Vienna Torte7 eggs, separated1 1/4 cups granulated sugar1 cup all-purpose flour1/4 cup cornstarch2 teaspoons baking powderPinch of saltPreheat oven to 350 degrees F.Beat whites until frothy. Add 1/2 cup sugar gradually; beat until stiff. Beat yolks until thick. Add  remaining sugar gradually and beat. Combine the two mixtures.Sift the flour with cornstarch, baking powder and salt and fold in carefully. Pour into 4 greased and floured 8-inch layer cake pans. Bake about 20 minutes. Cool.Filling1 1/4 cups milk1/3 cup all-purpose flour1/3 cup granulated sugar1/4 cup cold milk1 cup melted butter1 teaspoon vanilla extract1 cup confectioners? sugarChopped nutsHeat milk in double boiler. Mix flour, sugar and cold milk. Add to heated milk and stir until thick, then cover and cook 15 minutes. When cool, add melted butter; mix well. Add vanilla extract and confectioners' sugar. Spread this between the four layers and on top and sides. Cover well with chopped nuts.

Humdingers1/2 cup (1 stick) butter or margarine8 ounces chopped dates2/3 cup granulated sugar1 1/2 cups Rice Krispies1 cup chopped nuts1 teaspoon vanilla extractConfectioners' sugarMelt butter in the top of a double boiler over boiling water. Add dates and sugar. Cook  mixture over boiling water for 8 minutes.Remove from heat, and stir in cereal, nuts and vanilla extract. When just cool enough to handle, roll into small balls, and roll in confectioners' sugar.

Raspberry Jam2 pounds raspberries3 cups granulated sugarJuice of 1 lemonRinse and mash berries. Place in a 6-quart or larger pot with sugar and slowly bring to a boil, stirring to dissolve sugar. Boil for 20 to 30 minutes, stirring frequently to prevent sticking and  scorching, until thickened. Jam will thicken as it cools. Add lemon juice at the end of cooking time.Remove from heat and skim off foam with a spoon. Ladle jam into clean, hot jars, leaving 1/2-inch headspace; seal. Process in a boiling water bath for 10 minutes.Yield 4 to 5 half-pints.

Nectarine-Orange Marmalade3 pounds nectarines3 medium-size oranges4 1/2 cups granulated sugarWash, blanch, peel and pit nectarines; wash the oranges. Remove the peel from 1 1/2 of the oranges and discard it. Put the nectarines and the peeled and unpeeled oranges through a  meat grinder. There should be about 4 1/2 cups. Place the fruit in a preserving kettle; add 4 1/2 cups of sugar and bring slowly to a boil. Boil rapidly, uncovered, for about 30 minutes, stirring frequently. Skim off foam with a metal spoon. Ladle into hot, sterilized jars and seal immediately.To seal: Fill to within 1/2-inch head room, being sure to first wipe the rim and threads of the jars with a hot damp cloth to remove all particles of food, seeds or spices. While contents are hot, cover with a 1/8-inch layer of paraffin. When paraffin has set, add another layer of melted paraffin, tilting and rotating the jar to seal completely.Makes about 4 half-pints.

Peachy Jalapeno Jelly12 peaches, skinned7 large jalape?os, chopped5 to 6 cups granulated sugar1 package pectinCook the peaches until done, but not too mushy. Add the jalape?os and cook until tender. Add sugar and cook until thickened, then add pectin. Cook an additional 15  minutes, stirring frequently.Pour the jelly into sterilized jars, filling to a half inch from rim. Tighten the lids and put in a hot bath for 20 minutes.

Rosemary Jelly1 1/4 cups boiling water2 tablespoons minced fresh rosemary3 cups granulated sugar1/4 cup vinegar1 (3 ounce) pouch liquid fruit pectin2 to 3 drops green food coloringIn a large saucepan, combine boiling water and rosemary; cover and let stand for 15 minutes.  Strain, reserving liquid. If necessary, add water to measure 1 1/4 cups. Return liquid to pan; add sugar and vinegar. Bring to a full rolling boil over high heat, stirring constantly. Add pectin, stirring until mixture boils. Boil and stir for 1 minute. Remove from the heat; skim off foam.Add food coloring if desired. Pour hot mixture into hot jars, leaving 1/4-inch headspace. Adjust caps. Process for 10 minutes in a boiling water bath.Yields 3 1/2 pints.

