Combine cookie crumbs and butter; press evenly onto bottom and sides of 9-inch pie plate. Refrigerate.Stir marshmallows and milk in 2-quart saucepan over medium heat until melted and smooth; cool completely. Bean Salad with ShrimpPosted by Don from NJ at recipegoldmine.com 9/25/2001 7:35 amSource: Asbury Park Press1 1/2 cups dried Great Northern or cannellini beans2 quarts water3 teaspoons salt1/3 cup plus 1/2 cup extra-virgin olive oil, plus more for saut?ing and drizzling3 to  4 tablespoons fresh lemon juice or a mild wine vinegar, or to taste1/2 teaspoon freshly ground black pepper, plus pepper to taste1 cup finely chopped red onion1 cup chopped vine-ripened tomatoes4 tablespoons chopped fresh herbs, such as basil, mint or flat-leaf parsley24 large- or medium-size shrimp, peeled and deveined To prepare the beans, pick them over, rinse well, place them in a bowl with water to cover generously and soak overnight. The next day, drain the beans and place them in a sauce pan with the 2 quarts water. Bring to a boil over medium-high heat, reduce the heat to low, cover and simmer until tender but not soft, about 40 to 45 minutes. Add 2 teaspoons of salt during the last 15 minutes of cooking. Remove from heat. You should have about 3 cups of cooked beans. (I prepared the beans ahead of time, drained, then refrigerated them, and warmed them with a little olive oil on the stove top before proceeding with the recipe.) Transfer the warmed beans to a bowl and toss them with the 1/3 cup olive oil, 3 to 4 tablespoons lemon juice or vinegar, 1 teaspoon salt and the 1/2 teaspoon pepper. Let the beans cool and absorb the flavor of the dressing. When cool, add the remaining 1/2 cup olive oil, the onion, tomatoes and 2 tablespoons of the herbs. Mix well, then taste and adjust the seasonings with salt and pepper. You may want to add more lemon juice or vinegar, too. Pour enough olive oil into a saut? pan to form a light film on the bottom and place over high heat. When it is hot, add the shrimp and saut? quickly until pink and cooked through, about 3 minutes. To serve, spoon beans into an attractive serving dish. Arrange the shrimp on the top, sprinkle with a little salt and drizzle with a bit of olive oil or with lemon juice or vinegar and oil. Top with the remaining chopped herbs.Serves 6.

Vinegar Boiled SlawShared with recipegoldmine.com by JeannieI have loved this recipe of my Mom's for 25 plus years.2 teaspoons butter2 eggs3 tablespoons granulated sugar1 teaspoon salt1/8 teaspoon pepper ( hah - I love it so I add more)1 teaspoon dry mustard1/2 cup  vinegar1/4 to 1/2 cup milk1 diced green pepperBeat eggs lightly with sugar.  Add mustard, salt and pepper. Mix lightly. Add vinegar and butter. Cook in a small saucepan over low heat stirring constantly. When it becomes a soft custard, remove from heat. Cool.Add milk and chopped green pepper. Chill until ready to use. Thinly slice green cabbage. Pour dressing over and chill until ready to serve.

