Pour the  papaya puree into a large bowl and chill.At serving time, add the champagne and stir to blend well. Pour into chilled bowls and top each serving with a kiwi slice and a strawberry.

New Orleans Gumbo2 tablespoons shortening2 green onions, diced1 stalk celery, diced1 green bell pepper, diced1 jalape?o pepper (optional)1 tablespoon chopped fine parsley1 quart cut-up okra1/2 can tomato paste1 tomato paste can of water1 (18 ounce) can stewed tomatoes,  chopped1 pound crabmeat1 pound shrimp1 cup diced cooked ham1 cup diced, cooked chicken1 jar oysters (optional)In a 10-inch frying pan melt the shortening. Add the onions, celery and peppers. Cook for 3 minutes. Add parsley and cook for 2 minutes. Add okra, reduce heat and cook for 15 minutes.Pour all frying pan ingredients into a Dutch oven and add tomato paste and water, stirring frequently. Add 4 cups water and the tomatoes and cook for 30 minutes.Add all the meats and cook for 20 to 25 minutes more, stirring frequently. Serve over hot, cooked rice.

Sausage Gumbo1 1/2 pounds smoked country-style link sausage1/4 cup all-purpose flour2 cloves garlic, crushed1 1/2 cups chopped onion1 1/2 cups chopped celery1 cup chopped green bell pepper1 (14 1/2 to 16 ounce) can tomatoes (2 cup)2 cups chicken broth2 teaspoons salt1/8  teaspoon black pepper1/4 teaspoon red pepper1 (10 ounce) package frozen okra1 teaspoon gumbo file6 cups hot cooked ricePlace sausage in large skillet or Dutch oven. Add 1/4 cup water. Cover. Simmer for 5 minutes.Drain off water. Continue to cook sausage about 10 minutes, turning to brown evenly.Remove sausage to absorbent paper, cool and slice. Pour off sausage fat and return 3 tablespoons to skillet. Stir in flour and cook until a deep brown. Add garlic, onions, celery and green peppers. Cook until vegetables are tender. Add tomatoes, broth, seasonings, okra and reserved sausage. Simmer, covered, for 25 to 30 minutes.Stir in gumbo file. Serve over hot, cooked rice.Yields 8 servings.

Saut? okra, onions and green peppers for 3 to 4 minutes. Sprinkle with flour. Stir until flour becomes golden brown.Add remaining ingredients, except shrimp, rice and gumbo file. Simmer for 45 minutes.Add shrimp. Cook 5 minutes longer. Season with gumbo file.Serve over rice.

Shrimp and Oyster Gumbo1/2 cup vegetable oil2 tablespoons all-purpose flour4 to 5 medium onions, chopped2 to 3 cloves garlic, minced2 (16 ounce) cans tomatoes4 cups fish or chicken stock2 pounds raw shrimp, peeled and deveined2 bay leaves1 tablespoon seafood seasoning2 (10  ounce) packages frozen okraSalt and pepper, to taste1 to 2 pints oysters, undrained1 tablespoon gumbo fileCooked riceHeat oil in a heavy saucepan or Dutch oven over medium heat; add flour very slowly, stirring constantly with a wooden spoon until flour is very brown.Add onion and garlic; cook until onion is soft but not brown.Add tomatoes, fish stock, shrimp and bay leaves; simmer for 30 minutes, stirring frequently.Add seafood seasonings; simmer for 45 minutes.Add okra, salt and pepper; continue to simmer for 5 minutes.Add oysters and simmer 10 minutes or until edges of oysters curl. Just before serving, stir in gumbo file.Serve over rice.

"Pot Liquor" Soup2 or 3 (1 pound) bags frozen mustard or collard greens or 2 pound fresh greens3 (14 1/2 ounce) cans chicken broth2 cups water1 (2 pound) ham steak, diced2 tablespoons Tabasco sauce3 tablespoons olive oil3 medium onions, chopped1 clove garlic,  minced6 red potatoes, peeled and diced2 (16 ounce) cans field peas, drained2 (16 ounce) cans crowder peas, drained1 tablespoon white vinegar1 teaspoon saltIn large pot, cook greens in chicken broth until tender. Add water and simmer on low heat while preparing rest of ingredients.In large skillet, toss diced ham in Tabasco and olive oil. Saut? for 8 to 10 minutes. Add onion and garlic to the ham and saut?? until onions are tender.Add ham and onion mixture to the pot of greens. Add diced potatoes, field and crowder peas. Add vinegar and salt. Taste for seasoning. Simmer, over low heat, for 45 minutes.Yields 2 1/2 quarts.

Oyster Stew6 dozen oysters with liquid8 scallions, finely chopped2 ribs celery, finely chopped2 tablespoon fresh parsley, minced1 quart light cream1/2 cup butterSalt and pepper1 1/2 tablespoons Worcestershire sauceStrain oyster liquor and save. Remove any shells from  oysters. Cook chopped vegetables and whole oysters in 1 to 2 cups oyster liquor until oysters are plump and edges begin to curl. Do not overcook.While oysters are cooking, simmer cream and butter in saucepan. Do not boil. Add oyster mixture to milk and butter. Add salt, pepper and Worcestershire. Be careful when heating. It is best heated in a double boiler.Yields 6 to 8 servings.

Caramel Apple ButterPosted by kdipaolo at recipegoldmine.com 7/7/01 2:26:10 pm1 cup granulated sugar1/2 cup water8 ounces butter8 ounces apples, choppedPlace the sugar and water in a thick bottomed sauce pot and heat it over a medium heat until the ingredients melt  together. Continue heating the mixture as the water evaporates and the remaining sugar begins to caramelize. When it is a deep golden brown color add the remaining ingredients. Stir them frequently and continue cooking until the apples are mushy, about ten minutes. Place the hot mixture in a blender and carefully puree until very smooth. Transfer to a storage container and refrigerate until chilled.

Ribollita (Tuscan Vegetable Soup)Ribollita literally means "re-boiled." It usually consists of leftovers that are reheated with the addition of beans. In Tuscany, olive oil is served as a condiment to be poured into the soup at the table.1/2 cup dried cannellini  beans1 onion, chopped1 carrot, chopped1 stalk celery, chopped1 leek, chopped3 tomatoes, peeled and chopped3 cloves garlic2 cups diced zucchini1/4 pound green beans, topped, tailed    and cut into short pieces6 slices white bread1 pound green cabbage, slicedOlive oilWaterSalt, to tastePepper, to tasteBegin preparation the day before you plan to serve the soup. Put dried beans in a pan with 1 1/2 pints of cold water and bring to boil. Turn off heat and leave beans to soak for 1 hour. Heat some olive oil in a large pan and add garlic, onion, carrot, celery and leek and saut? gently for 5 minutes. Add drained beans, tomatoes and 3 pints cold water. Simmer gently for 1 hour or until beans are tender. Halfway through cooking beans, add zucchini and green beans. Refrigerate the soup overnight.The next day cook cabbage in boiling water and reheat soup. Put a slice of bread in the bottom of individual, warmed soup dishes. Drain cabbage and pile onto the bread. Adjust seasoning of the soup to taste and ladle into soup dishes.Serve with a jug of olive oil so that each person can pour some into their soup.

Reduce heat and simmer, stirring, for 2 minutes.Makes 5 1/2 cups.
