Cream Biscuits2 cups all-purpose flour1 tablespoon baking powder1/2 teaspoon saltAbout 1 1/4 cups heavy (whipping) creamPreheat oven to 400 degrees F.Sift dry ingredients into a bowl. Add 1 1/4 cups of heavy cream and stir with a fork until dough gathers into a ball. You  may have to add another another tablespoon or so of cream (better too damp than too dry).Turn out onto floured surface and pat or roll to about 1/2-inch thickness. Cut biscuits and put on a lightly greased sheet. Gather any remaining scraps, pat together and cut additional biscuits. You may brush with additional cream, if desired.Bake on middle oven rack for 12 to 15 minutes or until pale golden. Transfer to rack to cool or serve hot.

Breakfast Blossoms1 (12 ounce) can buttermilk biscuits (10 count) 3/4 cup raspberry or strawberry preserves 1/4 teaspoon cinnamon 1/4 teaspoon ground nutmeg Grease 10 cups in a muffin tin. Separate dough into 10 biscuits. Cut each biscuit into 3 pieces or leaves. Stand 3  leaves evenly around sides and bottom of cup, overlapping slightly. Press dough firmly together.Combine preserves and spices. Spoon about 1 tablespoon of mixture into center of each muffin cup. Bake in a preheated 375 degree F oven for 10 to 12 minutes or until lightly browned. Cool slightly and remove from pan.Serve warm.

> Dippity Do's1/2 cup butter or margarine2 1/2 cups all-purpose flour 1 1/2 cups granulated sugar 3 1/2 teaspoons baking powder 1 1/2 teaspoons salt 1 cup milkPreheat oven to 450 degrees F. Place butter or margarine in a 9 x 13-inch metal baking pan and set in oven just  until butter is melted.In a bowl, mix together remaining ingredients. Drop dough with a teaspoon into melted butter until bottom of pan is covered. Bake until golden.Serve with lots of honey. Goes well with breakfast dishes, soup, chili or fried chicken.

Raisin Bran Pecan Muffins1 (15 ounce) box Raisin Bran?3 scant cups granulated sugar5 teaspoons baking soda5 cups flour2 teaspoons salt4 eggs, beaten3/4 cup vegetable oil1 cup pecans, chopped1 quart buttermilkMix Raisin Bran?, sugar, baking soda, flour and salt in a very  large bowl. Add beaten eggs, oil, nuts and buttermilk. Mix well. Store in covered container in refrigerator and use as needed.Preheat oven to 400 degrees F. Grease muffin pans. Fill muffin pans two-thirds full. Bake 15 to 20 minutes.Batter will keep for 6 weeks in the refrigerator, or cook the muffins and store them in the freezer.

Habanero BBQ SauceFrom the kitchen of Kevin Taylor, the BBQ GuruOK, I had to do something with my 100 home-grown habs!! I serve this with my briskets.3 Habanero chiles, minced fine1 small onion, minced1 cup ketchup1 cup water1/2 cup cider vinegar1 tablespoon garlic powder1  tablespoon Worcestershire sauce1/8 cup molasses2 tablespoons hot sauceI use a mini-food processor to chop the habs and onions.Brown onion and habs in some oil. This will help to intensify the heat of the habs.Add remaining ingredients. Simmer for 30 minutes.

Kevi's Miss Piggy Mustard SauceFrom the kitchen of Kevin Taylor, the BBQ GuruMy personal favorite...it's pretty hot and very thick. To thin, just add more vinegar. To cut the heat, just adjust the hot sauce and the cayenne.1 cup mustard1/2 cup sugar1/2 cup cider vinegar1/4  cup brown sugar, light2 tablespoons chili powder1 teaspoon pepper1 teaspoon white pepper1 teaspoon cayenne pepper1 tablespoon hot sauce1 teaspoon soy sauce, dark2 tablespoons butterCombine all ingredients except soy sauce and butter. Add the vinegar last. Add to your desired thickness.Simmer for 10 minutes.Remove from heat and add butter and soy sauce.

Calico Beans1/4 pound bacon, 1/2-inch pieces1 medium onion, chopped1 pound ground beef1/2 cup packed brown sugar1/2 cup catsup1 tablespoon prepared mustard1 teaspoon salt1 (16 ounce) can baby lima beans, drained1 (16 ounce) can pork and beans1 (16 ounce) can kidney beans,  drainedCook and drain bacon. Brown onion in bacon drippings and set aside.Discard drippings and brown beef in skillet. Drain off excess fat.Combine beef, bacon and onion with remaining ingredients; mix well. Put into a greased 2 1/2-quart casserole, then cover and bake at 300 degrees F for about 1 1/2 hours.

Cowpoke Pintos1 pound dried pinto beans, soaked overnight8 cups water12 ounces Coca-Cola?1 (14 1/2 ounce) can whole tomatoes, undrained1 1/2 medium onions, chopped1/4 to 1/2 cup tomato-based barbecue sauce2 to 3 slices slab bacon, chopped3 tablespoons chili powder2  tablespoons Worcestershire sauce4 garlic cloves, minced3 to 4 fresh serranos or 2 to 3 jalape?os, minced2 teaspoons cumin seeds, toasted and ground1 teaspoon salt, or more, to tasteIn a Dutch oven or heavy stockpot, combine all ingredients except salt. Bring to a boil over high heat, then reduce to a simmer. Cook slowly, stirring up from the bottom occasionally, for at least 2 hours, adding more water if the beans begin to seem dry.Stir in the salt the last few minutes of cooking. The beans should hold their shape but be soft and just a little soupy. Serve in bowls with a bit of the cooking liquid.

$50 Beans1 (10 pound) smoked bone-in ham1/3 cup coarsely-ground black pepper3 pounds pinto beans, soaked overnight2 onions, chopped12 garlic cloves, minced1 tablespoon hot pepper sauce1 tablespoon dried epazote (Mexican Tea)Salt, to tasteThoroughly rub down ham with pepper,  massaging it into every pore. Let the ham sit for at least 1 hour, or refrigerate it overnight. Place ham in a large stockpot. Fill the pot with water to cover the ham by several inches. Let the pot simmer over low heat about half a day, covered, until the meat literally falls apart.Remove the ham and bone, and reserve meat for another use. Add the pintos and remaining ingredients, except salt, to the broth. Barely simmer the beans for 3 to 4 hours, stirring them occasionally, until they are quite soft but still hold their shape. Add a little more water if the beans begin to look dry. Stir in the salt in the last few minutes of the cooking time. The pintos can be kept warm for another hour, covered, over very low heat. Serve the beans hot.Serves 12.

Gunslinger Beans1/3 cup lentils1 1/3 cups water4 bacon strips, fried and diced1 onion, chopped2 tablespoons catsup1 teaspoon garlic powder3/4 teaspoon chili powder1/2 teaspoon ground cumin1/4 teaspoon dried red pepper flakes1 bay leaf1 (14 ounce) can whole tomatoes with  liquid, chopped1 (16 ounce) can pinto beans with liquid1 (16 ounce) can red kidney beans with liquidBoil lentils in water for 20 to 30 minutes. Drain. Fry bacon strips. In bacon grease, cook onions until transparent.Combine lentils, bacon, onion, catsup, garlic powder, chili powder, cumin, pepper flakes, bay leaf, tomatoes and beans in crockpot. Cook on HIGH for 3 to 4 hours.Remove bay leaf before serving.Serves 8 to 10.
