Grilling SpicesPosted by jerseyjan at recipegoldmine.com May 10, 2001Makes about 1 1/2 cups.3 tablespoons whole coriander seeds3 tablespoons cumin seeds3 tablespoons dill seeds3 tablespoons yellow mustard seeds6 tablespoons whole fennel seeds6 tablespoons granulated sugar3  tablespoons salt1 1/2 teaspoons freshly ground pepperCombine all seeds in a skillet over medium heat, and toast, shaking pan, until aromatic, about 4 minutes.Using a spice grinder, coarsely grind seeds in three batches. Transfer to a small jar. Add sugar, salt, and pepper. Shake well to combine. The spice blend may be stored in an airtight container, at room temperature, for up to 6 months.

Chop zest (about 1/2 cup), then grind in a food processor with sugar until mixture is pale green with bits of zest still visible.Cooks' notes: Lime sugar may be made 3 days ahead and kept, chilled, in an airtight container.The sugar becomes aerated in the food processor; do not pack when measuring.Makes about 3 cups.
