Pate en Gelee1 (13 1/2 ounce) can beef broth1 envelope unflavored gelatine5 ounces cream cheese1 (8 ounce) package liverwurst1 small onion, gratedWorcestershire sauce, to tasteTabasco? sauce, to tasteHeat beef broth and dissolve gelatine in it. Pour 1/3 of it into the  bottom of a 3-cup mold and refrigerate until set.Have cream cheese and liverwurst at room temperature. Place them in a mixing bowl. Add grated onion and seasonings and beat all together until smooth. Pile this mixture on top of the jellied broth leaving space all around the sides. Pour remaining broth around the sides of the p?t? in the mold and chill until set.Unmold on lettuce leaves and serve with crackers or Melba toast.

Cattleman's Spread2 cups chopped pecans2 tablespoons butter or margarine18 ounces cream cheese, softened1 cup (8 ounces) sour cream1/2 teaspoon garlic powder2 (2 1/2 ounce) packages dried beef, chopped4 teaspoons diced onionCrackers and bread sticksIn a skillet, saut?  pecans in butter until golden; set aside.In a mixing bowl, beat cream cheese until smooth. Add sour cream and garlic powder; mix well. Stir in beef and onion. Spread into a greased 8-inch square baking dish. Top with the pecans. Bake, uncovered, at 350 degrees F for 20 minutes or until heated through.Serve with crackers and bread sticks.Yields 3 1/2 cups.*****Hello from Ohio!I had recently realized that I had lost my recipe for the Cattleman's Spread appetizer and used your website to obtain it. Two secrets...marinate overnight in Italian Dressing and after partially cooking, soak and simmer in sauce. This  uses a HUGE amount of sauce!20 ounces catsup1/3 cup oil1/3 cup cider vinegar1 1/2 cups onions, chopped3 garlic cloves2 tablespoons dark brown sugar2 tablespoons jalape?o peppers, diced1 1/2 teaspoons salt1 teaspoon dry mustard12 chicken thighsMake sauce day before. In saucepan, heat oil. Saut? onions and garlic. Add remaining ingredients and cook for 10 to 15 minutes.Marinate thighs overnight in Italian salad dressing.Cook using indirect heat until temp reaches 170 degrees F (1 to 3 hours).Soak in sauce for 1 hour with a loose covering of foil. Just before serving, crisp up over direct heat.

Vietnamese PorkFrom the kitchen of Kevin Taylor, the BBQ GuruThis one I have stir fried AND cooked as a whole loin. This recipe is for stir frying. To grill, just don't cut into strips.2 pounds pork tenderloins4 lemongrass stalks2 tablespoons dark brown sugar1 tablespoon  peppercorns2 tablespoons fish sauce2 tablespoons sesame oil6 garlic cloves2 tablespoons vegetable oil6 tablespoons oyster sauce1 tablespoon honey1 tablespoon dark soy sauce2 tablespoons sakeCut pork into 2-inch slices.Chop lemongrass into 2-inch pieces and crush with mallet. Be sure they stay intact. After marinating you will remove these.Combine garlic, brown sugar and peppercorns and crush to make a paste.Add veggie oil, sake, fish sauce and 1 tablespoon sesame oil. Add the lemongrass.Pour this marinade over the pork and marinate overnight.Heat 1 tablespoon oil in wok.Stir fry pork until done.Prepare the finishing sauce by combining the oyster sauce, 1 tablespoon sesame oil, 1 tablespoon honey and 1 tablespoon soy sauce.Add to wok and heat through.Serve over rice.

Reduce heat and simmer for 15 minutes.

Whisk in water to make a thin batter. Stir in okra and onions.Over medium heat, add clarified butter to a cast iron skillet. Use a small ladle to pour batter onto skillet. Pan should be hot enough to make batter sizzle. Cook until underside is browned, about 3 to 4 minutes, then flip and brown on the other side. Repeat with additional batter, adding more butter as necessary.

Beaten BiscuitsThis is an easy method as opposed to the old Southern method of beating and beating and beating for a long period of time.2 cups unbleached white flour1 teaspoon salt4 tablespoons lard or vegetable shortening, chilled4 tablespoons butter, chilled1/4 cup  milk1/4 cup ice waterMix flour with salt, Cut lard and butter into small pieces and work into flour, as if making pastry. Mix milk and ice water together. Pour mixture into flour mixture and beat until mixture forms a ball. Continue to "beat" the dough 2 minutes in a food processor or 5 minutes with a mixer.Roll out dough 1/8-inch thick on a lightly floured surface and cut out circles with a 1 1/2 inch biscuit cutter or the lip of a small glass. Place the rounds on ungreased cookie sheets, prick on top with fork tines, and bake at 350 degrees F until they just begin to brown on the edges ? 15 to 20 minutes.Makes 36 biscuits.
