Crispy Onion Patties2 1/2 cups onions, finely chopped 3/4 cup flour 1 tablespoon granulated sugar 1 tablespoon cornmeal 2 teaspoons baking powder 1 teaspoon salt 3/4 cup milkMix dry ingredients, then add milk (batter should be fairly thick). Add chopped onions and mix  thoroughly. Drop by spoonsful into hot oil. Flatten slightly when you turn them.

Cauliflower Relish1 (2 pound) head cauliflower, broken into florets2/3 cup vegetable oil1/3 cup white vinegar2 teaspoons salt1 teaspoon oregano, crumbled1/2 teaspoon granulated sugar1/4 teaspoon pepper1 clove garlic, crushed1 (6 ounce) can pitted large ripe olives, drained1  green bell pepper, cut into 1/2-inch stripsBring oil, vinegar, salt, oregano, sugar, pepper and garlic to boiling. Add cauliflower florets. Cover and cook until tender. Discard garlic. Transfer to bowl. Top with pepper strips and olives. Cover and chill. Drain before serving.

TassoTasso is a highly seasoned, intensely flavored smoked pork. It adds a wonderful flavor to a variety of dishes. Tasso is used extensively in Louisiana cooking.Brine1 3/4 cup curing salt 1 1/2 cups granulated sugar 1 tablespoon cayenne pepper 2 tablespoons onion powder 2  tablespoons garlic powder 1 gallon water 1 (10 pound) pork butt roastIn a medium bowl, combine salt, sugar, pepper, onion powder, garlic powder and water. Mix until the salt and sugar are dissolved in the water. Pour brine over pork. Allow pork to soak in brine for one week in the refrigerator.Remove pork from brine, then discard brine. Rinse and pat dry the pork.Preheat an outdoor smoker for 200 to 225 degrees F (95 to 110 degrees C). Rub2 tablespoons ground mace 2 tablespoons garlic powder 2 tablespoons onion powder 2 tablespoons smoked paprika 1 tablespoon dried sage 1 tablespoon dried thyme 2 tablespoons honeyIn a medium bowl, mix together all ingredients. Evenly coat the pork with the rub and work it in with your fingers. Place a roasting rack in a drip pan and lay the meat on the rack. Smoke at 200 to 225 degrees F (95 to 110 degrees C) for12 hours, or until internal pork temperature reaches 160 degrees F (70 degrees C).Makes 30 servings.

Smoked Mushrooms4 cups mushrooms2 tablespoons lemon pepper2 tablespoons garlic powder Cut mushroom stems off and wash. Sprinkle lemon pepper and garlic powder lightly over mushrooms. Smoke at 225 degrees F for 45 minutes. Cool; serve immediately.Yields 4 cups.

Smoked Deer HamPosted by FootsieBear at recipegoldmine.com 12/5/2001 9:14 am Source: The Oregon Trail Cookbook1 (5 to 8-pound) deer ham, trimmed neatly1/2 cup Worcestershire sauce 1 cup Italian dressing1 tablespoon cayenne red pepper1 tablespoon salt1 tablespoon pepper1 cup  chopped onions1/2 cup soft butter Put ham in large container; cover with mixture of all remaining ingredients. (Can slice holes in meat so it can soak inside better, or pierce completely with fork.) Cover good; soak overnight or about 10 hours. Rotate often, about every 2 or 3 hours to marinate.Put on smoker and let smoke for 6 hours; turn and smoke 4 more hours or until tender.

Smoked Chickens1/2 bag hickory chips10 pounds charcoal6 whole chickensSoak hickory chips in water overnight. Place charcoal in bottom of smoker. Start fire and let burn 30 minutes. Coals will be glowing, but not flaming. Remove hickory chips; save water. Place soaked chips  directly on hot coals. Fill water pan with hickory water. Add more water until pan is filled. Place 3 chickens on each rack. Outside temperature will determine the length of time to cook. Very cold winter nights will require about 5 hours. Warmer weather will take less time, about 4 hours.

Heat oil in deep saut? pan or heavy skillet to 375 degrees F.Add cooked pasta, a few at  a time; cook until brown and crisp. Drain on paper towels and sprinkle with garlic or seasoned salt. Cool and store in airtight container.

