Saint Basil's Bread (Vasilopeta)Source: Lior's Kitchen TalkA Greek New Year's bread.The cakes differ in the various regions of Greece: some are a type of bread, others a type of rich yeast cake, others are flat, made of cookie dough. The cakes may differ, but all include  the customary hidden silver coin. It symbolizes good luck to the person who finds the coin in his piece of cake. The head of the family cuts slices in a very precise order. The first piece goes to Saint Basil for the cake is made in his honor. The second piece goes to Christ. The third piece is for the oldest member of the family, and on down to the youngest. The following recipe is the most traditional version.2 cups granulated sugar 3 cups all-purpose flour 6 eggs 2 teaspoons double-acting baking powder 1 cup lukewarm milk 1/2 teaspoon baking soda 1 1/2 tablespoons fresh lemon juice 1/2 cup chopped nuts (walnuts, almonds, or pistachios) 1/4 cup granulated sugarPreheat oven to 350 degrees F.Cream butter and sugar together until light. Add flour and stir until mixture resembles coarse meal. Add eggs, one at a time, beating well after each addition. Stir baking powder into milk and stir into egg mixture.Mix baking soda and lemon juice and stir in. Mix well. Pour into a greased round layer cake pan 10 inches in diameter and 2 inches deep. Randomly throw in a clean coin. Bake for 20 minutes.Sprinkle with nuts and sugar and bake 20 to 30 minutes longer, or until cake tests done. Cool 10 minutes in pan and invert onto serving plate. Serve right side up.

Saint Clement's Cake1/2 cup self-rising flour4 tablespoons butter or margarine4 eggs1/2 cup granulated sugar2 tablespoons Lemon CurdSift flour into a bowl. Melt butter in a small pan. Set aside to cool. Whisk eggs and sugar until very pale and creamy. Fold in flour and  melted butter. Pour into an 8-inch greased cake pan. Bake at 350 degrees F for 30 minutes.Turn out on a rack. Cool. Cut cake into three layers. Sandwich with Lemon Curd. Pour Icing over cake so that top and sides are coated (do not spread). Leave to set. Decorate top of cake with strips of orange and lemon candy slices.Lemon Curd1/2 pound butter or margarine1/2 pound granulated sugar4 eggs, slightly beatenJuice of 2 or 3 lemonsMelt sugar and butter in a double boiler. When warm, stir in eggs and lemon juice. Continue to stir until mixture thickens. Remove from heat and store in a dry jar in the refrigerator.Icing1 1/4 cups confectioners' sugarJuice of 1/2 lemonSlices of orange and lemonCrystallized candiesSift confectioners' sugar. Mix with lemon juice and a little water to make icing stiff enough to coat back of spoon.

Nana's Spinach and Sausage PiePosted by artsycook at recipegoldmine.comThis heavy dish is great for dinner OR brunch, warm OR cold (family recipe).1 pound sweet Italian sausage links, casing removed6 large eggs20 ounces frozen chopped spinach, thawed, squeeze dry or 1  pound fresh salad spinach leaves, stemmed1 pound mozzarella cheese, shredded5 1/2 ounces (1/2 container) ricotta cheese1/8 teaspoon pepper10 to 11 ounces piecrust mix or 2 (9-inch) deep dish pie crustsPreheat oven to 375 degrees F. Crumble sausage in a medium skillet and brown meat over medium heat, breaking up with a spoon. Drain on paper towels.If using fresh spinach, bring a large pot of water to a boil and put spinach in water. Boil 1 minute and drain; squeeze dry.Separate 1 egg. Combine 5 eggs with 1 egg white, sausage, spinach mozzarella, ricotta and pepper and set aside.Prepare pie crust mix if using. Lay 1 pie crust in pie pan and spoon mixture into it. Lay another crust on top and flute with a stand-up edge. Carefully cut a 2-inch circle out of the top crust.Mix egg yolk with 1 tablespoon water and brush on top of pie. (Can decorate with scraps of dough.) Bake for 1 hour, 10 minutes until golden and bubbly. Check crust after 1 hour and put foil on edges to prevent over-browning. Let stand 10 minutes and cut OR chill uncovered until cold; cover and refrigerate until serving cold.

