Lucky Pockets o'GreenServes 6-8.1 (10 ounce) package frozen chopped spinach 1 (1.4 ounce) package dry vegetable soup mix 1 (8 ounce) carton low fat sour cream 1 (3 ounce) package low fat cream cheese 1 (8 ounce) can sliced water chestnuts, chopped 2 green onions, chopped 2  (8 ounce) cans crescent roll dough, divided 3 hard-cooked eggs, choppedPreheat oven to 375 degrees F.Thaw spinach and press to remove moisture. Blend together spinach, soup mix, sour cream, cream cheese, water chestnuts and green onions.On a greased baking sheet, spread out 1 can of crescent roll dough into 4 separate rectangles. Spread spinach mixture on top of rectangles, then sprinkle with chopped eggs and top with remaining 4 rectangles from second can of dough. Cut each rectangle in half and seal all edges with a fork.Bake at 375 degrees F for 20-25 minutes or until golden brown.Serve warm as a vegetable side dish.Nutritional analysis per serving: calories 305, protein 14 g, carbohydrates 39 g, fat 10 g (4 g saturated, 6 g unsaturated), cholesterol 97 mg, calcium 164 mg, iron 3 mg, sodium 866 mg

Lawry's? Beef Enchiladas1 package Lawry's? Enchilada Sauce Mix1 pound ground beef, browned, with fat drained1 teaspoon Lawry's? Seasoned Salt2 1/2 cups grated Monterey jack or mild Cheddar cheese1 (2 1/4 ounce) can sliced ripe olives8 corn tortillasPrepare Lawry's?  Enchilada Sauce Mix according to package directions, using tomato paste and 3 cups water.Combine ground beef, Seasoned Salt, 1 3/4 cup of the cheese and olives. Pour 1/2 cup of the sauce into a 12 x 8-inch baking dish. Dip each tortilla into enchilada sauce. Place about 1/2 cup filling in center of each tortilla. Fold sides over filling; place in dish, seam side down. Pour remaining sauce over enchiladas. Top with reserved cheese. Bake at 350 degrees F for 20 minutes. Sour creamand olives may also be used as garnish.

Basque Sheepherder's BreadTry heating a little olive oil with fresh herbs and dunk chunks of the bread into it.1/2 cup butter1/2 cup granulated sugar1 tablespoon salt3 cups hot water2 packages dry yeast7 to 7 1/2 cups unbleached flourIn a very large bowl combine butter,  sugar, salt and hot water. Stir only until butter is melted. Set aside so ingredients can cool until they are warm. Stir in yeast. Cover and set aside in a warm place until it bubbles, about 10 minutes.Add 5 cups flour and beat vigorously with a large wooden spoon until batter is smooth. Add more flour (about 2 cups) gradually to form a stiff dough. Knead, with long strokes, for about 10 minutes on a floured board. Add only enough flour to prevent sticking. Place dough in a large greased bowl; cover with a damp dish towel, and let rise in a warm place until doubled ?  about 1 1/2 hours.Punch down and knead about 10 minutes. Form a smooth ball. Using a solid shortening, generously grease sides and inside lid of a cast iron Dutch oven. Cut a round of foil and place in the bottom of the Dutch oven. Dust it lightly with flour. Place dough in Dutch oven and cover. Let rise in a warm place until dough pushes up lid.Preheat oven to 375 degrees F. Place Dutch oven with the lid on in the middle of the oven. Bake 12 minutes. Carefully loosen any raw edges with knife, then lift off lid. The lid's circled print should be on top of the loaf. Bake bread, uncovered, for 45 to 50 minutes more or until golden. Cover loosely with foil the last 20 minutes to prevent over-browning. Remove from oven. Loosen loaf from the Dutch oven with a flat table knife, and place on a wire rack to cool.