Onion Pretzels3/4 cup (1 1/2 sticks) butter1 package Lipton onion soup mix1 (20 ounce) package broken pretzelsMelt butter. Put pretzels in small roasting pan. Pour melted butter over pretzels. Empty package of Lipton onion soup mix over pretzels and mix well. Bake uncovered  at 250 degrees F for 40 minutes. Mix thoroughly about every 10 minutes.

Fritos?1 cup yellow or white cornmeal, stone ground, if possible1 cup boiling water4 tablespoons butter, melted1/2 teaspoon saltVegetable oil (for frying )Stir cornmeal gradually into the water, and when perfectly smooth, add butter and salt. Spread dough evenly on an  inverted buttered 14 x 9-inch baking pan no more than 1/8 inch thick, and bake at 350 degrees F for about 30 minutes. Immediately cut into strips about 1/2 inch x 3 inches and remove them carefully to a rack with a spatula.Heat vegetable oil 2 inches deep in a wok or skillet until hot but not smoking. Add strips, a few at a time, and cook until crisp. Remove with slotted spoon and drain on paper towels. Salt to taste.

Biscuit Nibbles1 can refrigerator biscuits2 tablespoons vegetable oil1 teaspoon garlic or onion salt1 teaspoon Worcestershire sauceSeparate and cut biscuits into 25 to 30 peanut size pieces. Place on ungreased cookie sheet. Bake at 400 degrees F for 6 to 8 minutes. Combine  oil, salt and Worcestershire sauce and pour over nibbles to coat. Bake at 200 degrees F for 50 to 60 minutes.Serve as snacks.

Turkey Jerky6 tablespoons teriyaki sauce1 tablespoon dark brown sugar1 teaspoon hickory salt1 pound uncooked skinless turkey breast, thinly slicedPut teriyaki sauce, brown sugar and hickory salt into a tight-sealing plastic bag. Seal and shake the bag to mix. Add the  turkey, reseal the bag, and shake to coat the turkey. Set the bag aside for 20 minutes for the flavors to meld. Lay the turkey on a dehydrator tray in a single layer and dry for about 8 hours, until leathery. Remove the jerky and set it aside to cool for 20 to 30 minutes. Store in a decorative airtight container.

Sunset Bars3 cups dry cereal of your choice (wheat germ, corn flakes, oats, etc.)2 1/2 cups powdered milk1/2 cup granulated sugar1/2 cup brown sugar, packed1/4 teaspoon salt3 tablespoons honey3 tablespoons water1/2 small box orange or lemon gelatin (or any other  flavor desired)Place dry ingredients in a mixing bowl and mix well.Combine the honey and water in a pan and bring to a boil.Dissolve the gelatin in the honey-water mixture. Add to dry ingredients and mix well. Add additional water a teaspoonful at a time until the mixture is soft enough to mold.Form into bars about 2 to 3 inches long and approximately 2 inches wide. Wrap each bar in aluminum foil.

Pumpkin Apple Bisque8 small (1 pound each) pumpkins1/3 cup plus 2 tablespoons unsalted butter1 small onion, cut into 1/4-inch dice1/4 cup all-purpose flour6 cups milk or half-and-half, heated1 bay leaf1 (29 ounce) can pumpkin pur?eSalt and freshly-ground pepper, to taste1  apple, peeled and cut into 1/8-inch dice1 teaspoon fresh thyme leaves1 pinch freshly-grated or ground nutmeg1/4 cup dry sherry (optional)1 cup heavy cream, whipped to soft peaksCut off tops of the pumpkins and clean out the seeds and strings. Scoop out part of the pulp to form a clean cavity.In a 4-quart heavy saucepan or stockpot, melt 1/3 cup of the butter over medium heat and saut? onion until translucent, about 3 minutes. Add the flour and stir to form a paste. Cook and stir over low heat for 2 minutes. Gradually whisk the warm milk or half-and-half into flour mixture. Add the bay leaf. Bring to a simmer and cook gently for 15 minutes.Add the pumpkin pur?e and simmer an additional 15 minutes over very low heat.Strain through doubled cheesecloth or pass through a food mill. Season with salt and pepper.In a medium saucepan, melt the remaining 2 tablespoons butter and saut? the apple for 2 minutes. Add the thyme and nutmeg and cook 2 to 3 minutes longer, or until the apple is tender but not mushy.Spoon a portion of apple into each carved pumpkin bowl. Add the sherry, if using, to the hot soup and pour into the pumpkin bowls on top of the apples. Top with a dollop of whipped cream and serve.Makes 8 servings.
