Tavern Soup1/4 cup chopped celery1/4 cup chopped carrots1/4 cup chopped green bell pepper1/4 cup chopped onion5 cups chicken broth2 tablespoons margarine1 teaspoon salt1/4 teaspoon pepper1/3 cup flour3 cups grated sharp Cheddar cheese1 (12 ounce) can beer (at room  temperature)Combine celery, carrots, green pepper and onion in pot. Add broth, margarine, salt and pepper. Cook on low for 5 to 6 hours.Strain mixture and pur?e vegetables. Return to pot and cook on high heat. Dissolve flour in small amount of water and add to broth. Add cheese 1/2 cup at a time, stirring until blended. Pour in beer and cover. Continue cooking on high for 15 to 20 minutes.Makes 4 to 6 servings.

Vichyssoise2 cups cubed raw potatoes1 cup chopped onions2 cups water3 chicken bouillon cubes2 tablespoons butter3/4 cup milk1/4 teaspoon pepper2 tablespoons parsley2 tablespoons scallion tops1/2 cup heavy creamCombine potatoes, onions, water and bouillon cubes in saucepan.  Cook, covered, until just tender, approximately 15 minutes.Do not drain. Pour into blender. Add remaining ingredients except cream. Blend on high for approximately 30 seconds. Pour into bowls and add cream.Chill or serve hot.Yields 6 servings.

Add all other ingredients and cook 45 minutes.Serve with grated cheese, oyster crackers. Garnish with fresh basil leaves.

Cauliflower and Cheese SoupPosted by kdipaolo at recipegoldmine.com 6/12/01 10:47:46 am1 medium cauliflower head, separated florets1 medium onion, chopped1 carrot, chopped1 celery stalk, chopped4 cups chicken stock2 cups light cream1/2 teaspoon Worcestershire sauce1 cup  grated Cheddar cheeseSalt, to tasteFreshly-ground black pepper, to tasteChopped chives, for garnishPut cauliflower, onion, carrot, celery, and chicken stock in crockpot. Cover and cook on LOW for 6 to 8 hours.Puree in blender. Return to crockpot. Blend in cream, Worcestershire and cheese. Add salt and pepper to taste. Stir to mix well. Turn control to HIGH and heat through; garnish servings with chopped chives.This recipe yields 4 to 6 servings.

Sourdough Brownies4 (1 ounce) squares sweet baking chocolate 1/2 cup hot water 1 teaspoon baking soda 1 cup (2 sticks) margarine 2 cups granulated sugar 2 eggs 2 teaspoons vanilla extract1 cup chopped walnuts or pecans 1 1/2 cups all-purpose flour 1/2 teaspoon salt 1 1/2  cups sourdough starterPlace chocolate in small saucepan and add hot water; bring to a boil, stirring. Add baking soda and mix well. Mixture will be foamy. Set aside until lukewarm.In a large bowl, cream margarine and sugar together until fluffy. Add eggs and mix in thoroughly. Add vanilla extract and cooled chocolate mixture and nuts. Gradually add flour that has been sifted with salt. Lastly, add the starter. Beat well after each addition. Grease and flour a 9 x 13-inch pan and pour batter into it. Place pan in a warm spot for 30 minutes.Preheat oven to 350 degrees F. Bake brownie for 35 to 40 minutes.

Sourdough Refrigerator Biscuits1 package yeast 1/2 cup warm water 6 cups all-purpose flour 2 tablespoons granulated sugar 2 tablespoons baking powder 1 teaspoon baking soda 1 teaspoon salt 1 cup shortening 1 cup sourdough starter 2 cups buttermilkAdd 1 package yeast to 1/2  cup warm water and a pinch of sugar. Let stand for 5 minutes.Combine the next 5 ingredients then work shortening into mixture. Add yeast mixture and stir.Combine sourdough starter and buttermilk and mix into the dough to form a sticky ball. Place the container in the refrigerator overnight. The dough is good for 3 or 4 days.Remove as much as needed and carefully roll out on well floured counter. Roll to 1/2-inch thick and cut with floured biscuit cutter. Place on lightly greased baking pan. Bake at 400 degrees F for 15 to 18 minutes.Yield: 4 dozen

Sourdough Rye Bread1 package dry yeast 1 1/2 cups warm water (110 degrees F) 3 cups rye flour 1 cup sourdough starter 1/4 cup granulated sugar 3 tablespoons butter, softened 2 teaspoons caraway seed 2 teaspoons salt 2 to 3 cups all-purpose flour, dividedSoften yeast in warm  water. Blend in rye flour, sourdough starter, sugar, butter, caraway seed and salt. Add 1 cup all-purpose flour. Stir into flour yeast mixture. Add enough remaining flour to make a moderately stiff dough. Turn out onto floured surface and knead 5 to 8 minutes, until smooth, adding more flour, if necessary. Place in a greased bowl, turning once. Cover with a cloth. Set in warm place free from drafts and let rise for 1 1/2 hours or until double in bulk.Punch down and divide in half. Cover and let rise 10 minutes.Shape into 2 loaves. Place in 2 greased loaf pans. Let rise until almost double.Bake at 375 degrees F for 35 to 40 minutes.

Sourdough Scones1/3 cup water 1 3/4 to 2 cups flour 1/3 cup sourdough starter 1/4 cup powdered milk 1 teaspoon honeyVegetable oil for frying 2 packages yeast 1 tablespoon granulated sugar 2 tablespoons butter 1 eggAdd water to yeast. Stir, proof 10 minutes. Add flour, sugar  and sourdough starter. Mix thoroughly. Add butter, milk, egg and honey. Knead dough on slightly floured board. Shape into rectangle and cut into 2-inch triangles. Roll into circles and flatten to 1/2-inch. Allow to rise until tripled in bulk.Heat oil to 350 degrees F. Drop scones into hot oil and fry until golden brown on all sides.Makes 6 to 12 scones.

Add to sourdough starter along with milk, flour, baking powder and salt. Mix well. Spread half of the batter in a greased and floured 9-inch square pan. Sprinkle batter with half of the Streusel mixture. Add remaining batter and sprinkle remaining Streusel over top. Bake at 375 degrees F for 25 to 30 minutes or until done.
