Mango Butter8 cups peeled and chopped ripe mango3 cups packed brown sugar3 tablespoons grated fresh ginger1 teaspoon grated fresh lime zest1/2 cup fresh lime juice1 teaspoon ground cinnamonPlace mangoes in a heavy saucepan over medium heat. Cook, stirring frequently, until  mangoes are very soft. (Since mangoes are usually very juicy, you needn't add any water unless the mixture starts to stick; then add up to 1/2 cup, a little at a time, as necessary.) When the mangoes are cooked, remove from heat; pur?e in a blender or food processor, working carefully in batches. Return pur?e to pan. Add sugar, ginger, lime zest, lime juice and cinnamon; mix well. Bring to a boil over medium heat, then lower heat and cook, stirring frequently, until very thick, about 30 minutes. Remove from heat; immediately pour into hot, sterilized jars, leaving 1/4-inch head space. Cap and process in a 10-minute boiling water bath.Yields 4 ( 1/2-pint) jars.Approximate nutrition information per tablespoon: 56 calories; trace fat (1 percent calories from fat); no cholesterol; trace protein; 15g carbohydrate; 0.5g fiber; 4mg sodium

No-Cook Strawberry Butter1 quart fully ripe strawberries1/2 teaspoon grated lemon rind1/4 teaspoon nutmeg4 cups granulated sugar2 tablespoons lemon juice1 pouch Certo? Fruit PectinStem strawberries and place 1 cup at a time in container of food processor with cutting blade.  Cover container, and turn on and off 2 or 3 times until fruit is chopped. Do not pur?e. Measure 2 cups into large bowl. Add lemon rind and nutmeg. Thoroughly mix sugar into fruit; let stand 10 minutes. Add lemon juice to pectin in a small bowl; stir into fruit. Continue stirring 3 minutes. (A few sugar crystals will remain.) Quickly ladle into scalded containers, filling to within 1/2 inch of top. Cover at once with tight lids. Let stand at room temperature 24 hours, then store in freezer. Small amounts may be covered and store in refrigerator up to 3 weeks.

Pear Preserves3 quarts pears, sliced or chopped3 cups water4 1/2 cups granulated sugar6 slices lemonWash and pare fruit. Cook until tender in water. Remove fruit and make a syrup of the liquid and sugar. Add fruit to partially cooled syrup and bring gently to a boil. Add  lemon slices. Boil rapidly until fruit is clear and tender. Let stand in syrup to cool. Remove lemon. Pour fruit into sterilized jars. Reheat syrup to boiling and pour over fruit. Seal each jar as filled.Yields 8 (8 ounce) jars.

Duff's Bread PuddingSource: Duff's Buffet - Missouri1 cup warm water 1 cup non-dairy creamer 3 eggs 1/4 cup butter 1/2 cup granulated sugar 1 teaspoon vanilla extract1/4 teaspoon salt 4 slices white bread, cut into 1-inch squares1/4 cup raisinsCinnamonCombine water and  creamer. Add butter. Beat 30 seconds. Add sugar, vanilla extract, eggs and salt. Beat at high speed 1-2 minutes. In ungreased casserole dish place 1 1/2 cups of the mixture and sprinkle with raisins. Add bread. Toss lightly and pour remaining mixture evenly over the bread. Sprinkle lightly with cinnamon. Bake at 325 degrees F for 40-45 minutes. Cool and top with Nutmeg Sauce.Nutmeg Sauce1/2 cup granulated sugar 1 tablespoon cornstarch 1/2 teaspoon nutmeg 1 cup milk 1/4 cup butter 1 teaspoon vanilla extractIn small pan combine sugar, cornstarch and nutmeg. Stir in milk and butter. Cook over medium heat until mixture starts to thicken slightly. Add vanilla extract, and stir constantly until thick. Do not boil. Remove from heat and pour over cooled bread pudding.

Schokolandenpretzel (Chocolate Pretzels)1/2 cup butter or margarine1/4 cup granulated sugar 1 large egg, beaten 1 teaspoon vanilla extract 1/4 cup milk 2 cups unbleached flour, unsifted 1/4 cup cocoaCocoa Frosting2 teaspoons cocoa powder1 1/4 cups confectioners' sugar 2  teaspoons butter or margarine, melted 1/2 teaspoon vanilla extractCream butter and sugar until light and fluffy. Beat in the egg, vanilla extract and milk.Sift flour and cocoa together. Mix into butter mixture until thoroughly blended. Chill dough until firm enough to handle (about 30 minutes).Using 2 tablespoons dough, roll a rope about 12 inches long between your hands. Shape into a pretzel as follows: Make a loop bout 1 1/2 inches in diameter by crossing the ends, leaving 1-inch tails. Flip the loop down over the crossed ends. Press firmly into place. Place pretzels on greased baking sheets. Bake at 350 degrees F for about 10 minutes.Frosting: In a small bowl mix cocoa and confectioners' sugar. Gradually stir in butter and vanilla extract. If frosting is too thick, thin with milk. When pretzels are cool, spread with Cocoa Frosting.Yield: 2 dozen

Apricot NuggetsMake these a month before Christmas, then stash in a cool place until ready to serve.16 ounces confectioners' sugar 6 tablespoons melted butter 2 tablespoons orange juice 1/2 teaspoon vanilla extract 11 ounces dried apricots 1 cup pecans, fine chopped 1 1/2  cups coconutRun apricots through grinder.Mix sugar, butter, orange juice and vanilla extract. Put sugar mixture and ground apricots in a plastic bag and knead until well blended. Form into 1-inch balls. Roll in chopped pecans.Place coconut in a bowl and flatten the apricot balls in the coconut with the bottom of a glass, turn over and flatten again so coconut is pressed into both sides. Adjust pressure so the nuggets are about 3/8 inch thick. Layer with wax paper in plastic containers with tight fitting lids. Store in a cool dark place for 2 to 4 weeks. Flavor improves with age.

Stir in 1/2 cup margarine and the water. Press into an ungreased 9-inch square pan; refrigerate.Meanwhile, mix remaining ingredients. If necessary, stir in an additional 1 to 2 teaspoons milk until smooth and of spreading consistency. Spread over the layer in pan. Refrigerate 1 hour. Cut into 1-inch squares. Decorate with chopped red and green candied cherries if desired.Makes about 60.

Marshmallow Dips1 cup semisweet chocolate chips1/4 cup peanut butter2 cups nuts, chopped20 to 25 marshmallowsMelt chocolate chips and peanut butter over low heat, or place in a 2-cup measuring cup and microwave at 50% power for 1 to 3 minutes, until chips are shiny and  soft.Stir until mixture is smooth and well blended. Place nuts in a shallow container. Insert a wooden pick into each marshmallow; dip into the chocolate-peanut butter mixture. Allow excess chocolate to drain off; roll in nuts to cover about half of the marshmallow. Set on wax paper; allow to stand until firm.