I live in Louisiana and can buy good King Cakes. I've never known anyone to make one because all  bakeries and even grocery stores have good ones. This one is from The Times-Picaynue website, www.nola.com. I'm sure they have others in their archives, if you are interested. King Arthur Flour also sells a King Cake kit by mail. Makes 1 large cake or about 40 servings 2 (1/4 ounce) packages active dry yeast1/3 cup warm water (about 110 degrees F)6 tablespoons margarine (or butter or low-fat spread),     plus 1/2 cup chilled margarine cut into small cubes, divided2 cups granulated sugar, divided3/4 cup milk1 teaspoon saltAbout 6 3/4 cups flour, divided3 eggs, at room temperature and lightly beaten1 tablespoon vegetable oil, plus oil for mixing bowl1/2 cup plus 2 tablespoons light brown sugar, divided1 1/2 tablespoons ground cinnamonYellow, green and purple (or red and blue to make purple) food coloring1/3 cup evaporated milk1 cup confectioners' sugar1 teaspoon vanilla extractKing cake baby or bean to insert in cake, optional Dissolve yeast in warm water; let sit 10 minutes. Meanwhile, melt six tablespoons margarine and one-half cup white sugar in milk over low heat; let cool to lukewarm. In a large bowl, sift salt with six scant cups flour. Make a well in center and add eggs, milk mixture and yeast. With a wooden spoon or your hands, mix ingredients until they form a dough; if batter-like, thicken with one-fourth to one-half cup more flour. Knead dough in bowl 10 to 15 minutes. With a knife, cut lengthwise between rolls to form two ropes. To seal in filling, pinch dough shut along lengthwise edges. With ropes parallel, start at the center and work outward to make one long rope by folding the ropes over one another. Shape rope into roughly an 18-inch x 12-inch oval; tuck one open end inside the other. Carefully transfer oval to a wax-paper-lined cookie sheet, lifting dough with one hand at tucked ends and the other on opposite side of oval; reshape if needed. Cover and let rise until doubled, about one hour. Bake in a 350 degree F oven until golden brown, 15 to 20 minutes, turning pan after 10 minutes.Let cool while making colored sugar and icing. For colored sugar, place one-third cup white sugar in each of three bowls. To one bowl, add three drops or more food coloring to achieve desired color; mix well. Repeat for green and purple sugar. For icing, bring to boil evaporated milk with two tablespoons brown sugar; stir often. Remove from heat. Gradually add confectioners' sugar; mix until smooth and add vanilla extract. Working on a small section at a time, spread icing over part of cake and decorate that part with colored sugars. If using, hide baby or bean in bottom of cake.

Al Copeland's Basic Cajun Jambalaya1 tablespoon unsalted butter2 tablespoons vegetable oil2 medium onions, chopped1 pound pickled pork, diced1 pound smoked ham, diced2 cloves garlic, peeled and minced1/2 teaspoon dried thyme1 tablespoon chopped parsley1 pound smoked  sausage, sliced4 cups beef or chicken stock or hot water2 cups rice2 bay leaves1/2 teaspoon cayenne pepper or to tasteIn large saucepan with lid, melt butter with oil. Add onions and pork and saut? until onions are soft. Add ham, garlic, thyme and parsley and saut? 5 minutes. Add sausage and cook until browned. Stir in stock and bring to boil. Add rice, bay leaf and cayenne. Return to boil and cover. Simmer over very low heat 30 to 45 minutes, checking after 30 minutes to see if all liquid has been absorbed and rice is tender. If necessary, add 1/4 to 1/2 cup more water if liquid boils away before rice is cooked.Serves 8.

See's FudgeIn the West, See's Candy Stores are famous. This is the only recipe which has been made public. The rest are still secret.3 (6 ounce) packages chocolate chips2 cups nuts (any kind)2 teaspoons vanilla extract1 cup butter or margarineLet chocolate chips, nuts,  vanilla extract and butter stand until room temperature in a large bowl (overnight is fine).4 cups granulated sugar20 large marshmallows, cut up1 (13 ounce) can evaporated milkBring sugar and milk to boil in a large saucepan and keep at a rolling boil for 8 minutes. Dump this all at one time over the chocolate mixture. Add marshmallows and stir vigorously by hand until chocolate bits and butter are melted and mixture is smooth. Pour into a 15 x 13-inch cake pan or a 13 x 9-inch pan. Cool and refrigerate for 24 hours before eating.It will keep well in the refrigerator and will last...and last...and last.

Neua Yang (Charcoal Broiled Beef in a Hot/Sweet Sauce ? Thai)Posted by WingsFan91 at recipegoldmine.com 11/15/2001 4:57 pmYang dishes are the Thai equivalent of barbecue food. The most common is undoubtedly kai yang (chicken) where a chicken is split open, beaten flat, and  gripped in a cleft stick to grill over the brazier. This version - neua yang or barbecued beef - has a more assertive sauce to go with the stronger flavor of the beef. It is best accompanied with a bottle of strong beer, especially when eaten as lunch during a break from working in the paddy fields... At dinner a good Italian red wine is I think the best choice... And of course if you don't have a charcoal brazier, or the weather is a shade cooler than here (it's 38?C [100?F] outside as I type this...) then you could just as easily prepare this dish on a griddle or broil it in the oven (but it *does* taste best if it can absorb the flavor of the charcoal smoke). For an evening meal I would suggest serving it with a salad such as the yam polamai (that I will post next), and a soup such as tam kha kai (chicken soup with a coconut milk stock). First prepare a serving platter, lined with lettuce leaves, and decorated with sliced cucumber. Sauce1 tablespoon lime juice 1 tablespoon fish sauce 1 tablespoon dark sweet soy sauce 3 tablespoons shallots (purple onions), sliced very thinly 1/2 tablespoon palm sugar (or honey) 1/2 tablespoon prik phom (powdered dried red chiles) 1 tablespoon sliced spring onion/scallion/green onion, including tops 1 teaspoon bai chi (coriander/cilantro leaf), chopped Combine the ingredients to make the sauce. taste and if required add extra sugar/honey, lime juice and/or prik phom. NOTE: You can substitute saut?ed onion for the shallots if they are unavailable. Also, remember when using prik phom (and sugar) in sauce preparation that the diners can always add more at the table, but they can't remove it if you put too much in! Barbecue half a pound of steak to whatever "doneness" you prefer, then slice into slices an eighth of an inch thick, and then cut the slices into bite sized pieces. Place on the lettuce, and pour the sauce over the steak. Served as a one-plate dinner, this serves one fairly hungry diner, but with the soup and salad should be adequate for four people. Accompany with the usual Thai table condiments (prik phom, sugar, and prik dong [red chiles in vinegar]). Special thanks to - Muoi Khuntilanont.