Watermelon Pickle Fruit Cake1 cup halved candied cherries1 cup slivered candied pineapple1 cup light seedless raisins1 (1 pound 4 ounce) jar watermelon pickles, drained and slivered1/2 cup watermelon pickle syrup1 cup butter, softened2 cups granulated sugar5 eggs3 cups  sifted all-purpose flour2 teaspoons baking soda1/2 teaspoon salt1/2 cup sherry1 cup pecans, chopped1 cup blanched slivered almondsCombine fruits and pickle syrup; soak overnight. Cream butter; add sugar; cream again. Beat in eggs one at a time.Sift together dry ingredients; reserve 1/4 cup. Add flour mixture to sugar mixture alternately with sherry.Drain fruits; add nuts and reserved 1/4 cup flour mixture; blend well. Pour batter over fruits and nuts; mix. Pour into two prepared 9 x 5-inch loaf pans. Bake at 300 degrees F for 2 hours and 30 minutes to 2 hours and 40 minutes.Cool in pans on racks. Chill 1 month before using to facilitate cutting.

Crushed Pineapple Fruitcake3/4 cup butter1 cup granulated sugar2 eggs2 cups all-purpose flour2 teaspoons baking powder1 teaspoon salt1 teaspoon almond extract3 cups golden raisins1/2 cup red glace cherries1 cup mixed peel1 (15 ounce) can crushed pineapple with juiceLine an  angel food pan with parchment paper, and brush with melted butter.Cream butter or margarine, and then beat in sugar. Beat in eggs, one at a time, beating well after each addition. Stir in extract. Mix in flour, baking powder and salt. Stir in raisins, cherries, pineapple and mixed peel. Allow mixture to sit overnight in a covered bowl.Bake at 300 degrees F for 2 1/2 hours with a pan of hot water placed on the lowest rack of oven during baking. Brush warm cake with some melted butter.Yields 1 tube cake.

Bake at 350 degrees F for 1 hour or until a wooden pick inserted near the center comes out clean.Cool in pans for 10 minutes; remove to a wire rack to cool completely.

Cheesecake CupsPosted by liz at recipegoldmine.comSource: Submitted by Ingrid - This is my mother in law's recipe.1 box vanilla wafers24 ounces cream cheese1 cup granulated sugar5 eggs1 teaspoon vanilla extract1 can cherry pie fillingCup cake cups (with foil liner)Using a  blender or a food processor, crumb wafers finely. Fill cups with crumbs as crust.In blender or processor, blend cream cheese, eggs, sugar and vanilla extract. Fill cups with mixture half way. Bake at 325 degrees F for 25 minutes or until slightly brown. Makes about 30 cups.Take out of oven and let cool for 15 minutes. Apply pie filling on top and refrigerate so filling and cheesecake are cool. Enjoy!

Boston Creme PieCake1 (18.25 ounce) box yellow cake mix 1 egg 1/2 teaspoon lemon extractFilling1 small box regular vanilla pudding (not instant) 1 1/2 cups milk 1 teaspoon vanilla extractChocolate Glaze3 tablespoons cocoa 1 tablespoon vegetable oil 1 cup sifted  confectioners' sugar 2 tablespoons boiling waterMist an 8-inch round cake pan with nonstick cooking spray.Bake the cake in prepared pan according to directions on box, adding an additional egg and lemon extract to batter.Let cake cool in pan for about 10 minutes, then remove from pan and cool completely.Prepare pudding according to directions on box, using 1 1/2 cups milk and adding vanilla extract. When pudding is ready and still hot, cover with plastic wrap to prevent skin from forming. Refrigerate until chilled.Split cake into two layers, cover one layer with pudding and replace the top layer.Make glaze. Blend all ingredients in mixing bowl. Beat until smooth. Glaze only the top layer of the cake. This cake must be kept refrigerated.

Bake for 40 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 15 minutes. Invert onto cooling rack. Turn right-side up. Cool completely.Frosting1 (16 ounce) container vanilla frosting1/2 teaspoon cinnamonCombine frosting and cinnamon. Stir until blended. Spread over cooled cake. Dust frosting with a light coat of cinnamon.

Cool and add to the top of the cake.Make the pudding as per package directions. Pour it on the top of the pineapple, then top with Cool Whip?. Cover with coconut, nuts and cherries.
