Warm Maine Lobster DipSource: Maine Department of Agriculture16 ounces low fat cream cheese 2 cups cooked Maine lobster meat 2 tablespoons finely chopped onion 1 tablespoon fresh horseradish 1 teaspoon Worcestershire sauceHot pepper sauce to tasteMilk, as needed to thin (if  desired)1/4 cup chopped walnutsSoften the cream cheese, and cut the lobster meat into bite size pieces. Stir all the ingredients together, adjusting the consistency with milk, as desired. Place into an oven-proof dish and refrigerate for several hours.Bake uncovered at 375 degrees F for 25 minutes or until bubbly.

Hot Wing Dip2 large cans canned chicken meat 16 ounces cream cheese 1 cup prepared ranch dressing 1/2 cup hot sauce (or more if you like)Mix all the ingredients together. Place in baking dish and bake at 350 degrees F for 30-45 minutes.Serve with corn tortilla chips.

Set aside.Melt a block of Velveeta cheese with a large jar of your favorite salsa. Add the sausage and mix  well. Keep warm in a chafing dish or a small crockpot.Serve with tortilla chips.

Sausage Dip1 roll Jimmy Dean Hot Sausage 16 ounces cream cheese 1 can Ro-Tel (tomatoes with chiles)Brown sausage in pan, breaking up the sausage. Add the Ro-Tel and stir. Add cream cheese and stir until they are melted.Serve with Fritos Scoops or tortilla chips. This is  easily reheated in the microwave.

Deviled Puffs1 cup water1/2 cup butter1 cup flour4 eggs3 (4 1/2 ounce) cans deviled ham1 tablespoon horseradish3/4 teaspoon pepper3/4 teaspoon onion salt1/3 cup dairy sour creamPreheat oven to 400 degrees F.In saucepan, heat water and butter to rolling boil. Stir in flour.  Stir vigorously over low heat until mixture forms a ball, about 1 minute. Remove from heat. Beat in eggs, all at once, until smooth and glossy.Drop dough by slightly rounded teaspoonsful onto ungreased baking sheet. Bake about 25 minutes or until puffed, golden brown and dry. Remove puffs to wire rack; cool away from draft.Mix deviled ham, horseradish, pepper, onion salt and sour cream. Chill.Cut off tops of puffs. Remove filaments of soft dough. Fill each puff with slightly rounded teaspoonful of ham mixture.Makes 6 dozen appetizers.

Escargots (Snails)Snails are cooked for about half an hour in rapidly boiling salted water. Drain in a colander, remove the snails from the shells (which are reserved), and remove intestines. Then place the snails in another kettle, add a bouquet garni made of parsley, bay  leaves, and thyme, a sliced onion, and a glass of cognac or other brandy. Cover with cold water, season with salt and pepper and, tightly covered, simmer for about three hours.Meanwhile, scrub the shells and dry them thoroughly. Place a snail in each and cover the opening with garlic butter. Arrange the snails on a baking tin and place them in a medium-hot oven until the butter begins to run and the snails are heated through.The snails are served, ring-shaped, on a large platter without any garnish.Garlic Butter for Snails2 cloves garlic1/4 pound butterHandful of parsley, choppedPinch of saltPinch of freshly ground pepperPinch of nutmegPound garlic cloves in a mortar and remove any shreds, or use a garlic press so that only the oil remains. Place butter in the mortar and work the garlic oil into it as well as you can. Then add parsley, salt, pepper and nutmeg. Work all together until well incorporated.

Fried Ravioli1 (1 pound) package frozen ravioli, thawed2 eggs beaten2 tablespoons milk2 cups bread crumbsCorn oilBeat the eggs with the milk.Fill a Dutch oven with two inches of corn oil. Dip ravioli into eggs and then coat with breadcrumbs. Bring oil to about 300 degrees F  and fry about 4 to 6 ravioli at a time.Serve with marinara sauce.

Jalapeno Rangoons3 ounces chopped fresh jalapeno peppers8 ounces cream cheese, at room temperature1 small onion, chopped1/4 teaspoon garlic powder1/2 teaspoon soy sauce3 dozen wonton wrappers1 egg yolkOil for deep fryingChinese mustard, sweet and sour, or plum sauceCombine  jalapenos, cream cheese, onion, garlic powder and soy sauce. Place one heaping teaspoon of mixture in the center of each wonton. Use egg yolk to moisten the edges of the wonton wrappers, fold together, and pinch to seal.Heat the oil in a frying pan to 375 degrees F.Fry five or six rangoons at a time, for about 3 minutes each batch, until golden. Drain on paper towels, and serve while hot with sauce for dipping.

Fried Okra PoppersSource: Gourmet, August 199824 Ritz crackers 1/4 cup all-purpose flour 1 large egg 2 ounces chilled pepper jack cheese 12 medium okra 2 cups corn oil or other vegetable oil for fryingSalsa (for serving)In a food processor, finely grind crackers. Whisk  together cracker crumbs, flour, and salt to taste. In another bowl beat egg. Cut pepper Jack into twelve 1 1/2 x 1/2 x 1/4-inch pieces. With a sharp knife cut a 2-inch slit lengthwise on side of each okra. With your fingers gently pull slit slightly open and insert a slice of cheese. Transfer okra to a plate and chill 5 minutes. Working in batches of 4, dip stuffed okra in egg to coat, roll in cracker crumb mixture. Arrange coated okra in one layer on plate and chill 5 minutes.In a deep 10-inch heavy skillet heat oil over moderate heat until hot but not smoking. Fry okra, 4 at a time, turning them, until golden brown, 1 to 2 minutes. With a slotted spoon transfer okra to paper towels to drain. Season okra with salt and serve hot with salsa.Makes 12 poppers.

Deep Fried MozzarellaVegetable oil1 thick slice mozzarella cheese per serving1 egg, beaten with a little water or milkFlourSeasoned bread crumbsPrepared tomato or marinara sauceParsley (optional)Pour oil into a heavy skillet about 1/2 inch deep and heat. Dip thick cheese  slice into flour, then egg mixture, then bread crumbs. Carefully place prepared cheese slices into hot oil. Let one side brown (watch because they brown quickly), then with a fork and spatula, turn and allow second side to brown. Serve immediately topped with a spoonful of heated sauce. Garnish with parsley, if desired.

Mushroom Crowns, drained - reserving broth1 (10 ounce) package refrigerated biscuits1/4 cup grated Parmesan cheeseDrain buttery broth from mushrooms, reserving broth. Blot excess moisture from mushrooms crowns with paper towels.  Separate biscuits and cut each one into fourths. On floured board, press biscuit quarters into rounds and wrap one around each crown. Brush wrapped mushrooms with buttery broth and roll in Parmesan cheese. Bake on greased cookie sheet in preheated 400 degree F oven for 10 to 12 minutes.Makes about 2 dozen.

Little Clambakes8 ounces cream cheese1 (8 ounce) can minced clams4 dozen buttery crackers (like Ritz)1/2 teaspoon liquid red pepper seasoning1 tablespoon bottled onion juicePaprikaSoften cheese in medium-size bowl. Drain clams, add to cheese with onion juice and red pepper  seasoning. Mix well to blend (if making ahead, store covered in refrigerator). Just before serving, spread clam mixture on crackers, about 1 teaspoon on each. Sprinkle lightly with paprika, then place on large cookie sheets. Bake at 400 degrees F for 5 minutes, or just until heated through but not browned.Garnish with sliced black olives and watercress leaves, if desired.