Spinach Salad with Honey Mustard DressingPosted by Darlene at recipegoldmine.com 2/4/2002 2:45 pm A favorite of Buzz & Vicki!8 cups fresh spinach coarsely torn or baby spinach5 egg yolks1 tablespoon red wine vinegar 3/4 quart salad oil1 lemon squeeze for juice1  tablespoon boiling water 1/4 cup poppy seeds 1/2 cup Dijon mustard 1 cup yellow mustard 1/2 cup honey 1 teaspoon fresh tarragon chopped1 lemon 1 dash red wine vinegar 1 dash salt to taste1 dash black pepper to tasteMayonnaise: Whip 5 egg yolks with 1 tablespoon red wine vinegar, and the juice of one lemon, until frothy. SLOWLY add the 3/4-quart salad oil and 1 tablespoon boiling water while constantly whipping the mixture. Dressing: Take one quart of the mayonnaise you have made, and stir in the 2 types of mustard, 1/2 to 1 cup honey (adjust to your taste), tarragon, dash red wine vinegar, juice of one lemon, poppy seed, and salt/pepper to taste. Stir until thoroughly blended. Three Cheese ManicottiPosted by bettyboop50 at recipegoldmine.com May 28, 2001These tender manicotti shells are actually crepes, and can be stuffed with a variety of fillings, including creamy chicken or a hearty Bolognese sauce.2 cups ricotta cheese (15 ounces), preferably  fresh1 cup shredded mozzarella (about 6 ounce)2/3 cup coarsely chopped basilSalt1/2 teaspoon freshly ground pepper1 cup all-purpose flour1 cup water4 large eggs, lightly beatenUnsalted butter3 cups tomato sauce, preferably homemade2 tablespoons freshly grated Parmesan cheeseIn a large bowl, combine the ricotta with the mozzarella, basil, 1 teaspoon of salt and the pepper.In a blender, process the flour, water, eggs and 1/2 teaspoon of salt until smooth. Transfer to a bowl.Heat an 8-inch crepe or omelet pan over moderately high heat. Lightly butter the pan and add 2 tablespoons batter; working quickly, swirl the pan to coat it evenly. Cook until the top of the crepe is dry and the bottom is lightly golden about 1 minute. Flip the crepe and cook until the bottom is lightly golden, about 20 seconds longer. Transfer the crepe to a large plate and repeat with the remaining batter to make a total of 16 crepes.Preheat the oven to 375 degrees F. Coat the bottom of a 3-quart baking dish with 1 cup of the tomato sauce. Arrange the crepes on a work surface. Spoon 3 tablespoons of the ricotta filling in a line down the center of each crepe. Loosely roll up the crepes and arrange them, seam side up, side by side in the baking dish. Pour the remaining 2 cups of tomato sauce over the manicotti and sprinkle with the Parmesan cheese. Bake for 15 to 20 minutes, or until the tomato sauce is bubbling and the manicotti are heated through. Serve piping hot. Makes 8 servings.Make Ahead: The unbaked manicotti can be refrigerated overnight. Allow up to 15 minutes longer for baking.

(I usually have to make meatballs in a separate sauce for MY family!!!LOL!!!)2 tablespoons  olive oil1 onion, finely chopped1 celery stalk, finely chopped2 large garlic cloves, crushed1 fresh red chile, seeded and chopped (Since I can't easily    get this ingredient here, I use 1/2-1 teaspoon crushed Italian    pepper, or you can omit it altogether if you want.)1 pound ripe Italian plum tomatoes, peeled and finely chopped2 tablespoons tomato paste2/3 cup red wine1 teaspoon granulated sugar12 ounces dried tortiglioni (or use rigatoni, penne, or ziti)6 ounces spicy salami, rind removed (I sometimes use pepperoni)Salt and freshly ground black pepper2 tablespoons chopped fresh parsley, to garnishGrated Parmesan cheese, to serveTip: Buy the salami in one piece so that you can chop it into large chunks.Heat oil and add onion, celery garlic and chili and cook gently, stirring frequently, for about 10 minutes, until softened. Add tomatoes, tomato paste, wine, sugar, salt and pepper to taste and bring to a boil, stirring occasionally. Lower heat, cover and simmer gently, stirring occasionally, for about 20 minutes. Add a few spoonfuls of water occasionally if the sauce becomes too thick.Meanwhile, cook pasta. Chop the salami into bite-size pieces and add to the sauce. Heat through, then taste for seasoning. Drain pasta and put into large bowl, pour sauce on top and toss to mix. Scatter parsley on top and serve with grated cheese.

Reduce heat to low and simmer 45 minutes. Season to taste with salt and pepper. Spoon sauce over hot spaghetti.

Brazo de Gitano ("Gypsy's Arm" Rolled Sponge Cake)This is a classic Spanish chocolate cake-rum roll.5 eggs, separated1/4 cup granulated sugar1/4 cup flour1/4 cup cocoa powder1 teaspoon vanilla extract4 tablespoons sifted confectioners? sugar1 cup heavy cream,  whipped1 1/4 teaspoons rum extract1 tablespoon superfine sugar*Preheat oven to 350 degrees F. Beat egg yolks and 1/4 cup sugar until thick and smooth. Stir in flour, cocoa and vanilla extract. Blend well. Whip egg whites until stiff, but not dry. Fold into yolk and flour mixture. Butter a 15 x 8-inch baking pan. Line with baking parchment paper or wax paper. Butter well again, and dust lightly with 2 tablespoons of the confectioners' sugar. Pour batter into the pan and spread out evenly. Bake for 15 minutes. Cool for 5 minutes, then turn onto a cloth to cool. After 10 minutes peel paper off. Combine whipped cream, rum and sugar. Adjust to taste. Spread over cake and roll cake like a jellyroll, starting with the long edge. Sprinkle with remaining confectioners' sugar. Serve in slices.* Superfine Sugar: Put desired amount of granulated sugar in a blender and blend at high speed for about 30 seconds.