Thai Lemon Beef1 (1-inch thick) boneless beef top round steak1/3 cup soy sauce1/4 cup lemon juice1/4 cup water2 to 3 teaspoons dried crushed red pepper4 garlic cloves, minced1 tablespoon vegetable oil4 scallions, cut into 2-inch pieces2 carrots, thinly sliced2 teaspoons  cornstarchHot cooked ramen noodles or riceGarnishes: lemon rind strips, fresh basil sprigsCut steak across grain into 1/8-inch thick strips, and place in a medium bowl.Combine soy sauce and next 4 ingredients. Reserve half of mixture. Pour remaining half of mixture over steak. Cover and chill 30 minutes.Drain steak, discarding marinade.Stir-fry half of steak in 1/2 tablespoon hot oil in a large nonstick skillet or wok over medium high heat for 1 minute or until outside of beef is no longer pink. Remove from skillet, and repeat procedure with remaining oil and steak. Remove from skillet.Add scallions and carrot to skillet, and stir-fry 3 minutes or until crisp-tender.Whisk cornstarch into reserved soy sauce mixture; stir into vegetables, and stir-fry until thickened. Add steak, and stir-fry until thoroughly heated. Serve over noodles or rice. Garnish, if desired.Yields 4 servings.

Pork Simmered in Coconut Milk (Vietnamese)1 1/2 pounds boneless pork shoulder, with some fat and skin attached (see notes)2 teaspoons salt2 tablespoons granulated sugar1 tablespoon vegetable oil4 small or 2 large shallots, peeled and thinly sliced1 teaspoon ground black  pepper3 tablespoon fish sauce (see note), plus more to taste5 ounces (about 2/3 cup) canned coconut milk,    shaken, plus more to taste2 tablespoons granulated sugar, plus more to taste6 hardboiled eggs, shelledCut pork into cubes, about 1 1/2 inches each. Combine 2 teaspoons salt with about 2 cups water in a large bowl. Add pork and soak about 20 minutes. Rinse well in cold water and set aside.In a small heavy skillet or saucepan, combine 2 tablespoons sugar and 2 tablespoons water. Stir to dissolve and place over medium to medium-low heat. Bring to a boil and cook, watching carefully, until it is deep brown but not burned. Set aside.In a large pot, saut? shallots in about 1 tablespoon vegetable oil, just until slightly softened. Add pork cubes and pepper and cook for 2 minutes. Add caramel from the skillet (if caramel has hardened, add a little hot water to dissolve it again.) Add fish sauce, coconut milk, 2 tablespoons sugar and 2 cups water. Add the eggs, pushing down into the sauce. Cover and cook over medium-low heat about 1 hour.Remove lid and taste sauce, adding additional sugar, fish sauce or coconut milk if needed. Leaving lid off, cook about 30 minutes. Remove pork and eggs with a slotted spoon and place in a serving bowl. Increase heat to high and boil remaining sauce for several minutes to reduce. Pour over pork and eggs and serve.NOTES: The fat and skin are left on the pork while it cooks, to moisten the meat, and are removed as the dish is eaten. Other cuts from the pork shoulder, such as butt, can be substituted. Fish sauce is available in Asian stores and in some well-stocked supermarkets.Yields 4 to 6 servings.

Taro Balls in Coconut Cream (Bua Loi Phuak) Thailand1 cup cooked taro, mashed2 cups glutinous rice flour1 cup corn flour4 cups coconut milk1 cup palm sugar1/8 teaspoon salt6 to 8 teaspoons waterPut the glutinous rice and flour and the corn flour in a bowl. Add the mashed  taro and knead to a soft dough. Add the mashed taro and knead well.Roll into tiny balls and set aside.Dissolve the palm sugar and salt in the coconut milk over a low heat, stirring constantly. Bring to the boil and add the taro balls. When they are cooked, remove from the heat. Serve hot.Yields 4 servings.