Beat butter at medium speed with an electric mixer about 2 minutes or until creamy. Gradually add sugars, beating 5 to 7 minutes. Add eggs, one at a time, beating just until yellow disappears. Combine milk, rum and vanilla extract.Combine flour, baking powder, and salt; add to butter mixture alternately with milk mixture, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Fold in pecans. Next, pour batter into a greased and floured 13 cup Bundt pan and bake for one hour and 20 minutes or until a wooden pick inserted in center of cake comes out clean. Cool in pan on a wire rack 10 to 15 minutes; remove cake from pan and let cool completely on wire rack. May drizzle with over lightly with a confectioner's sugar icing, if desired.

Ancho Chile Devil's Food Cake1 1/4 cups cake flour1/2 cup unsweetened cocoa powder3 tablespoons pure ancho chile powder1/8 teaspoon cayenne1 teaspoon baking soda1/4 teaspoon baking powder1/2 teaspoon salt10 tablespoons unsalted butter (at room temperature)1 1/2 cups  granulated sugar3 large eggs (at room temperature)1 teaspoon vanilla extract1/2 cup buttermilk (at room temperature)1/2 cup hot coffeeSet a rack in the middle of the oven and preheat to 350 degrees F. Lightly grease two (9-inch) cake pans and line them with circles of parchment paper or greased wax paper.Sift flour, cocoa, ancho chile powder, cayenne, baking soda, baking powder and salt onto a sheet of wax paper. Sift 2 more times to mix and aerate.Put butter and sugar in the bowl of an electric mixer and beat at high speed for 30 seconds, or until well combined and smooth. Add eggs, one at a time, beating until each is incorporated. Continue beating, scraping down the sides of the bowl if necessary, until light and fluffy, about 5 more minutes. With the mixer on a low setting, or using a rubber spatula, beat or fold in one-third of the flour mixture. beat or fold in vanilla extract, half of the buttermilk and half of the coffee, then another one-third of the flour mixture. Beat or fold in the remaining buttermilk and coffee, then the remaining flour mixture.Spread batter evenly in prepared pans. Bake for 30 minutes or until the centers spring back when lightly pressed. Cool the cake layers in the pans on a wire rack. Invert each cake onto a plate. Trim the tops flat with a serrated knife. Spread one-third of the Ganache over one layer. Flip the other layer on top, and frost the top and sides of the cake with the remaining Ganache.Ganache6 ounces semisweet chocolate, coarsely chopped3/4 cup heavy creamPut chocolate in a small bowl. In a small saucepan, bring cream to a scald over medium heat. Pour the hot cream over the chocolate. Working from the center out, gently stir to melt and blend until smooth. Let the Ganache sit until slightly thickened, about 10 minutes. It should be spreadable, but still pourable. If the Ganache doesn't have a smooth patina, blend in a few drops of cold heavy cream. A matte finish will dry to a mirror shine.

Put in the chopped (large chunks) meat, lower heat to keep the stew simmering, put in the chopped/ diced carrots and parsnips, add herbs, salt and pepper to taste, leave simmer for a while (say 20 minutes).Add the peeled whole potatoes and some stock/ soup mixture or cornflour (cornstarch mixed with cold water) to thicken. Keep the mixture simmering and stir occasionally; after about 1 hourr from start time, taste and check the potatoes.Remember the best stews are left on for a long time, 1 1/2 hours or more.

Saint Basil's Bread (Vasilopeta)Source: Lior's Kitchen TalkA Greek New Year's bread.The cakes differ in the various regions of Greece: some are a type of bread, others a type of rich yeast cake, others are flat, made of cookie dough. The cakes may differ, but all include  the customary hidden silver coin. It symbolizes good luck to the person who finds the coin in his piece of cake. The head of the family cuts slices in a very precise order. The first piece goes to Saint Basil for the cake is made in his honor. The second piece goes to Christ. The third piece is for the oldest member of the family, and on down to the youngest. The following recipe is the most traditional version.2 cups granulated sugar 3 cups all-purpose flour 6 eggs 2 teaspoons double-acting baking powder 1 cup lukewarm milk 1/2 teaspoon baking soda 1 1/2 tablespoons fresh lemon juice 1/2 cup chopped nuts (walnuts, almonds, or pistachios) 1/4 cup granulated sugarPreheat oven to 350 degrees F.Cream butter and sugar together until light. Add flour and stir until mixture resembles coarse meal. Add eggs, one at a time, beating well after each addition. Stir baking powder into milk and stir into egg mixture.Mix baking soda and lemon juice and stir in. Mix well. Pour into a greased round layer cake pan 10 inches in diameter and 2 inches deep. Randomly throw in a clean coin. Bake for 20 minutes.Sprinkle with nuts and sugar and bake 20 to 30 minutes longer, or until cake tests done. Cool 10 minutes in pan and invert onto serving plate. Serve right side up.

