Coco Ribe Cake1 (18.25 ounce) box deluxe white cake mix1 small box instant vanilla pudding mix1/2 cup flake coconut1/2 cup vegetable oil1 cup water (room temperature)4 eggs1/2 cup Coco Ribe liqueurGrease and flour tube pan. Bake at 350 degrees F for 45 to 50 minutes. Let  cool in pan 25 minutes. Finish cooling on wire rack. Ice and refrigerate overnight.Coco Ribe Icing1 small container whipped topping1/4 cup Coco Ribe liqueurToasted coconutBlend whipped topping and liqueur well. Ice cake. Sprinkle with toasted coconut. Refrigerate overnight.

Spirited Mississippi Mud Cake1/2 pound (2 sticks) plus 2 teaspoons unsalted butter, cut into 1/2-inch pieces1 tablespoon unsweetened cocoa powder 2 cups bleached all-purpose flour 1 teaspoon baking soda 1/8 teaspoon salt 1/2 cup Bourbon 1 1/2 cups strong, brewed coffee,  cooled 5 (1 ounce) squares unsweetened chocolate, chopped 1 3/4 cups granulated sugar 1 teaspoon pure vanilla extract 2 large eggs, lightly beatenPreheat oven to 275 degrees F. Grease a Bundt pan with 2 teaspoons of the butter. Lightly dust with the cocoa powder.Sift the flour with the baking soda and salt in a bowl and set aside.Warm the Bourbon and coffee in the top of a double boiler or stainless steel bowl set over a pan of simmering water for five minutes. Add the chocolate and remaining butter. Cook, stirring, until melted and smooth, about three minutes. Remove from the heat. Add the sugar and stir to dissolve. Cool slightly.Using a whisk or an electric mixer, stir in the flour, 1/2 cup and a time, into the chocolate. Add the vanilla extract and egg whisking to mix well. Pour the batter into the prepared pan and bake for one hour. (Cake will be slightly soft in the middle.) Remove from the oven and let rest in the pan for 20 minutes. Turn out onto a cooling rack to cool for at least 30 minutes before serving.

Screwdriver Carrot Cake5 tablespoons grated orange rind1/2 cup vodka1 cup butter, softened2 cups granulated sugar4 eggs, beaten1 teaspoon vanilla extract3 cups all-purpose flour, sifted3 1/4 teaspoons baking powder1/2 teaspoon salt1 teaspoon cinnamon1/4 teaspoon nutmeg1/4  teaspoon allspice1 1/2 cups carrots, grated1/2 cup pecans, choppedGlaze2 cups confectioners? sugar2 teaspoons orange juice1/2 teaspoon orange extract4 teaspoons vodka2 tablespoons light corn syrupPreheat oven to 350 degrees F.Stir grated orange rind into vodka and set aside.Cream butter; gradually add sugar and beat until light and fluffy. Beat in beaten eggs and add vanilla extract. Sift the dry ingredients together, then blend into the batter alternately with orange rind-vodka mixture. Add carrots and chopped pecans. Bake in buttered, floured 10-inch tube or Bundt pan until cake tests done, about 1 hour.Cool in pan on rack for 15 minutes, turn out, then finish cooling on rack.Make Glaze by combining confectioners? sugar, orange juice, vodka, orange extract and light corn syrup and beating until smooth. Spoon glaze over top of cooled cake, then spread evenly with knife. If desired, sprinkle with more chopped nuts.

Tia Maria Torte1 1/2 pints whipping cream 2 tablespoons confectioners' sugar 1/2 teaspoon vanilla extract3/4 cup Tia Maria 3/4 cup milk 1 3/4 pounds chocolate chip cookiesWhip the first three ingredients until soft peaks form. Put in the refrigerator.Combine Tia Maria and  milk. Dip the chocolate chip cookies quickly in the milk mixture and line the bottom and sides of 9? or 10?inch springform pan. Put refrigerated whipping cream on bottom layer of the cookies. Repeat this process, then finish with a layer of whipped cream. Refrigerate the torte for 24 hours before removing from the pan.After removing the torte from the pan, garnish with whipped cream.

