Souperburgers1 pound ground beef1 medium onion, chopped1 can cream of celery soup1 tablespoon prepared mustard1/8 teaspoon pepper6 hamburger rolls, split and toastedIn skillet over medium-high heat, cook beef and onion until beef is browned, stirring to separate meat. Pour  off fat. Add soup, mustard and pepper. Heat through.Serve on rolls.

Stuff on a Shingle1 (2.25 ounce) jar Armour dried beef slices3 tablespoons butter3 tablespoons flour3 cups milk10 slices sandwich bread, toastedRemove beef slices from jar and separate. Rinse under warm water. Place beef on paper toweling in a single layer to drain. Pat dry  with more paper towels. Re-stack slices and chop into bite-size pieces.In a large skillet, melt butter over medium heat. Reduce heat to low, add flour and stir. Add beef, stirring to coat. Slowly add milk, stirring after each addition until mixture is smooth.Increase heat to medium-high and cook until mixture begins to boil and thickens. Serve over toasted bread slices.

Spamburgers1 can Spam 1 green bell pepper (optional) 1 large onion1/2 pound Velveeta cheese1/4 pound butter 2 tablespoons catsupHamburger bunsGrind Spam, peppers, onion together in food chopper. Set aside.Melt cheese, butter and catsup in double boiler. When all are melted,  add to ground mixture, stirring well. Place small amount on hamburger bun and wrap in aluminum foil. Place on cookie sheet and heat at 325 degrees F for 15 to 20 minutes. Serve hot.This mixture also freezes well.

Steak and Mushroom SandwichesMakes 6 servings.1 pound flank or sirloin steak 2 tablespoons vegetable oil 1 medium onion, sliced 2 medium portobello mushrooms, trimmed and sliced thin 1 teaspoon salt 1 teaspoon dried oregano 6 long sandwich buns (about 6 inches) 4 to 8  ounces mozzarella or other cheese, slicedPickled jalape?o slices or spicy pickled okra (optional)Put the steak in the freezer for 30 minutes to make it easier to slice.Heat vegetable oil in a wide skillet over medium-high heat. Add the onion and cook, stirring occasionally, until limp and well-browned. This might take 20 minutes.Meanwhile, slice steak as thinly as you can against the grain. (The grain on flank steak is easy to see - it's the long, striated indentations.) If you end up shaving some of the meat rather than actually slicing it, that's fine. When the onions are brown, increase heat to high and add mushrooms, salt and oregano. Cook, stirring, 6 minutes, until mushrooms are limp and dark.Add beef and stir quickly and constantly until it's no longer pink.Divide mixture among buns and top with sliced cheese.Serve with pickled jalape?o peppers or okra, if desired. Serve with a salad of chopped tomatoes and cucumber.

Welch Rarebit2 eggs, thoroughly beaten3 tablespoons Worcestershire sauce1/2 teaspoon salt1/2 teaspoon black pepper1/2 teaspoon red pepper1 pound aged cheeseBeerCombine eggs, Worcestershire sauce, salt, black pepper and red pepper. Stir this mixture thoroughly. Set aside.Put  about 1/2 to 3/4 bottle of beer in a large saucepan. Add cheese immediately. Cook very slowly, stirring constantly until cheese begins to thicken. Add the egg mixture. Stir rapidly until it thickens to suit your taste.Serve over toast points or on saltines with thinly sliced Bermuda onion for a quick, light supper.

Add 1 cup milk gradually to  form a paste. Mix in remainder of milk and Worcestershire sauce. Melt butter in a double boiler. Add milk mixture. Cook and stir over hot water until thickened. Add cheese and stir until melted. Lay tomatoes slices on top of toast. Spoon rarebit over toast and tomato slices.Beer RarebitOmit milk, and use ale or beer instead.

Wineburgers1 1/2 pounds lean ground beefSeasoning salt, to taste3 to 4 cups Burgundy wine, any kind4 slices American or Swiss cheese4 hamburger bunsHeat grill and form ground beef into four 5- to 6-ounce patties. Place patties on grill and season lightly with seasoning  salt. Cook for about 3 minutes, then flip patties. Cook 1 or 2 minutes longer, then pour 6 to 8 ounces (3/4 to 1 cup) Burgundy on each patty. Cook until medium or medium-well.Top with cheese and serve on buns.

Sauce Bearnaise4 tablespoons white wine vinegar2 tablespoons dried tarragon1/4 cup finely chopped shallots or scallions1/2 teaspoon saltFreshly-ground pepper3 tablespoons water3 egg yolks1/2 pound butterIn a heavy nonreactive saucepan place the vinegar, tarragon, shallots,  salt and pepper. Bring to a boil and cook down until moisture almost disappears. Add water and egg yolks and stir briskly with a wire whisk over low heat until the sauce has thickened to the consistency of mayonnaise. In another saucepan, melt butter. Cool butter to the touch and slowly, in a thin stream, add to the yolk mixture. Sauce should be warm, not hot.

Add remaining ingredients and mix until well blended.  Put into a plastic container and freeze.One hour before serving, move the container from the freezer to the refrigerator compartment to thaw.Makes 1 1/2 pints.

Cranberry Bourbon Relish1 cup bourbon1/4 cup minced shallotsGrated zest of 1 orange1 package fresh cranberries1 cup granulated sugar1 teaspoon freshly ground pepperIn small nonreactive saucepan, combine bourbon, shallots and orange zest. Bring to a boil over medium heat.  Lower heat and simmer until bourbon is reduced to a syrupy glaze. Add cranberries and sugar, stirring until the sugar is dissolved and the cranberries burst open, about 10 minutes. Remove from heat and stir in pepper. Can be made several days in advance.Makes 7 servings.

Cream shortening. Add eggs, sugar and Karo syrup. Add dry ingredients; mix until well blended. Pour into greased pan with sides as this puffs up then falls. Bake at 350 degrees F for 15 to 20 minutes.
