towels to cool slightly before serving.CAUTION: These will be very hot. Allow to cool at least 5 minutes before serving. They can be enjoyed warm or cold.Cinnamon sugar2 cups granulated sugar4 teaspoons ground cinnamonMix well.

Cook and stir until mixture bubbles  and the sugar darkens. Mix a little of the water with the cornstarch. Add this with remaining water to the above mixture. Cook and stir until thick. Chill.Fold whipped cream into caramel mixture. Spread between cake layers.Makes 3 cups.