Grease a 9-inch square baking  pan.Drain apricots, reserving 3 tablespoons juice (discard remaining juice) or save for another use); set aside.Place butter in prepared pan; place in oven for 3 to 4 minutes or until melted. Stir in the brown sugar. Arrange apricot halves, cut side up, in a single layer over sugar.In a mixing bowl, beat egg yolks on high for 4 minutes or until thick and lemon-colored. Gradually beat in sugar. Stir in reserved apricot juice.Combine flour, baking powder and salt; gradually add to egg yolk mixture.In another mixing bowl, beat egg whites until stiff. Fold into yolk mixture. Carefully spread over apricots. Bake for 35 to 40 minutes or until a wooden pick inserted near the center of the cake comes out clean.Cool for 10 minutes before inverting onto a serving plates.Yields 9 servings.

Pineapple Rum Upside Down CakeYields: 4 to 6 servings1/2 cup sifted all-purpose flour 1/4 teaspoon salt 1/8 teaspoon baking soda 1/4 cup butter (room temperature) 2 tablespoons butter 1/4 cup light brown sugar 1 tablespoon dark rum 1/2 cup granulated sugar or superfine  sugar1/2 teaspoon vanilla extract1 egg 1/4 sour cream (room temperature) 1 (8 ounce) can pineapple slices 4 cherries, cut in halfPreheat oven to 350 degrees F.Sift together flour, salt, baking soda; beat butter until creamy. Add sugar; beat. Add vanilla and egg. Beat until fluffy. Stir in half the flour mixture to moisten. Beat. Add sour cream. Beat. Stir in remaining flour mixture. Beat 30 seconds.Melt butter in 9 x 5-inch loaf pan or small skillet. Blend brown sugar, rum and salt into butter. Spread over bottom of pan. Drain pineapple slices, and arrange in pan. Place cherry half in each pineapple slice, rounded side down. Pour batter over all. Bake for 30 to 35 minutes.

Strawberry Upside-Down Cake1/2 cup shortening 1 1/2 cups granulated sugar 1 cup plus 2 tablespoons milk 2 1/4 cups self-rising flour 2 eggs 1 teaspoon vanilla extract1/2 cup (1 stick) butter or margarine 1 cup granulated sugar 2 cups strawberries, cut upPreheat oven to 350  degrees F.Cream sugar and shortening. Add milk and flour alternately. Blend well and add eggs and vanilla extract. Set aside.In a 9 x 13-inch cake pan, melt butter and sprinkle one cup sugar over this. Spread strawberries evenly in pan and pour cake batter over them. Bake until brown and sides are crusty, about 30 to 40 minutes.

Arrange peaches and cherries on brown sugar. Cream the shortening and sugar in a bowl. Add the egg and beat well.Sift the flour, baking powder and salt together and add to creamed mixture alternately with mixture of orange rind and juice. Pour over peaches carefully.Bake at 350 degrees F for 45 to 50 minutes or until cake tests done. Cool for 10 minutes. Invert over serving plate and remove cake from cake pan.Makes 6 to 8 servings.

Gradually add water stirring until thickened. Boil 5 minutes. Remove from heat. Add butter, juice and rind. Set aside.Cake1/4 cup butter1/2 cup granulated sugar1 egg, beaten1 1/2 cups flour2 teaspoons baking powder1/2 teaspoon salt1/2 cup milkSlices from 1 1/2 lemons1 teaspoon grated lemon rindCream butter and sugar. Add egg. Cream until light and fluffy.Sift flour, baking powder and salt. Add alternately with milk and lemon peel.Line bottom of 8 inch, greased round cake pan with thin lemon slices. Pour lemon sauce over slices (just enough to cover. reserving some). Pour batter over lemon slices and sauce. Bake 375 degrees F for 30-35 minutes. Remove and cool. Invert onto serving dish. Pour remaining sauce over and serve.

Ham and Pineapple in Foil1 (1/2-inch thick) ham slice thick1/2 teaspoon mustard 1/2 teaspoon brown sugar 2 tablespoons pineapple chunks1 teaspoon pineapple juiceFoilCut two pieces of foil twice the size of the ham slice. Put ham slice on one side of one piece of foil after  you spread both sides of the ham slice with mustard. Sprinkle brown sugar on the top side and add pineapple chunks with pineapple juice. Fold foil into an envelope, crimping all edges securely. Repeat with second foil layer. Cook 6 minutes a side on top of charcoal gray coals.
