Lady Fingers3 eggs, separated1/3 cup confectioners' sugar1/4 teaspoon vanilla extract3 tablespoons hot water1/2 cup flour1/4 teaspoon salt1 teaspoon baking sodaBeat egg whites until foamy. Beat in sugar gradually and continue beating until stiff. Fold in egg yolks, beaten  until thick; add vanilla extract and hot water. Fold in flour sifted with salt and baking powder. Put into lady finger tins, sprinkle with confectioners' sugar and bake for 8 to 10 minutes at 350 degrees F.Remove from tins while hot. Brush the flat surface of half the cakes with egg white and sandwich in pairs. Or press batter through a tube in portions 1 inch wide by 5 inches long on a cookie sheet covered with wax paper. Bake as above.

Orange Gelatin Mix1 envelope unflavored gelatine1/2 cup orange drink powderCombine unflavored gelatine and orange drink powder.To use, put Orange Gelatin Mix in 1 cup cold water and allow mixture to soften for 5 minutes. Stir in 1 cup boiling water. Pour into a mold. Chill  until firm enough to unmold.Serves 4.

Pimentos4 large red bell peppers1 cup white vinegar1 cup water1/2 cup granulated sugar4 garlic cloves, chopped2 teaspoons oil1 teaspoon saltWash peppers, remove seeds and membrane, and slice into 1-inch wide strips. Cover peppers with boiling water and let them soak for 5  minutes.Drain. Combine vinegar, water, and sugar in a glass or enamel pan and bring to a boil. Simmer mixture for 5 minutes; remove from heat, and add garlic, oil and salt. Place peppers in a sterilized 1-quart glass jar and pour the vinegar mixture over them to cover. Store pimentos in the refrigerator for 2 weeks before using. Pimentos will keep for several months in the refrigerator.

Pudding Pops1 (4 ounce) package instant pudding mix (any flavor)2 cups milk6 paper cups6 wooden sticks or plastic spoonsPour cold milk into bowl. Add pudding mix. Beat slowly with hand rotary beater until mixture is well blended and creamy. Pour into 6 paper cups. Put a  wooden stick or plastic spoon into each cup. Press a square of foil or wax paper onto the top of the cup to cover. The handle or the stick will poke through the foil. Freeze until firm ? at least 5 hours.To serve, press firmly on the bottom of the cup to pop out.

Dried Onion Soup Mix1/2 teaspoon onion powder1/2 teaspoon salt1/4 teaspoon sugar1/4 teaspoon Kitchen Bouquet1/2 cup dried onions, chopped/mincedIn small bowl, combine onion powder, salt, sugar. Add Kitchen Bouquet and stir until seasonings are uniformly brown. Add onion and  mix thoroughly until color is again even. (This step takes several minutes.) Makes 1/2 cup mix which is equivalent to one 1/5 ounce envelope of dried soup mix. Store unused mix in the refrigerator.

Oreo Filling1 (.25 ounce) envelope unflavored gelatine1/4 cup cold water1 cup shortening5 cups confectioners' sugar1 teaspoon vanilla extractSoften unflavored gelatine in cold water; set in heatproof cup in pan, simmering until clear. Let cool.Cream together shortening,  confectioners' sugar and vanilla extract. Add cooled gelatine mixture. Beat for 10 minutes. Put a spoonful onto one cookie. Top with another cookie, then press cookies gently together to spread the filling.

Spring Roll Wrappers1 cup rice flour 4 tablespoons all-purpose flour 1/2 teaspoon salt 4 large eggs 1 teaspoon vegetable oil 2 cups fresh waterSift all the dry ingredients together twice.In a separate bowl, mix the eggs, oil and water . Then pour this mixture into the dry  ingredients to form a batter. Mix thoroughly to get all the lumps out. Cover and set aside in a cool place for an hour.Heat a nonstick frying pan and drizzle or spray a little cooking oil on it.Pour in a little batter and quickly swirl in around to make a thin pancake. You don't have to flip it to cook the other side and it should not brown. Remove it from the pan when it looks like it has set. Repeat until all batter is used.Makes about 20 wrappers.

Mix in Splenda and Kool-Aid powder. Stir until thoroughly dissolved. Add  boiling water and stir. Taste the mixture and adjust amount of Splenda and Kool-Aid to taste. You may need a little more of each. Chill until firm.

Allow to steep for 20 minutes (off the heat).Strain the butter through a fine mesh. Place in a mixing bowl. Toss in the bread cubes and mix well. Place the bread cubes in a single layer on a cookie sheet. Bake for four to seven minutes (or until lightly brown).Allow to cool. Store tightly covered at room temperature.Yields 4 cups.