Turn off the heat, cover the pot and let it sit for 20 minutes. The chicken should be just cooked through.Shred the chicken breast apart along the grain into pieces about 1/4 inch thick. Combine the vegetables and herbs in large bowl. Add chicken and remaining ingredients, except for the lettuce.Serve with the lettuce leaves at room temperature. 4 appetizer servings.

Add eggs, break in the yolk, then add noodles and fry until noodles turn orange.Add the bean sprouts to the mixture and fry until bean sprouts are cooked (about 1 to 2 minutes).

Thai Pork with Cellophane Noodles3/4 cup cellophane noodles5 tablespoons stock2 tablespoons fermented black beans, rinsed and chopped1 tablespoon mirin (sweet rice vinegar)2 teaspoons cornstarch1 clove garlic1 thin slice ginger root3/4 pound lean pork, sliced paper thin1  cup shredded spinach1/4 cup chopped water chestnuts1/4 cup slivered sweet red pepperIn a medium mixing bowl, cover the noodles with hot water and let them soak for 20 minutes. Drain. Cut into 1-inch pieces with scissors.Combine 2 tablespoons of the stock with the beans, mirin and cornstarch.In a wok or large nonstick frying pan, cook the garlic and ginger in the remaining stock for 1 minute over medium-high heat. Discard the garlic and ginger. Stir-fry the pork and noodles for 3 minutes or until pork is cooked through. Add the spinach, water chestnuts, peppers and bean mixture. Toss to heat through. Serve immediately.Serves 4.

2 Tbls. Mayonnaise 2 teas. Sweet relish 2 teas. Minced onion pn Salt 2 Plain hamburger buns 2 Mrs. Paul's breaded-           Fish portions (square)
                          2 sl American cheese|1. In a small bowl, mix together the mayonnaise, relish, minced onion, 
      and salt and set aside. This is your tartar sauce.
   2. Lightly grill the faces of the buns.
   3. Cook the fish according to the package instructions. You can bake 
      the fish, but your sandwich will taste much more like the original 
      if you fry it in oil.
   4. Divide the tartar sauce and spread it evenly on each of the top buns. 
   5. Place a slice of cheese on each of the bottom buns. 
   6. Place the cooked fish on top of the cheese slice on
      each sandwich, and top off the sandwiches with the top buns.

      Makes two sandwiches.

1 package (a 3/4 ounces) powdered fruit pectin 3/4 cup water 1/2 teaspoon baking soda 1 cup sugar 1 cup light corn syrup 2 teaspoons imitation strawberry extract red food coloring sugar|Combine fruit pectin, water and baking soda in a medium−size pan.  (Note,
mixture will foam).
Combine sugar and corn syrup in large saucepan. Place both saucepans over
high heat. Cook, stirring alternately until foam disappears from fruit
pectin mixture and sugar mixture boils rapidly for 5 minutes.
Pour fruit pectin mixture into boiling sugar mixture in a thin stream until
all pectin is added. Boil, stirring constantly 1 minute longer. Remove pan
from heat. Stir in extract and a few drops of coloring. Immediately pour
mixture into and 8x8x2 inch pan. For fancier shapes spoon mixture into tart
or similar little pans. Allow to stand at room temperature (do NOT
refrigerate) about 3 hours or until candy is cool and firm.
Cut gum drop mixture into fancy shapes with small cutters or into cubes with
a knife dipped in warm water. Roll in granulated sugar.
For green gumdrops: Substitute oil of anise for strawberry extract and green
food coloring for red.
For yellow: Substitute oil of lemon and yellow food coloring
For red: Substitute oil of clove for strawberry extract
Makes about 1 1/4 pound.