Top with the other tortilla and brown in a lightly greased skillet. Turn and brown on the other side. Cut into wedges.You can also add fajita chicken. This is the recipe that I use.Fajita ChickenI cannot recall the source.3 pounds boneless, skinless chicken breastVegetable oil2 tablespoons chili powder1/2 teaspoon oregano4 tablespoons fresh squeezed lime juiceSoak chicken in salt water for 1 hour. Pat dry. Brush the chicken with vegetable oil. Make a paste from the chili powder, oregano and lime juice. Rub the paste over the chicken and refrigerate for several hours. Grill. Slice very thin after grilling. Make your fajitas.

Simmer for  approximately 4 hours or until meat separates from bones.Mix stock in which meat was cooked with vinegar, salt, pepper and spices. Bring to the boiling point, and hold for 30 minutes.Strain liquid to remove spices.Place pieces of meat and chopped pickle in a flat dish or stone jar and pour the sour liquid over it. Chill in refrigerator until perfectly cold. Slice and serve.

Heat oil and butter in a large, heavy skillet. Add ground beef and cook, stirring, until browned and crumbly. Add onion and cook until tender but not browned. Stir in herbs and spices. Stir in drained spinach and cook until liquid in spinach has evaporated. Beat eggs; add to meat mixture and cook, stirring, until eggs are set.Makes 4 to 6 servings.

Linda's EnchiladasSource: Linda Kilbride, Maricopa, ArizonaYields: a lot!3 pounds ground beef or 3 pounds cooked chicken or turkey, diced1 large white onion, chopped1 clove garlic 2 teaspoons basil 1 teaspoon comino (cumin)1 teaspoon cilantro 1 package taco seasoning  mix3 (10 ounce) cans Ro-Tel tomatoes3 (15 ounce) cans chili without beans2 pounds shredded Cheddar cheese 36 corn tortillas 4 (10 3/4 ounce) cans cream of mushroom    or cream of chicken soup 1/2 teaspoon black pepper 1/4 teaspoon coriander 1/2 cup olive oilBrown ground beef or chicken in olive oil. Drain off fat. Empty meat into large mixing bowl. Add onions, garlic, basil, cumin, black pepper, coriander, cilantro, taco seasoning mix, tomatoes, chili and soup. Stir all the ingredients together.Put two cups of the meat mixture into a large baking pan and spread it out. Add the corn tortillas (a few at a time). Add more meat mixture and sprinkle with shredded Cheddar cheese; repeat the steps using corn tortillas, meat mixture and cheese. Bake, uncovered, for about 20 to 30 minutes at 400 degrees F. Let cool for 10 to 15 minutes before serving.

I have slightly edited the recipe from my own experience in making the sauce.This is a great taquito sauce. The next best thing  to guacamole!1 medium onion, chopped1 to 6 jalape?os, chopped (depending on    level of heat you like)1 avocado, skinned, seeded and chopped2 cloves garlic, chopped1 medium lime, juiced1 1/2 cups chicken broth1/2 cup cilantro, chopped2 tablespoons vegetable oilSalt/pepper to tasteHeat oil in saucepan over medium heat. Add onions and jalape?os and saut? for about 5 minutes. Add garlic and cook for another 3 minutes. Add chicken stock and bring to a boil, reduce heat and simmer for 10 minutes.Remove from heat and add chopped avocado, lime juice, cilantro and salt and pepper. Use and immersion blender or add in batches to regular blender and blend until smooth.Serve warm over hot taquitos.This sauce also freezes well. It is a little thin but maybe it was just me making it. The taste was still great! Thanks, Tom, if you are out there!
